These are soo much better than the original recipe, because they are so much more moist! induction friendly as well!

Steps:
- Mix all together in a mug and microwave for 1 min 40 sec! for frosting just mix together as well. spread muffin with with frosting. YUM!
- tip: if you forget to get your cream cheese out to soften, microwave it for about 15 seconds and it wiil work fine.
- There are approx 25 carbs in this.
LOW CARB MUFFIN IN A MINUTE (BETTER KNOWN AS MIMS)
These are really for us hard core low carbers. The texture is a bit odd because they are made with flax meal. They make a nice quick breakfast bread. Because they are microwaveable. I like mine with a little bit of peanut butter.

Steps:
- Spray a coffee cup with non stick spray. (this is an absolute must!!)
- Mix all of the ingredients and spoon into the coffee cup.
- Microwave approximately 2 minutes. It is done when top springs back at a light touch or a toothpick inserted into the center comes out dry.
- Let sit for two minutes, then remove from cup and slice in 1/4 to 1/2 inch slices. I like thinner slices. So, you will get anywhere from 4 to 6 slices.
- VARIATIONS: Leave out the cinnamon and add a dash of salt. Use like an english muffin. (make a sandwich with a piece of ham, bacon or sausage and an egg) Add a tablespoon of cocoa powder and a teaspoon of vanilla extract instead of the cinnamon. Add a dash of garlic powder and black pepper instead of the cinnamon, Use to make a little sandwich with mayo, mustard, and your choice of meat.

Steps:
- Grease a ramekin dish (or very large coffee mug) with coconut oil or butter.
- Mix all the ingredients together with a fork to ensure it is lump free.
- Cook the 1-minute keto muffin in the microwave on HIGH for 45 seconds - 1 minute. Alternatively, they can be baked in an oven, at 200C/400F for 12 minutes.
- Cut in half and serve. (toasting or frying is optional)
