GEORGE STELLA'S LOW CARB STUFFED MEATLOAF



George Stella's Low Carb Stuffed Meatloaf image

Delicious low carb meatloaf from George Stella's book Livin' Low Carb

2 lbs of ground chuck (very lean ground beef or meat loaf mix...can also use ground turkey or chicken
2 large eggs
.5 cup grated Parmesan cheese
.25 cup finely diced red onion
.25 c. diced roasted or fresh red bell pepper
2 T. chopped fresh parsley
2 cloves garlic, minced
.5 t dried oregano
.5 t dried basil
1 t kosher salt
.5 t freshly ground black pepper
4 oz baked ham, thinly sliced or shredded
8 oz mozzarella cheese, sliced or shredded
1 cup Quick and Easy Ketchup, OPTIONAL (recipe in his book)
9 X 5 inch loaf pan needed
1. Preheat oven to 350.
2. In a large bowl, mix together beef, eggs, Parmesan, onion, peppers, parsley, garlic, herbs and seasonings.
3. Put a baking sheet on counter. Place the meat mixture on the baking sheet and form into a 10 X 8 inch rectangle.
4. Place the ham in a layer on top of the meat followed by a layer of mozzarella cheese.
5. Beginning withe the short end, roll up the stuffed meat loaf mix like a jelly roll and seal the edges all around by pinching the meat. Place the roll in a greased loaf pan seam side down.
6. If desired, spread a heavy coat of ketchup over the top of the meat loaf.
7. Bake for about 1.25 hours, until a meat thermometer registers 165 degrees. Drain off the fat and let the meat loaf reast at least 10 minutes before cutting it into slices.
** feel free to substitute pepperoni or bacon in place of ham-- flavor of cheese can also be substituted or add mushrooms or spinach--make it your own!

3/4 cup heavy cream
1/3 cup club soda
1 teaspoon salt
1 tablespoon olive oil
1/8 cup diced red onion
1 teaspoon chopped garlic
3 large Roma tomatoes, diced
8 ounces no sugar added tomato sauce
1/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano (may substitute Italian seasoning for dried herbs)
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
24 ounces shredded mozzarella cheese
8 ounces pepperoni slices
1/2 cup crumbled Italian sausage, cooked
1/2 cup diced Parma ham
1/3 cup julienned red bell peppers
1/3 cup julienned green bell peppers
1/3 cup julienned red onion
2 portobello mushroom caps, sliced
2 tablespoons extra-virgin olive oil
Pinch dried oregano

Steps:

  • Preheat oven to 375 degrees F.
  • Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.
  • Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
  • Remove crusts from oven and increase the oven temperature to 400 degrees F.
  • Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.
  • Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.
  • Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.

This is a variation of George Stella's Cole Slaw. Cook time is chill time. I am not sure why the nutrient facts has 37 carbs for the mayo. I checked my bottle & 0 carbs are listed. I calculated the net carbs for this recipe & it is 2 carbs per serving.

10 -12 ounces shredded green cabbage
1/2 cup Kraft mayonnaise
2 tablespoons heavy cream
1 1/2 tablespoons vinegar
1 tablespoon apple cider vinegar
8 -10 drops liquid sugar substitute or 3 -4 tablespoons Splenda sugar substitute
1/4 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon onion powder

Steps:

  • Place the cabbage in a medium bowl. Mix the remaining ingredients together in a small bowl.
  • Pour the dressing in with the cabbage, toss to coat. Chill at a least an hour before serving.
  • Note: The liquid substitute is 1 drop per serving. If using the kind that is 2 drops per serving cut the amount in half. If using Splenda the net carbs will increase.
