Compound butter is an incredibly easy, yet, impressive way to season meat, fish, and poultry. Louisiana Compound Butter is my favorite; it is really good on grilled steak, but it is extraordinary on grilled salmon!

Steps:
- Place softened butter, minced garlic, and finely chopped cilantro in an electric mixer.
- Mix on slow speed until all ingredients are well blended.
- SLOWLY add hot sauce until well incorporated.
- Wrap the ball of butter into a large piece of wax paper; form into a log (with the diameter of the log being the size of a silver dollar).
- Place log in freezer until firm.
- Cut log into 1/4-inch to 1/2-inch slices and place on top of grilled salmon immediately before serving.
- The remaining butter can be stored in an airtight container for up to two months.

- Fill up a large pot with water over medium-high heat. Add old bay seasoning, garlic, and lemon. Bring it to a boil.
- Add corn and baby potatoes into the water. Boil for about 10 minutes.
- Add sausage and onions. Cover with a lid and boil for an additional 5 minutes.
- Gently stir in crawfish. Boil for 5-6 minutes or until the crawfish turns into bright red color. Season with salt and pepper to taste. (If you crawfish is pre-cooked, you'll only need 3-4 minutes; if yours is frozen, add 2-3 more minutes.)
- Drain the mixture (you can reserve about 1/2 cup of the broth for serving).
- Transfer the crawfish boil to a serving plate or on the newspaper.

- In a small bowl, combine first 8 ingredients. In a large cast-iron skillet, heat butter over medium-high until melted and sizzling. Add garlic, salt mixture, stock, wine, lemon juice and Worcestershire sauce. Bring to a boil, reduce heat and simmer 5-7 minutes or until sauce thickens enough to lightly coat a spoon; shake pan as it cooks to help bring sauce together. - In a 12-inch enamel-coated cast-iron skillet, heat 1 tablespoon butter over medium heat. Add tasso; cook, stirring occasionally, until browned, 15 to 20 minutes. Using a slotted spoon, transfer tasso to a medium bowl, reserving drippings in skillet.
- Add bell pepper, onion, and garlic to skillet; cook, stirring constantly, until softened, 3 to 4 minutes. Transfer vegetables to bowl with tasso.
- Add shrimp to skillet; cook until pink and firm, 2 to 3 minutes. Transfer shrimp to bowl with tasso mixture.
- Add remaining 2 tablespoons butter to skillet, and let melt. Whisk in flour; cook for 1 minute, whisking constantly. Whisk in broth, Worcestershire, lemon juice, and cayenne; bring to a boil over medium-high heat. Reduce heat to medium; simmer until thickened, 2 to 4 minutes.
- Return tasso mixture to skillet; stir until heated through, 2 to 3 minutes. Serve immediately with White Cheddar Corn Grits. Garnish with black pepper, bell pepper, and parsley, if desired.
- In a medium saucepan, bring broth, butter, and salt to a boil over medium-high heat. Gradually whisk in grits; reduce heat to medium-low. Cover and cook, whisking occasionally, until grits are thickened, about 20 minutes.
- Remove from heat; gradually whisk in Cheddar, mascarpone, and cream. Serve immediately. (Whisk in an additional 2 to 4 tablespoons warm cream if grits become too thick.)
