Number Of Ingredients 8

6 slices day-old bread (better if low in fat)
1 tablespoon oil (can use butter or margarine)
1/2 cup raisins (optional)
8 egg whites
2 cups low-fat milk
1/2 cup white sugar (or sweetner)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8 inch square baking pan.
  • Drizzle melted oil over bread.
  • If desired, sprinkle with raisins.
  • In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy.
  • Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  • Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

1/8 teaspoon ground cloves
3 dashes ground mace
1/4 teaspoon salt
6 cups cubed-day old French bread, or Italian bread (3/4-inch cubes)

Steps:

  • 1. Heat milk and margarine to simmering in medium saucepan remove from heat and stir until margarine is melted. Cool 10 minutes.2. Beat egg and egg whites in large bowl until foamy mix in EQUAL Measure spices, and salt. Mix milk mixture into egg mixture mix in bread.3. Spoon mixture into ungreased 1 1/2-quart casserole. Place casserole in roasting pan on oven rack add 1 inch hot water. 8 cups cinnamon rolls or 8 cups cinnamon-swirl bread
2 cups milk
4 large eggs
3/4 cup sugar
1/3 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1 cup finely chopped pecans

Steps:

  • Place cubed bread or rolls in slow cooker sprayed with vegetable cooking spray.
  • In a mixixng bowl, combine milk, eggs, both sugars, butter, vanilla, and nutmeg and beat until smooth.
  • Stir in pecans.
  • Cover and cook on low for 3 hours.
  • Seerve with lemon sauce or whipped topping.

2 tablespoons butter, melted

  • Preheat oven to 350 degrees F (175 degrees C).

I just tried this and I love it! I'm a real bread pudding fan and I always save the bread heels and any bread that may be aging in the freezer. I only use whole wheat/multi grain and this works fine for any bread pudding. I love Lindt bittersweet chocolate with a passion so I used 2 ozs of that. This recipe asks for 1-3/4 cups milk and that seemed a bit dry to me so I made it 2 cups. It's from Kraft.

4 ounces light cream cheese spread, Philadelphia
1/4 cup Splenda brown sugar blend
2 large egg whites
3/4 teaspoon ground cinnamon
2 cups nonfat milk
6 -8 slices cubed whole wheat bread (6 cups)
2 (1 ounce) baker's semi-sweet chocolate baking squares, coarsely chopped

Steps:

  • Preheat oven to 350°F.
  • Beat cream cheese spread and sugar in large bowl with electric mixer on medium speed until well blended.
  • Add egg whites and cinnamon; mix well.
  • Gradually add milk, mixing until well blended.
  • Place bread cubes in 8-inch square glass baking dish.
