ORANGE-GLAZED ACORN SQUASH

Steps:
- Cut squash in half; discard seeds. Place squash cut side down in a 15x10x1-in. baking pan; add 1/2 in. of hot water. Bake, uncovered, at 350° for 30 minutes., Meanwhile, in a saucepan, melt butter over medium heat. Stir in the remaining ingredients. Bring to a boil. Reduce heat to medium-low; cook, uncovered, for 30 minutes or until syrupy, stirring occasionally., Drain water from baking pan; turn squash cut side up. Pour about 2 tablespoons orange glaze into each squash half. Bake 25-30 minutes longer or until squash is tender.

- Preheat oven to 350 degrees F (175 degrees C).
- Fill a baking dish with about 1/2 inch water. Place squash halves cut side down in the dish, and bake 40 minutes in the preheated oven.
- In a bowl, whisk together the thawed orange juice, butter, brown sugar, nutmeg, and cinnamon.
- Turn squash halves cut side up in the baking dish, and drizzle evenly with the orange juice sauce. Continue baking 20 minutes.

Acorn squash is naturally low calorie and very healthy. I wanted to make it for lunch but all the recipes I found included butter, margarine, and sugars. Special thanks to Dancer who's recipe I used as the foundation for this one.

Steps:
- Place squash pieces, cut side up, in a large baking pan. Cover and bake in a 350 degree oven for one hour.
- For sauce, in a small saucepan combine orange juice, cinnamon, and nutmeg. Heat at medium temperature until bubbling lightly.
- Remove from heat.
- When the squash has finished cooking for an hour, drizzle sauce in squash shells and return squash to oven.
- Bake, uncovered, about 35 minutes more or until squash is tender.

- Cut squash in half lengthwise and scoop out seeds. Cut each half in half again lengthwise. Brush the cut sides of the squash with oil and season with salt and pepper.
