ASPARAGUS AND JACK CHEESE FRITTATA

Asparagus and Jack Cheese Frittata image

Provided by Aida Mollenkamp

Categories     main-dish

Time 20m

Yield 8 to 10 servings

Number Of Ingredients 9

8 large eggs
1/2 cup shredded jack cheese
1 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon vegetable oil
1 tablespoon butter
1 pound asparagus, trimmed, cut on diagonal into 1/4-inch pieces (about 3 cups)
3 tablespoons roughly chopped fresh cilantro leaves
Serving suggestion: basic green salad

Steps:

  • Heat the broiler to high and arrange rack in upper third.
  • In a large bowl, whisk together eggs, cheese, salt, and freshly ground black pepper until thoroughly combined.
  • In a large ovenproof frying pan, heat the oil and the butter over medium-high heat. When it foams, add asparagus, season well with salt and freshly ground black pepper, and cook, stirring occasionally, until cooked through, about 5 minutes. Stir in the cilantro. Reduce heat to low, pour in egg mixture, and cook until a 1-inch border of egg mixture is firm, about 3 minutes. (The center of the frittata will not be set at this point.) Place the pan in oven and broil until some spots are browned and eggs are just set, about 2 minutes. Cut into wedges and serve with a side salad. It can be served warm or at room temperature.

4 tablespoons freshly grated Parmesan
2 tablespoons milk
1/4 teaspoon freshly grated lemon zest
1 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil
4 ounces medium asparagus stalks (about 8), woody stems trimmed, cut into 1/2-inch pieces

Remove the cover, scatter the remaining 1 tablespoon of cheese over the surface. Run the frittata under the broiler until the top sets and browns slightly, about 1 minute. • Asparagus, Prosciutto & Goat Cheese Frittata. You can’t talk about spring without talking about asparagus. This frittata is packed with the green vegetable and is made extra-flavorful with crispy prosciutto and creamy goat cheese.
  • Skillet Cod with Lemon and Capers. Any white fish would work well here, like tilapia, snapper, or haddock — so use whatever you might already have in the freezer or whatever you can get at the store.
  • Broiled Steak & Asparagus with Feta Cream Sauce. This smart recipe calls for cooking the steak on a cooling rack that’s set on top of a baking sheet of asparagus, so some of the juices will drip onto the veggies to flavor them.
  • Radish and Turnip Hash with Fried Eggs. Radishes and turnips replace the usual potatoes in this spring hash to make it extra low-carb-friendly. You can replace the green garlic with regular garlic cloves or even a few shakes of garlic powder.
  • Chicken Soup with Fennel and Farro. To make this light yet comforting chicken soup even more suitable for a low-carb diet, leave out the farro. All the vegetables and meat provide enough substance that you’ll hardly miss it.
  • Shrimp & Arugula Salad with Preserved Lemon Dressing. While preserved lemon lends a salty, umami-rich bite to this salad, it will still be great without it if you don’t have any or don’t feel like making your own.
  • Garlic Parmesan Chicken & Veggies. This 5-ingredient dinner comes together in under 20 minutes — and cleanup is just as fast. You could even use frozen asparagus spears and use bite-sized pieces of boneless, skinless chicken thighs, if that’s what you have.
  • Roasted Spring Pea Soup. A bag of frozen peas is given new life when its blended it soup. This one is extra-special because roasting the peas enhance their sweetness — plus, a dash of cream always adds richness.
  • Cilantro-Lime Chicken. Using both lime zest and juice for this chicken ensures it will have plenty of tang. Serve it over cauliflower rice or with roasted seasonal veggies to keep it low-carb.
  • Yogurt and Dill Chicken Salad. Swapping some of the usual mayo out and replacing it with Greek yogurt is an easy way to add extra protein, as well as flavor, to chicken salad.
