TURKEY BREAKFAST SAUSAGE PATTIES RECIPE
These easy turkey sausage patties are great for a low carb and high protein breakfast. This is a great substitute for pork sausage as it has less fat and calories so its good for those on a low calorie diet. It's low carb too!

- Mix all the spices together in a small bowl The brown sugar sweetener is sticky and may clump so make sure to mix it well to break it down.
- Place the ground turkey in a large bowl and sprinkle half of the spices over evenly top. I like to use a large serving fork to mix up the ground meat and spices together since turkey can be very sticky. After it's mixed add the rest of the spices, evenly and mix once more trying not overwork the meat yet get it well combined.
- Get out 2 pieces of wax papper. Spray one with nonstick cooking spray and set aside. Divid the meat mixture into 16 equal sized balls. Place them on a piece of wax paper with space between them. Take the sprayed piece of wax paper and place on top and press down to make patties.
- Get out a large nonstick skillet and heat to medium high heat. Spray with nonstick cooking spray first. Gently lift the raw turkey patties off the wax paper and into the pan. Turn the heat down to medium and cook for 3 minutes. Then flip and brown the other side for about 3 minutes more. Just make sure the sausage is cooked through. Mine took about 6 minutes total but cooking time will vary depending on the thickness of your patties.

These are a great low cal breakfast food,also really good for someone on a low carb plan...great with eggs really nice flavour.

Steps:
- In a mixing bowl, combine the egg yolk, oil, sage, paprika, salt and pepper with a fork.
- Crumble the turkey into the bowl with a fork or clean hands; combine thoroughly.
- Shape into 8 patties.
- Place the patties in a single layer on plate or work surface.
- Coat both sides lightly with vegetable cooking spray.
- Heat a large non-stick skillet over medium high heat.
- Place patties in skillet and cook for 3 minutes or until browned.
- Flip and cook for about 4 minutes or until cooked through.
- Reduce heat if patties are browning too quickly.
- *Patties are small so 2 equal 1 serving*.

LOW FAT HOMEMADE SAUSAGE PATTIES (DIABETIC FRIENDLY)
I grabbed this during my raid of my mother's cookbook shelf on my last trip back to the States. This one comes from a Reader's Digest booklet called 'Attack Diabetes With Food'. I am curious to see how the prunes work in the mixture.

Steps:
- Cut turkey breast into large chunks.
- Place in food processor and pulse until coarsely ground.
- Transfer ground turkey into medium bowl.
- Add rice, prunes, mustard, salt, sage, and rosemary. Stir just to combine.
- Shape mixture into twelve 2-inch patties.
- Spray broiler pan with nonstick cooking spray.
- Preheat broiler.
- Place patties on pan and broil 4 inches from heat, turning once until cooked through, about 3 minutes each side.
