BACON, CHEDDAR AND SPINACH STRATA
Even with just one layer of filling in the middle of this strata, you'll be looking at a gorgeous casserole which should thoroughly impress your brunch guests . . . bottomless Mimosas or no.

Steps:
- Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
- Place bread cubes in a large mixing bowl.
- Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
- Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
- Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. Finish with the rest of the soaked bread cubes, spread evenly and pressed down slightly. Sprinkle with the rest of the grated cheese. Cover and let strata sit at room temperature for 1 hour before baking.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake strata in preheated oven until set, about 45 minutes. Optionally, you can broil the strata for a minute or two to brown the top.

While searching for a new recipe, This one L-I-T-E-R-A-L-L-Y jumped out at me! Ham, Peas, low fat...could it be, TRUE! Changed recipe slightly to suit our tastes too!

Steps:
- PREHEAT oven to 180 degrees F.
- COAT Baking dish with cooking spray.
- WHISK eggs and egg whites together
- POUR over cubed crusty bread in dish.
- ADD all other ingredients.
- BAKE for 40 - 45 minutes.
- ENJOY!
- NOTE: I cubed the ham and crusty bread and shredded the cheese.

Steps:
- Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

- 1. Combine muffin cubes and canadian bacon in a 13 X 9 inch baking dish coated with cooking spray;and sprinkle with cheese.
- 2. Beat eggs and egg whites with a mixer at medium speed until blended.
- 3. Add milk and next 5 ingredients and beat at low speed until blended.
- 4. Pour egg mixture over muffin mixture;cover and chill at least 2 hours or overnight.
- 5. Preheat your oven to 350
- 6. Remove cassarole from refrigerafor and let stand while oven preheats.
- 7. Uncover casserole and place in oven and bake for 45 to 50 minutes or until browned.
- 8. Remove from oven and let set for 15 minutes before serving.
- 9. Server with your favorite breakfast juice and fruit.

- Preheat oven to 375 degrees F. Coat a 7-by-11-inch glass baking dish or a 2-quart casserole with cooking spray.

- Cook bacon: Heat a large non-stick frying pan over high heat. (Use a bit of oil if not using non-stick). Add all but 2 tbsp of bacon (reserve some for topping just before baking), cook until lightly browned. Remove from the pan and drain on a paper towel.
- Whisk eggs and milk: Whisk the eggs, milk, salt and pepper in a large bowl (or container, if leaving overnight).
- Soak bread: Add the bread, 1 1/2 cups of the cheese and the cooked bacon to the egg mixture. Mix well. Cover and set aside in the fridge for at least 30 minutes (until all the egg is soaked into the bread) or overnight.
