This New Orleans-inspired dish is one I've been making for clients for as long as I've been a personal chef and this recipe never fails to please!

2 tablespoons canola oil
2 tablespoons butter
1 medium onion (finely chopped)
1 medium green bell pepper (seeds and membrane removed finely chopped)
2-3 stalks (ribs) celery (you want about the same amount as green bell pepper)
4 cloves garlic (minced)
1 tablespoon Cajun seasoning (or to taste)
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1 bay leaf
1 can (15-ounce) tomato sauce
1 cup water (approximately to rinse out the can)
1 tablespoon Worcestershire sauce
1 pound large shrimp (16-20 count, peeled and deveined, tail removed)
Tabasco sauce (to taste)
Salt and freshly ground black pepper (to taste)
2 tablespoons chopped fresh parsley plus sprigs for garnish
Lemon wedges
Cooked rice (for serving)

Steps:

  • Heat oil and butter over medium-high heat in a skillet or saute pan. Add the onion, pepper and celery.
  • Reduce heat to medium and cook approximately 10-12 minutes or until vegetables are very soft, adjusting heat as necessary so vegetables don't burn.
  • Add the garlic, Cajun seasoning, thyme, cayenne pepper and bay leaf. Stir briefly.
  • Add the tomato sauce, water and Worcestershire.
  • Bring to a boil. Reduce heat to low and simmer uncovered 8-10 minutes or until sauce thickens.
  • Stir in the shrimp and cook 1-2 minutes or until just firm.
  • Add hot sauce, salt and black pepper to taste.
  • Remove bay leaf, sprinkle with parsley and serve immediately with hot, cooked rice and lemon wedges.

5 lbs jumbo Louisiana or wild American shrimp, peeled and deveined
salt
fresh ground pepper
1 tbsp minced fresh lemongrass (substitute 1 tsp powdered or 1 tsp lime juice
1/2 cup olive oil
3 mediuim onions, diced
10 garlic cloves thinly sliced
1 stalk celery, diced
1 bell pepper, red, green or yellow seeded and diced
5 pounds overripe tomatoes or other tomatoes peeled and chopped (Brandywine or other heirloom would be good if you can find)
1 bay leaf
1/4 tsp ground allspice
1 tbsp crushed red pepper flakes
leaves from 2 branches fresh basil, torn
pinch of sugar
6-8 cups Louisiana White Rice
2 tbsp chicken fat, extra virgin olive oil, or butter
1 medium onion, minced
3 cups long grain white rice
6 cups chicken stock (homemade if possible, otherwise a good brand)
2 bay leaves
1 tsp salt

Steps:

  • Put the shrimp into a large bowl, season with salt and pepper, then mix in the lemongrass. Heat ¼ cup of the oil in a large deep skillet over moderate heat. Add the shrimp, stirring and tossing them with a spatula. Sauté until they turn pink, about 2 minutes. Remove the shrimp from the pan and set aside while you make the sauce. Into the same skillet with the oil and shrimp juices, put the remaining ¼ cup oil and the onions, garlic, celery, and bell peppers and cook, stirring constantly with a wooden spoon, for about 2 minutes. Add the tomatoes. Reduce the heat to medium-low and when the sauce comes to a simmer add the bay leaf, allspice, and red pepper flakes. Simmer for 10 minutes .Add the shrimp back to the skillet along with the basil and mint. Cook for a minute or two. Season with salt and pepper. If the sauce tastes too tart, add a little sugar to balance the flavor. Remove the bay leaf. Serve over steamed Louisiana white rice.

Steps:

  • Melt butter in a small Dutch oven over medium heat; add bell pepper and next 7 ingredients, and sauté 7 minutes or until vegetables are tender. Stir in tomatoes; bring to a boil, reduce heat to low, and simmer, stirring occasionally, 20 minutes. Increase heat to medium. Add shrimp; cook, stirring occasionally, 4 minutes or just until shrimp turn pink. Remove and discard bay leaf. Serve immediately over rice in shallow bowls.

salt and black pepper (to taste)
2 -4 tablespoons whipping cream (optional add in for a creamy sauce)

Steps:

  • In a medium saucepan melt butter over medium heat; Add in onion, bell pepper, celery, garlic and chili powder; sauté for until vegetables are tender (about 3-4 minutes).
  • Whisk in the cornstarch, then stir in the stewed tomatoes, tomato sauce and Worcestershire sauce; bring to a simmer over medium heat stirring and breaking up the tomatoes with back of a spoon.
  • Add in Creole seasoning to taste (and wine if using) simmer uncovered for about 25 minutes (you may simmer longer if desired for a thicker richer sauce).
  • If you prefer a creamy Creole sauce add in whipping cream at this point starting with 2 tablespoons and adding in more to taste.
  • Add in the uncooked shrimp; cook for 5 minutes.
  • Season with salt and black pepper to taste.

Wonderful shrimp dish that will stick to your ribs. It's a recipe out of the Talk About Good cookbook, with only slight modifications. serves 4, I usually double as this is even better the next day.

1/4 cup oil
1/4 cup flour
1 lb shrimp, peeled and deveined (raw)
1 garlic clove, minced
1/2 cup minced onion
2 tablespoons minced parsley
1 cup water
2 teaspoons salt (I use only 1 tsp salt)
2 bay leaves
1/2 teaspoon cayenne pepper
1 (8 ounce) can tomato sauce
1/2 cup chopped bell pepper (green)

Steps:

  • combine flour and oil in a 5 quart heavy pot, making a medium brown roux on high heat. Stir constantly so as not to burn the roux.
  • Lower heat, add shrimp and cook for about 3 minutes.
  • Add garlic, onion, bell pepper, and parsley. Continue to cook for 2 minutes to wilt onions.
  • Raise heat, add water and remaining ingredients. Bring to boil.
  • Lower heat to simmer, covered, for 20 to 30 minutes.
  • Serve over rice. Corn or peas are great sweet vegetables on the side of this tomato based gravy. We always have peas and potato salad with this meal. Hope you enjoy it as much as we have!

2 Lbs fresh shrimp
water
1/2 cup vegetable oil
2 medium onions, chopped
2 large green peppers, chopped
4 celery ribs, chopped
1 28 oz can stewed tomatoes
2 tsps salt
1 tsp ground red pepper
1 tsp black pepper
1 tsp white pepper
4 bay leaves
1 1/2 tsp sugar
1/2 cup chpped green onions
1/2 cup chopped parsley

Steps:

  • Peel and devein shrimp, reserving the peel. Place peels in a small saucepan, add water to cover. Bring to a boil, let cook for 15 minutes. Strain and remove broth. Discard peels. Place oil in large heavy pot and place over medium heat. Add onions, green peppers and celery. Saute, stirring until vegetables are soft, about 5 minutes. Stir in tomates, salt, peppers, bay leaves, thyme, sugar and shrimp stock. Heat to boiling, stirring occasionally. Stir in shrimp, cook until they turn pink, 5 to 7 minutes. (Do NOT overcook) Discard bay leaves. Stir in the green onions and parsley. Serve over steaming, fluffy rice.
