LOW-CARB BAKED SEAFOOD CASSEROLE RECIPE

Steps:
- Preheat oven to 400º Fahrenheit. In a large, heavy saucepan, stir together dry white wine, water, bay leaves, and 1/2 teaspoon Old Bay. Bring poaching mixture to a simmer over medium high heat. Turn heat to low, and simmer, uncovered for about 3 minutes.
- Add shrimp to the poaching mixture. Simmer shrimp until barely opaque, then remove to a bowl using a slotted spoon. Repeat for the cod. Reserve shrimp and cod for later.
- Simmer the poaching mixture over medium high heat until reduced to about 1 cup of liquid. Remove from heat, strain, and reserve for later.
- Meanwhile, melt two tablespoons butter in a large heavy saucepan or Dutch oven over medium-high heat. When butter stops foaming, add leeks and celery. Sprinkle lightly with sea salt. Cook leeks and celery, stirring occasionally, until edges begin to brown and vegetables are soft. Remove from heat.
- Layer vegetables and seafood in a casserole dish. I used a handmade artisan dish, but any casserole that holds 7-8 cups should work. An 8" square baking dish should work as well.
- Over medium heat, melt remaining tablespoon of butter in the same saucepan or Dutch oven used to cook the vegetables, without cleaning. Stir in the xanthan gum.
- After xanthan gum is coated with butter, slowly stir in the reduced and strained poaching liquid. Bring liquid to a simmer, scraping up any browned bits in the pan.
- When mixture has started to thicken, stir in the heavy whipping cream. Bring to a simmer and cook, stirring frequently, until mixture has a gravy-like texture. Taste and add salt (I used 1/4 teaspoon) if desired. Pour mixture over the seafood and vegetables in the casserole dish.
- Place almond flour, parmesan cheese, 2 teaspoons Old Bay, and 1 tablespoon butter in a food processor. Pulse until completely blended. Sprinkle mixture on top of the casserole. Bake for about 20 minutes, or until top is crisp and brown.
- If desired, sprinkle chopped parsley on to garnish before serving.

- Heat oven to 410.
- Add (Fresh Raw) Shrimp, Old Bay, Garlic and Seafood Seasoning a small amount of boiling water (I add lots of the seasoning, more than what's mentioned, but I leave most of it in the water--its up to you.).
- Heat 1Tbsp of Olive Oil, then add onions, zucchini and peppers. Allow them to cook until soft, but not mushy (sorry, don't know the correct terminology--aldente?).
- Add Alfredo Sauce to pan with veggies.
- Shrimp should be done now. Peel Shrimp, and take a few (1-2) bbtablespoons of broth and add that to the Alfredo sauce and peppers.
- Pour Alfredo, veggies and shrimp into a casserole dish.
- Beat eggs along with egg beaters and pour on top. Using fork to lightly mix with the rest of the casserole (or 2 regular eggs, but not egg beaters only, it will be runny) .
- Top with cheese (I mix a little full fat with low fat, I think it tastes better and melts better--I don't care about the fat--sue me) and other seasonings of your choice--I used salt, pepper, thyme.
- Cook for 10-15 minutes until mostly firm--allowing it to cool will set it -- .

- Cut zucchini in half and then into 1/2" slices.
- Season shrimp with salt & pepper.
- Heat half of the olive oil in a skillet. Add shrimp and cook just until pink and almost cooked through. Remove from the pan and set aside.
- Add remaining oil to the pan. Add zucchini, garlic, oregano, chili flakes and salt & pepper to taste. Stir fry 4-5 minutes or until zucchini is tender crisp.
- Add cream and pesto, simmer 1 minute. Stir in shrimp (and any juices on the plate) and cook until heated through.
- Garnish with parmesan cheese if desired.

- Cook the cauliflower rice. We use the bagged microwavable version and pat dry with a paper towel to remove excess moisture.
- In a large saucepan, sauté the onions, peppers.
- Add the shrimp. If using uncooked shrimp, add them and sautee until all pink. Do not overcook.
- Add cream, chicken stock, butter and cream cheese, and stir over low heat until just mixed.
- In a 13x9 casserole dish, spread the cauliflower, spread the shrimp mixture and top with the shredded cheese.
- Cook at 350 degrees for 20 minutes.
LOW-CARB SHRIMP ENCHILADAS

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a nonstick pan over medium-high heat. Cook and stir shrimp in the hot oil until pink, 3 to 4 minutes. Transfer to a bowl. Pour bell pepper and onion into the pan and cook until onion is translucent, about 5 minutes; add to the bowl with shrimp and set aside. Clean the pan.
- Place tortillas, 1 at a time, into the pan and toast over medium-low heat until light brown, about 1 minute per tortilla.
- Put 1/5 of the shrimp mixture down the center of each tortilla. Fold/roll up and place into a baking dish. Place 1 tablespoon of enchilada sauce on each; then sprinkle evenly with Cheddar and mozzarella cheeses.
- Bake in the preheated oven until melted, about 15 minutes. Let cool slightly before serving.

- Since the mushroom casserole takes longer in the oven, you’ll want to make this part first. Preheat an oven to 400 degrees. Quarter cremini mushroom caps or chop into small pieces.
