Easy Keto Chicken Cordon Bleu image

A truly easy - and keto - version of chicken cordon bleu. Get the wonderful flavor combination of the classic dish, without the hard work!

Avocado oil spray
1 tablespoon avocado oil mayonnaise
2 tablespoons Dijon mustard
4 small boneless skinless chicken breasts (6-7 oz each )
1/2 teaspoon Diamond Crystal kosher salt
1/2 teaspoon black pepper
1 cup almond meal ((4 oz))
8 thin slices ham
4 slices Swiss cheese
2 tablespoons chopped parsley

Steps:

  • Preheat your oven to 425 degrees F. Line a baking dish with foil, fit it with a wire rack and spray the rack with oil.
  • In a small bowl, mix the mayonnaise and the Dijon mustard.
  • Season the chicken breasts on both sides with salt and pepper. Brush them on all sides with the Dijon mixture. Dredge them in the almond meal, and place them on the prepared wire rack. Spray their tops with oil.
  • Bake the chicken, uncovered, until an instant-read thermometer inserted into the thickest part reads 165 degrees F, 20-30 minutes (start checking after 20 minutes). How long you need to bake will depend on your oven and on the size of the chicken pieces.
  • Top each chicken breast with two slices of ham (folded in two if necessary) and a slice of Swiss cheese.
  • Return the chicken to the hot oven for 2-3 minutes, just until the cheese melts. Garnish with chopped parsley. Allow to rest 5 minutes before serving, to allow the juices to redistribute and settle.

1 pound ground chicken
4 ounces Swiss cheese, cut into 1⁄2 inch cubes
1 ⁄2 cup diced cooked ham
1 ⁄4 teaspoon garlic powder
1 ⁄4 teaspoon salt
1 ⁄4 teaspoon black pepper

Steps:

  • 1. Combine all ingredients in a large bowl, mixing well. (It's easiest to use your hands.) 2. Form into 4, equal size patties. The thicker the patty, the longer the cook time will be, but less cheese will ooze out when cooking. 3. Cook as you would normally cook a burger and serve with a knife and fork and all of the fixings, except the bun! Pan Frying | Use a paper towel to evenly apply a small amount of vegetable oil to a nonstick frying or grill pan, and then place over medium-high heat. Let pan heat for 1 minute before placing burgers to cook. Cover and cook about 4-6 minutes on each side, or until burgers are well browned on the outside and white throughout. Some cheese will ooze out, so be sure to scrape it onto the burger before serving... it's the best part! George's Tips | Raw ground chicken is very sticky; it's easiest to spray a little nonstick cooking spray on it, or even your hands, before forming the patties. When you don't have any leftover ham, most stores sell already diced ham cubes which are really convenient for this recipe.
