CHICKEN BACON RANCH CASSEROLE RECIPE (QUICK & EASY)

The whole family will love cheesy chicken bacon ranch casserole recipe! This quick and easy low carb chicken casserole has just 7 common ingredients, 5 minutes prep, and 2 ways to make it.

4 cups Chicken breasts ((cooked, cubed or shredded))
8 slices Bacon ((cooked, chopped))
3 cloves Garlic ((minced))
1 cup Ranch dressing
1 cup Mozzarella cheese ((shredded, divided))
1 cup Cheddar cheese ((shredded, divided))
5 cups Broccoli ((cut into florets))
1 lb Frozen spinach ((thawed, squeezed to drain well))

Steps:

  • Preheat the oven to 375 degrees F (191 degrees C).
  • If using frozen spinach, thaw and squeeze to drain first. If using broccoli, place it into a pot of water and bring to a boil. Simmer for 1-2 minutes until bright green.
  • Combine the chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the shredded cheeses in a large bowl. Stir until well incorporated. Transfer to a 9x13 in (23x33 cm) glass or stoneware casserole dish. (Alternatively, you can mix everything directly in the casserole dish.)Optional tip: If you like extra ranch flavor, add 1-3 teaspoons of ranch seasoning mix, in addition to the dressing.
  • Top with remaining shredded mozzarella and cheddar cheeses.
  • Bake for about 15 minutes, until hot and bubbly.

I made it the first time because I was craving something that was sort of like a chicken cordon blue, but with bacon, broccoli and provolone, since that's what I had in the fridge! I also wanted it to be a casserole so my wife could make it when she got home from. So I made it in the morning, put it in a baking dish in the fridge and they cooked it up when they got home. If you're not a big fan of mustard, certainly reduce it, or omit it altogether, it should still be just as good.

3 lbs boneless skinless chicken breasts
1/2 lb bacon
2 cups broccoli
8 ounces provolone cheese, shredded
1 cup chicken broth
1/4 cup heavy cream
1/4 cup Dijon mustard
1 teaspoon oregano
1 teaspoon basil

Steps:

  • Pre-heat oven to 350.
  • Cut bacon into 1" pieces and fry until mostly crisp.
  • Cut chicken into cubes and cook in a frying pan until it is no longer pink.
  • Place chicken and bacon into a bowl, and put in the fridge to cool.
  • In a mixing bowl combine broth, cream, mustard, herbs and salt and pepper to taste.
  • When chicken and bacon has cooled most of the way, stir in shredded cheese and broccoli.
  • Place chicken mixture into a casserole dish, then pour sauce over the top.
  • If cooking immediately, place in oven and bake 25-30 minutes, or until cheese is melted.
  • To refrigerate for later, cover dish with tin foil and place in fridge. When ready to cook, pull casserole out of the fridge and preheat the oven to 350. Bake, covered for 30 minutes, then uncover dish and bake for another 10 minutes, or until the cheese is melted and the food is hot all the way through.

  • Shred the cooked chicken if it has not been shredded. I find that using two forks works best for shredding. Transfer the shredded chicken to a large mixing bowl. Also, cook and dice the bacon if it has not been cooked and diced .
  • Grease a square baking dish well and preheat the oven to 350. In a saucepan on low to medium heat, heat the cream cheese chunks allowing them to soften. Whisk the cream cheese as needed to break up the chunks and aid in the softening process. Then stir in the sour cream allowing for the cream cheese and sour cream to blend together.
  • Once the cream cheese and sour cream have blended you can remove the saucepan from the heat and stir in the heavy whipping cream, garlic powder, chopped onion, and desired seasoning(s). Transfer this mixture to the large mixing bowl that contains the shredded chicken and blend the ingredients well. You can add any optional chopped pepper at this time. Then transfer to the prepped baking dish.
  • Top the casserole with the shredded cheese and chopped bacon. Bake the casserole for 20-25 minutes or until the cheese has fully melted.
