Best Ever Low Fat Custard Ice Cream image

Healthy version of an all time family favorite. The only fat is in the eggs. I do not know how long this takes or how many it will serve.

1 (14 ounce) can fat-free sweetened condensed milk (No Fat)
1 (12 ounce) can fat-free evaporated milk (No Fat)
6 eggs
1 1/2 cups sugar
4 tablespoons flour
1 tablespoon salt
1 tablespoon vanilla flavoring
2 quarts skim milk

Steps:

  • Put eggs, sugar, flour, and part of milk in blender.
  • Blend well.
  • Add remaining ingredients.
  • Cook on low heat until the mixture thickens slightly.
  • Cool and refrigerate until you are ready to churn.

1/3 cup sugar
3 eggs, lightly beaten
2 containers (6 oz each) Greek yogurt
1 teaspoon vanilla
1/3 cup sugar

Steps:

  • Preheat oven to 325° F. To caramelize sugar: In an 8-inch heavy skillet, cook 1/3 cup sugar over medium-high heat until sugar starts to melt, shaking skillet occasionally to heat sugar evenly. Do not stir. Once sugar starts to melt, reduce heat to low. Cook about 5 minutes or until all of the sugar is melted and golden brown, stirring as needed with a wooden spoon.
  • Immediately divide caramelized sugar among four 6-ounce custard cups; tilt cups to coat bottoms evenly. Cool slightly.
  • Meanwhile, in a medium bowl, combine eggs, yogurt, 1/3 cup sugar, and vanilla.
  • Place custard cups in 13x9x2-inch baking pan. Divide egg mixture among custard cups. Place baking pan on oven rack. Pour hottest tap water available into baking pan around custard cups to a depth of about 1/2 inch.
  • Bake for 30 to 35 minutes or until a knife inserted near centers comes out clean. Remove cups from water. Cool on a wire rack. Cover and chill flans in cups for 4 to 24 hours.
  • To unmold flans, loosen edges with a knife, slipping point between flans and sides of custard cups. Invert a dessert plate over each flan; turn over plate and custard cup together. Remove cups from flans. Spoon any caramelized sugar that remains in cups on top of flans.

Honey Baked Custard, Low Fat Dessert image

Here is an older dessert recipe that is lower in calories and fat. It uses honey instead of white sugar as a sweetener. Since my Dad raised bees and we had lots of honey this recipe was a favorite.

4 - eggs
1/4 cup(s) honey
1 pinch(es) salt
2 cup(s) milk, skim
- nutmeg for garnish

Steps:

  • Beat eggs together with honey and salt. Add milk and beat well to mix. pour into a 1 1/2 quart casserole or individual custard cups. Set in a larger pan of hot water. Water should reach (on the outside) up 1/2 way to top of custard dish.
  • Sprinkle top of custard with a little nutmeg. Carefully set whole thing into the oven and bake until a knife inserted in the center of a custard comes out clean, about 35 minutes. (Smaller dishes will bake faster.) Serve with low fat whipped topping. Makes about 8 servings, each custard serving is about 89 calories. Topping is extra, see package for calories.

1 cup low-fat milk
2 cups water
1/4 cup cornstarch
1/4 teaspoon cinnamon
1 teaspoon vanilla essence
1 dash salt
artificial sweetener
mint (optional) or pandan leaf (optional)

Steps:

  • Heat milk and water in a saucepan.
  • Combine cornstarch, cinnamon and salt. Using a little water, mix it into a paste, then add to the saucepan.
  • Cook until it thickens slightly.
  • Cool, then add in the vanilla and artificial sweetener to taste.
  • Serve chilled.
  • You can experiment with different flavours such as mint or pandan (screw pine)leaves. In this case, heat the leaves together with the milk and water, and remove them before chilling.
