Low-Fat Vegan Cheese Sauce image

This easy vegan cheese sauce is low in fat, dairy-free and high in protein. Ready in under 5 minutes, it's perfect for quick and healthy comfort meals, budget-friendly and kid-approved. Works for pasta, lasagna, veggies, dipping and meal prep.

14 oz cannellini beans, cooked (400 g)
½ cup soy milk (120 ml)
3 tbsp lemon juice
½ cup nutritional yeast (30 g)
1 tsp salt
¼ tsp pepper

Steps:

  • If you use canned white beans, drain and wash them. Then, place the beans with the rest of the ingredients into a blender jar.
  • Blend everything until smooth.
  • Taste, adjust with more salt, pepper, lemon juice or nutritional yeast if needed, then pour over your vegetables, pasta or whatever else you want to make it with.
  • Keep the rest of the cheese sauce in an air-tight container in the fridge for up to 4 days.

Makeover this classic side dish with some clever swaps to reduce the fat and calories, while keeping the flavour rich and creamy

400ml semi-skimmed milk
2 tbsp cornflour
2 garlic cloves
1 large cauliflower , about 1kg, untrimmed
75g extra-mature cheddar , coarsely grated
25g parmesan , coarsely grated
1 tbsp snipped chives
1½ tsp Dijon mustard
150ml buttermilk

Steps:

  • Mix 2 tbsp of the milk with the cornflour and set aside. Press the garlic cloves in a garlic crusher to smash - but not crush - them. Put them in a pan with the rest of the milk and heat until just coming to the boil. Immediately remove from the heat and leave to infuse.
  • Trim any leaves from the cauliflower and cut out the thick main stalk, then cut the cauliflower into florets. Bring a large pan of water to the boil. Add the cauliflower, return to the boil, then simmer for about 5 mins until just cooked but still with a bit of bite.
  • Heat oven to 200C/180C fan/gas 6. Tip the cauliflower into a large colander, drain well, then transfer to a shallow ovenproof dish, about 1.5 litres (see tip, left). Mix both cheeses together. Stir 2 heaped tbsp with the chives and a grinding of pepper, and reserve for sprinkling over.
  • Stir the cornflour mix into the warm milk. Return the pan to the heat and bring to the boil, stirring, until thickened and smooth. Remove from the heat, discard the garlic, then stir in the cheese until it has melted. Stir in the mustard and buttermilk, and season with pepper. Pour the sauce over the cauliflower to evenly coat, then sprinkle over the reserved cheese mix. Bake for about 25 mins or until bubbling round the sides and golden on top.

1 cup milk (whole or 2% recommended)
1 tablespoon all-purpose flour
1/2 teaspoon garlic powder
1 1/2 cups (4 ounces) shredded Cheddar Cheese

Steps:

  • In a small pot, whisk together milk, flour and garlic powder. Put pot over medium heat and stir constantly until just before boiling.
  • Cook 1-2 minutes more until thick, stirring constantly.
  • Remove from heat and stir in cheese.

1 lb fresh broccoli florets
1 1/2 cups nonfat milk
2 tablespoons all-purpose flour
3/4 cup low-fat cheddar cheese, shredded
2 teaspoons Dijon mustard
3/4 teaspoon salt (to taste)

Steps:

  • Bring 1 inch of water to a boil in a large pot.
  • Place broccoli in a steamer basket and set over water.
  • Cover and steam until crisp-tender, about 5 to 6 minutes; drain and return to pot.
  • Alternatively, you can cook broccoli in microwave.
  • Meanwhile, in a medium saucepan, whisk together milk and flour until blended; place over medium-high heat and bring to a boil, stirring often. Reduce heat to low and simmer until slightly thickened, about 3 minutes; remove from heat. Whisk in cheese until melted; whisk in mustard and salt.
  • Pour sauce over broccoli and toss until coated.
  • Yields about 1 cup per serving.
