What a nice gift for someone... or for yourself. Delicious in tea, fabulous on hot buttered biscuits or French toast or vanilla ice cream... It's so easy to make and tastes absolutely decadent.

Number Of Ingredients 7

1 cup honey
2 cinnamon sticks, broken in half
1 teaspoon whole cloves
1 piece lemon, rind of (1-inch x 1/2-inch)
1 piece vanilla bean (2-inch long)
1/4 teaspoon ground ginger
1 pinch ground cardamom

Steps:

  • Warm the honey slightly and pour over spices in a jar.
  • seal the jar and leave to blend for 3 to 4 weeks.

HOMEMADE HONEY CANDY

Number Of Ingredients 4

2 cups melted honey
1 cup cream
1 cup sugar
butter (or butter-flavored cooking spray)

Steps:

  • Combine the first 3 ingredients and cook slowly on medium heat until it forms a hard ball when you drop it into ice water. It took me about an hour. As the mixture gets close to being done, the bubbles from the boil will get a lot smaller and closer together. Pour the mixture onto a buttered cooking sheet. When cooled, pull with buttered hands. Stretch, twist and pull until firm (this is the fun part! ;)) and then form into long ropes and place on waxed paper. Cut into bite size pieces. If you want, you can roll them in powdered sugar and wrap them in wax paper.

Number Of Ingredients 5

60 fresh white clover blossoms
40 fresh red clover blossoms
3 tablespoons wild rose petals
5 pounds sugar
3 cups water

Steps:

  • Wash clover and rose petals throughly in cool running water; drain well. Pat dry. Place in a large metal bowl; set aside. , In a large heavy saucepan, bring sugar and water to a boil, stirring constantly. Boil without stirring until a candy thermometer reads 220°; remove from the heat. Pour over clover and rose petals; let stand for 45 minutes. , Pour through a double thickness of cheesecloth; discard clover and rose petals. Pour honey into jars; store in the refrigerator.
