Another one of my daughter's recipes - she always makes these for us when she is home. Cheesy, crispy and flaky pastry straws with a lick of marmite - great for pre-dinner drinks, picnics, lunch boxes or snacks. The Marmite company has a very clever advert that announces that you either LOVE Marmite or HATE it! I love it, that's why it has been added to these delicious Cheese Straws........however, if you HATE it - I have suggested alternatives. My daughter only ever uses Marmite in her cheese straws - but then she is also a Marmite lover! Serve these in a tall glass for tasty appetiser nibbles - if you are using the other flavours, you can lable the glasses so Marmite haters can be pre-warned! Have fun! (For all my Aussie friends - PLEASE use Vegemite if you REALLY have to!!!)

Yield 32 Cheese and Marmite Straws, 6-8 serving(s)

1 lb fresh puff pastry
flour
2 tablespoons marmite
8 ounces mature cheddar cheese, finely grated
2 tablespoons sun-dried tomato paste (optional)
2 tablespoons gentlemen's relish (optional)
2 tablespoons fresh pesto sauce (optional)

Steps:

  • Preheat the oven to 220C/425F/Gas 7.
  • Divide the packet of puff pastry into four and use one portion at a time (popping the rest back in the fridge).
  • On a lightly floured work surface, roll each portion to a rectangle measuring about 31cm x 21cm.
  • Spread the pastry with the marmite and then sprinkle with a quarter of the grated cheese.
  • Fold the pastry over lengthways and press firmly together.
  • Cut about eight 1cm wide strips then cut each strip in half (so the straws aren't too long) and twist.
  • Arrange on baking sheets and chill for 10 minutes before cooking or freeze until ready to cook, then bake for 7-10 minutes, until golden brown and puffed up - the cheese will also have melted.
  • Trim the ends of the straws and carefully stand in glasses for a spectacular way of serving the straws.
  • Alternatively, freeze the uncooked straws in baking sheets lined with parchment and cook from frozen when your guests arrive - you may need to add a few minutes to the cooking time.

1 (8 ounce) package sharp cheddar cheese, grated
1/2 cup margarine or 1/2 cup butter
1 cup plain flour
1 1/2 cups Rice Krispies
1/4 teaspoon red pepper
1/4 teaspoon paprika
1/4 teaspoon garlic salt
1/4 teaspoon Tabasco sauce

Steps:

  • Preheat oven to 250°F.
  • Mix margarine and grated cheese with a fork; add flour, paprika, red pepper, garlic salt and Tabasco.
  • Add Rice Krispies cereal.
  • Roll each piece to marble size, put on ungreased cookie sheet, mash with fork.
  • Bake for 40 to 45 minutes.

My kids love these. If you aren't used to marmite you should make your first batch using only a thin layer of marmite and adjust future batches according to your own tastes.

1 tablespoon maple syrup
1 1/2 cups luke warm water, plus
2 tablespoons luke warm water, plus
2 teaspoons luke warm water (105F/40C)
2 tablespoons fast-rising active dry yeast
2 cups unbleached flour
2 cups whole wheat pastry flour
2 teaspoons sea salt
1 tablespoon extra virgin olive oil
2 -4 tablespoons marmite
4 cups grated cheese (cheddar or combination of pizza cheeses, whatever you prefer)

Steps:

  • In measuring cup combine water, maple syrup and yeast. Stir together until yeast is dissolved. Set aside for 10-12 minutes until slightly foamy.
  • In a large bowl combine flours and salt until well mixed. Make a well in the center and pour in the oil and the yeast mixture. Stir until all the flour in incorporated into dough ball.
  • Knead on lightly floured surface for about 5-8 minutes or until dough is pliable and elastic. Form dough into ball and place in lightly oiled bowl, turning once to coat dough surface with oil. Cover the bowl with a kitchen towel and let rise until doubled, about 1 hour.
  • Divide dough in half. Keep one half covered while rolling the other half into a large rectangle.
  • Spread 1-2 Tbls marmite thinly over entire surface of dough. Sprinkle liberally with cheese. About 2 cups. Roll longways into log. Cut the log into about 12 sections and place wheels cut side up on baking sheet. Bake at 180C/350F for about 15 minutes until golden brown and cheese is melted.
  • Repeat with remaining dough or cut recipe in half for only one batch.
