- Pre heat the oven to 350F. Line a sheet pan with foil
- Add the chicken to a large bowl and top with all of the seasonings, toss to coat
- Place all the chicken tenders on a sheet pan.
- Bake in the oven for 20 minutes.
- Remove from oven, toss in the buffalo sauce and serve.

- In a medium bowl, combine flour, seasoned salt, cumin, cornstarch, pepper, paprika, chili powder, and salt. In another bowl combine milk, water, and 1 egg, whisk together.
- Cut chicken tenders into bite-sized pieces.
- Prepare hot sauce by melting the butter and the hot sauce together over low heat in a pot. Stir to combine as butter melts. Remove from heat once the butter has melted and sauce is thoroughly combined.
- Dredge chicken pieces in flour mixture, dip into milk and egg mixture and then dredge the chicken again in the seasoned flour. Shake off excess flour.
- Deep fry coated chicken bites in hot canola oil until golden brown. Drain on paper towels.
- Place chicken bites in a large bowl. Pour hot sauce over chicken bites and toss to coat.
- Serve boneless chicken bites with blue cheese or ranch dressing and celery sticks.

- Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
- Add the chicken to the cornstarch mixture; toss until evenly coated.
- Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
- Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
- Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika in a large bowl. Whisk together the egg and milk in a small bowl. Dip each piece of chicken in the egg mixture, and then roll in the flour blend. Repeat so that each piece of chicken is double coated. Refrigerate breaded chicken for 20 minutes.
- Fry chicken in the hot oil, in batches. Cook until the exterior is nicely browned, and the juices run clear, 5 to 6 minutes a batch.
- Combine hot sauce and butter in a small bowl. Microwave sauce on High until melted, 20 to 30 seconds. Pour sauce over the cooked chicken; mix to coat.

- 1. Place a pot over medium-high heat and fill with at least 2 inches of vegetable oil. Heat oil 3-4 minutes, until about 350 degrees. (or preheat an electric deep fryer) 2. Add the pork rinds, Italian seasoning, pepper, and garlic powder to a large food storage bag and use a heavy can or similar to crush the rinds until smooth. 3. Dip chicken cubes into the beaten eggs and then place into the bag of seasoned pork rinds, shaking to coat. 4. Fry the coated chicken pieces in small batches of 5 or 6 for about 3 minutes each batch, or until a deep golden brown. Let rest on paper towels to drain excess oil. 5. - Spread the wings in a single layer across some paper towels and sprinkle with the salt. Cover with another layer of paper towels and let rest for 20 minutes.
- Place an oven rack in the middle-lower position and another rack in the middle-upper position. Preheat the oven to 250°F. Set a cooling rack on a rimmed baking sheet.
- Combine the wings and baking powder in a resealable plastic bag. Shake to coat the wings evenly.
- Spread the wings in a single layer across the cooling rack. Bake on the middle-lower oven rack for 30 minutes.
