6 cups water
2 cups chicken stock
4 medium celery stalks, sliced
3 medium carrots, sliced
½ cup chopped yellow onion
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 teaspoon ground thyme
½ teaspoon paprika
salt and ground black pepper to taste
1 bay leaf
1 pound chopped cooked chicken
4 cups sliced yellow squash

Steps:

  • Combine water, stock, celery, carrots, onion, garlic, parsley, thyme, paprika, salt, black pepper, and bay leaf in a pot. Bring to a simmer, cover, and cook until vegetables are soft, 20 to 30 minutes.
  • Add cooked chicken and squash to the pot and simmer until squash is tender, about 10 minutes more.

1 medium head Cauliflower ((cut into 1-inch florets))
2 cups Green beans ((trimmed, cut into 1-inch pieces))
2 14.5-oz cans Diced tomatoes
8 cups Chicken broth, reduced sodium ((or vegetable broth for vegetarian/vegan))
1 tbsp Italian seasoning
2 Dried bay leaves ((optional))
Sea salt ((optional, to taste))
Black pepper ((optional, to taste))

Steps:

  • Heat olive oil in a pot or dutch oven over medium heat.
  • Add the onions and bell peppers. Saute for 7 to 10 minutes, until onions are translucent and browned.
  • Add the minced garlic. Saute for about a minute, until fragrant.
  • Add the cauliflower, green beans, diced tomatoes, broth, and Italian seasoning. Adjust sea salt and black pepper to taste. Add the bay leaves, if using.
  • Bring the soup to a boil. Cover, reduce heat to medium low, and cook for about 10 to 20 minutes, until veggies are soft.

2 cans of fire roasted tomatoes (14.5 oz)
1 bag frozen mixed vegetables (12 oz)
2 bay leaves
1/2 teaspoon dried thyme
2 teaspoon minced garlic
1 teaspoon salt
1 teaspoon pepper
2 teaspoons Italian Seasoning
8 cups vegetable stock

Steps:

  • Place everything in the slow cooker. I used a 6 quart crock pot.
  • Cook on low for 6 hours or until potatoes are soft. (You can cook on high but reduce time.)
  • Salt and pepper to taste.

12 ounces Frozen cauliflower rice
2 cups Chopped frozen spinach
2 cloves Garlic, minced
2 cups Beef broth
2 Beef bouillon cubes, crumbled
1 8 ounce can Tomato sauce
1 tablespoon Tomato paste
Kosher salt and pepper to taste
Olive oil for finishing (optional)

Steps:

  • In a large heavy pot with a tight fitting lid add in Italian Sausage, garlic, onion and celery.
  • Cook over medium heat until sausage is cooked through and crumbled and onion and celery are soft.
  • Add in tomatoes, cauliflower rice, frozen spinach, beef broth, bullion cubes, tomato sauce and tomato paste.
  • Stir well and bring to simmer.
  • Reduce heat to low, place lid and let simmer for 20 minutes.
  • Remove from heat and season with salt and pepper to taste.
  • Serve in individual bowls and top with a drizzle of olive oil (optional).

1 can diced tomatoes ((15 oz) )
1 red bell pepper (chopped )
4 carrots (peeled and diced )
2 tablespoons Italian seasoning
1 teaspoon garlic salt
1 bay leaf
1 tsp salt
1/2 tsp pepper
8 cups chicken broth
16 oz rotini pasta
1 cup parmesan cheese (shredded for topping )

Steps:

  • Place all the ingredients except for the pasta and the parmesan cheese in a 6 quart crock pot.
  • Cook on low for 8-10 hours or on high for 4-5 hours.
  • Remove the chicken, shred and return it back to the crock pot.
  • Stir in the uncooked pasta. Cover and cook on high for 20-30 minutes until the pasta is cooked through.
  • Stir to combine. Serve topped with the shredded parmesan cheese and enjoy!

2 (14 ounce) cans beef broth
8 ounces sliced mushrooms, fresh or canned
1 yellow onion, chopped
1 green pepper, chopped
1 zucchini, sliced thin
1/4 cup red wine or 1/4 cup beef broth
1 1/2 tablespoons dried basil leaves
4 ounces turkey pepperoni, sliced
1/2 teaspoon salt
1 teaspoon sugar (I use Equal) or 1 g sugar substitute, packet (I use Equal)
mozzarella cheese, for topping

Steps:

  • Place tomatoes, broth, wine, veggies, basil, salt and sugar into crock pot, mix well.
  • Top with turkey pepperoni slices.
  • Cook on High for 4 hours or on Low for 8 hours.
  • Pour into individual soup bowls and top with mozzarella cheese.

  • Heat a large skillet over medium-high heat. Add bacon. Cook bacon, stirring occasionally, until crisp. Remove bacon, using a slotted spoon, to a paper-towel lined plate. Cover bacon and refrigerate for later.
  • Discard all but about 1 tablespoon of the bacon grease. Return pan to burner over medium-high heat. Add beef cubes in batches, making sure they do not touch. Season lightly with salt and pepper. Brown each side of the beef cubes . Do not cook meat throughout. When outside is brown, transfer beef to the slow-cooker crock using a slotted spoon. Repeat for the rest of the meat.
  • Once all of the beef has been browned and is in the slow-cooker, turn the skillet heat to medium low. Add vinegar to the skillet. Stir, scraping up brown bits, until vinegar has thickened. Pour in about 1/4 cup of the broth and continue to scrape up any browned bits. Transfer liquid to the slow-cooker.
  • Add remaining broth, onion, green beans, celeriac, carrots, tomato paste, diced tomatoes, garlic rosemary, thyme, salt (only if using low-salt broth), and pepper to the slow-cooker. Stir gently.
