While on the South Beach diet, this dish satisfies my craving for the standard chicken parmesan dish.....but this recipe is missing the breadcrumbs. But it's so good you won't miss the breadcrumbs! In the world of low carb dieting, I like to serve this with a green veggie and/or tossed salad.

2 (4 ounce) boneless skinless chicken breasts
1/2 cup no-sugar-added spaghetti sauce (I use Hunt's No Added Sugar Italian Baking Sauce or Classico Spicy Red Pepper Spaghetti Sauce)
1/2 cup shredded mozzarella cheese
1 teaspoon grated parmesan cheese
garlic salt, to taste
italian seasoning, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Spray a shallow, small baking dish with non-stick cooking spray.
  • Season each side of breast with garlic salt and Italian seasoning to your liking; place in casserole dish.
  • Spoon pasta sauce equally over top of each breast.
  • Bake for about 45 minutes; sprinkle equally with cheeses and bake an additional 5 minutes or until cheese are melted.

3 cups chicken, cooked, chopped
2 oz cream cheese
1/2 cup heavy cream
1 teaspoon garlic, crushed
1 cup grated Parmesan (dived into 1/4c and 3/4c)
1 cup marinara sauce, low carb
1 1/2 cup mozzarella cheese, shredded
3/4 cup crushed pork rinds

Steps:

  • Preheat oven to 400°F degrees.
  • Microwave cream cheese, heavy cream and garlic for 1-2 minutes until cheese is melted. Mix well and stir in 1/4 cup parmesan cheese.
  • Mix this mixture with the cooked chicken and make the first layer of the casserole.
  • Then pour on sauce over the chicken mixture for the second layer and top with shredded mozzarella cheese.
  • Lastly mix the crushed pork rinds with the rest of the parmesan cheese and sprinkle the breading mixture on top.
  • Bake for 30 minutes and let cool before eating.

This low carb chicken dinner is so easy and delicious you will want to make it every week. Only a few ingredients and you can make this gluten free chicken dinner that has 4.3g net carbs per serving.

1 lb chicken breast
1/2 cup almond flour
1/2 cup parmesan cheese, grated
1 egg, beaten
salt & pepper
1 tablespoon olive oil (I used red plam oil)
2/3 cup sauce
3 Provolone slices

Steps:

  • Preheat oven to 400°F.
  • In a shallow bowl, beat the egg and set aside. In another bowl mix the almond flour with Parmesan cheese and set aside.
  • Take the chicken breasts and cut as you would a bagel to make two thinner pieces. Then add to a baggie and pound thinner with a meat mallet or heavy pan. Place the thin pieces of chicken on a plate and sprinkle with salt and pepper.
  • Take a piece of chicken and dip it in the beaten egg and then the almond flour mixture. Full coat both sides and continue with all of the chicken.
  • Heat up some oil in a frying pan and brown on both sides. Spray a baking dish with cooking spray and then place the chicken in it.
  • Spoon some sauce over top and then place the cheese.
  • Bake for 15 minutes until the cheese is nice an browned. You can also place it under the broiler for a few minutes after it's done coooking to brown it.

2 (2 1/4 ounce) packages plain pork rinds
1/2 cup mayonnaise or 1/2 cup low-fat mayonnaise
1/4 cup heavy cream
2 eggs
1/2 cup parmesan cheese
4 tablespoons garlic salt
4 tablespoons parsley flakes
1 1/2 lbs thin sliced chicken cutlets
1 (24 ounce) jar victoria caponata
1 (8 ounce) bag finely shredded mozzarella cheese
2 tablespoons dried basil
nonstick cooking spray
lemon juice

Steps:

  • Preheat oven to 400°F.
  • As written by Lv2Sun, in a small bowl combine the mayo, eggs and cream.
  • Be sure that the mayo is blended well and doesn't clump.
  • Crush bags of pork rinds and then, in a separate bowl, combine them with cheese, parsley and garlic salt.
  • Take each cutlet and dip in the egg mixture and then rind mixture.
  • Place the cutlets in a sprayed glass dish.
  • Drizzle with lemon juice.
  • Top the cutlets liberally with the sauce and then with the cheese.
  • (Note, the victorias caponata only has 4 total carbs per serving and is just delicious!).
  • Bake at 400°F for 20 minutes.
  • You can place under the broiler for 2-3 minutes if you like the bubbly look.
  • Tastes fabulous.
  • You can't tell that it is low carb!
