1 12 oz Zevia Root Beer
2 tbs heavy whipping cream
1/4 cup So Delicious coconut milk ice cream

Steps:

  • Pour 2 tbs heavy whipping cream into a 16 oz glass.
  • Pour 1 12 oz can of Zevia root beer into the same 16 oz glass.
  • Scoop out 1/4 cup of So Delicious coconut milk ice cream into the glass.

This keto root beer float is delicious and so much fun to make! You can also substitute your favorite flavor of keto soda and have an awesome low carb float any time you'd like!

1 cup heavy cream
2 tablespoons powdered sugar substitute (Swerve)
2 teaspoons vanilla extract
1 (12 ounce) can keto root beer
1 tablespoon heavy whipping cream

Steps:

  • 1. Place medium mixing bowl and beaters in freezer 20 minutes prior to using. 2. Line the bottom of an 11x9 inch baking dish with parchment paper. Set aside. 3. Add heavy cream, powdered sugar, and vanilla to chilled mixing bowl. 4. Beat mixture until heavy peaks form. Drop heavy cream mixture in 2 tablespoon dollops onto prepared baking dish. Freeze for 1-2 hours. 5. Pour 12 ounces of root beer into a large glass. Add 1 tablespoon of heavy whipping cream and stir. Add a 2 tablespoon dollop of frozen whipped cream mixture on top of root beer. 6. Serve immediately.

Delicious creamy low-carb, gluten-free popsicles with flavors of root beer and vanilla.

Number Of Ingredients 5

3/4 cup heavy whipping cream (preferably organic and grass-fed)
1/4 cup granulated stevia/erythritol blend
1 teaspoon vanilla extract
1 teaspoon natural root beer flavor
3/4 cup milk of choice (we used unsweetened almond)

Steps:

  • Pour cream into a medium mixing bowl. Using an electric mixer, whip until stiff peaks form.
  • Add sweetener, vanilla extract and root beer flavoring and beat until incorporated.
  • Add milk and blend to combine. Mixture will thin.
  • Whip mixture until it is frothy and thickens again slightly.
  • Pour into mold. Add popsicle sticks and freeze for several hours before enjoying.
  • To release popsicles, pour hot water over the outside of the mold.
