8 ounces butter, softened
1/2 cup durkee red hot sauce
1/2 teaspoon garlic, minced
1/2 bunch cilantro, finely chopped

Steps:

  • Place softened butter, minced garlic, and finely chopped cilantro in an electric mixer.
  • Mix on slow speed until all ingredients are well blended.
  • SLOWLY add hot sauce until well incorporated.
  • Wrap the ball of butter into a large piece of wax paper; form into a log (with the diameter of the log being the size of a silver dollar).
  • Place log in freezer until firm.
  • Cut log into 1/4-inch to 1/2-inch slices and place on top of grilled salmon immediately before serving.
  • The remaining butter can be stored in an airtight container for up to two months.

2 ½ lbs crawfish (shell-on, fresh or frozen)
4 ears corn (cut into 3-4 inch pieces)
1 pound small yellow potatoes (halved, you can also use red baby potatoes)
1 onion (peeled and sliced into 6 wedges)
1 pound smoked sausage (andouille or kielbasa, sliced into 1-inch thick pieces)
8 cloves garlic (smashed)
1/2 cup Old Bay seasoning
1 lemon (quartered)
salt and pepper (to taste)
3 tablespoons unsalted butter for serving (melted, or garlic butter seafood sauce, see recipe notes)
2 tablespoons optional chopped parsley

Steps:

  • Fill up a large pot with water over medium-high heat. Add old bay seasoning, garlic, and lemon. Bring it to a boil.
  • Add corn and baby potatoes into the water. Boil for about 10 minutes.
  • Add sausage and onions. Cover with a lid and boil for an additional 5 minutes.
  • Gently stir in crawfish. Boil for 5-6 minutes or until the crawfish turns into bright red color. Season with salt and pepper to taste. (If you crawfish is pre-cooked, you'll only need 3-4 minutes; if yours is frozen, add 2-3 more minutes.)
  • Drain the mixture (you can reserve about 1/2 cup of the broth for serving).
  • Transfer the crawfish boil to a serving plate or on the newspaper.
  • Sprinkle with parsley. Serve with melted butter or homemade seafood boil sauce. Enjoy!

½ tsp dried oregano
½ tsp cayenne
¼ tsp black pepper
¼ tsp crushed red pepper flakes
¼ tsp paprika
2 bay leaves, crushed
4 Tbsp (½ stick) butter
2 cloves garlic, minced
½ cup fish or chicken stock
¼ cup white wine
2 Tbsp fresh lemon juice
2 Tbsp Worcestershire sauce
1 lb shell-on shrimp
2 Tbsp minced fresh parsley
Hot crusty French bread, for serving

Steps:

  • In a small bowl, combine first 8 ingredients. In a large cast-iron skillet, heat butter over medium-high until melted and sizzling. Add garlic, salt mixture, stock, wine, lemon juice and Worcestershire sauce. Bring to a boil, reduce heat and simmer 5-7 minutes or until sauce thickens enough to lightly coat a spoon; shake pan as it cooks to help bring sauce together. Add shrimp, reduce heat to low and cook, turning once, 3-5 minutes or until shrimp turn pink and firm. Sprinkle with parsley. Serve immediately with bread.

  • Place shrimp in a 10x6 baking dish.
  • Combine butter, garlic, and hot sauce in a small mixing bowl, stirring well.

⅓ cup chopped red bell pepper
⅓ cup chopped green onion
6 cloves garlic, minced
1 pound peeled and deveined large fresh shrimp (tails left on)
2 tablespoons all-purpose flour
1 cup low-sodium chicken broth, room temperature
2 teaspoons Worcestershire sauce
1 teaspoon fresh lemon juice
⅛ teaspoon cayenne pepper
White Cheddar Corn Grits (recipe follows)
Garnish: ground black pepper, chopped red bell pepper, chopped fresh parsley
4 cups low-sodium chicken broth
3 tablespoons unsalted butter
1 teaspoon kosher salt
1 cup stone-ground yellow corn grits
1½ cups shredded extra-sharp white Cheddar cheese
¼ cup mascarpone cheese*
2 tablespoons heavy whipping cream

Steps:

  • In a 12-inch enamel-coated cast-iron skillet, heat 1 tablespoon butter over medium heat. Add tasso; cook, stirring occasionally, until browned, 15 to 20 minutes. Using a slotted spoon, transfer tasso to a medium bowl, reserving drippings in skillet.
  • Add bell pepper, onion, and garlic to skillet; cook, stirring constantly, until softened, 3 to 4 minutes. Transfer vegetables to bowl with tasso.
  • Add shrimp to skillet; cook until pink and firm, 2 to 3 minutes. Transfer shrimp to bowl with tasso mixture.
  • Add remaining 2 tablespoons butter to skillet, and let melt. Whisk in flour; cook for 1 minute, whisking constantly. Whisk in broth, Worcestershire, lemon juice, and cayenne; bring to a boil over medium-high heat. Reduce heat to medium; simmer until thickened, 2 to 4 minutes.
  • Return tasso mixture to skillet; stir until heated through, 2 to 3 minutes. Serve immediately with White Cheddar Corn Grits. Garnish with black pepper, bell pepper, and parsley, if desired.
  • In a medium saucepan, bring broth, butter, and salt to a boil over medium-high heat. Gradually whisk in grits; reduce heat to medium-low. Cover and cook, whisking occasionally, until grits are thickened, about 20 minutes.
  • Remove from heat; gradually whisk in Cheddar, mascarpone, and cream. Serve immediately. (Whisk in an additional 2 to 4 tablespoons warm cream if grits become too thick.)
