Fresh Fruit Salad image

The taste of cream cheese in the whipped cream dressing is a delicious addition to this luscious salad with 7 fresh fruits.

1 cup cut-up orange segments, 2 small oranges
1 cup sliced strawberries
1 cup blueberries
1 cup diced apple, 1 apple peeled or unpeeled
1 cup banana slices, 1-1/2 bananas
1 cup grapes, each cut in half
1 cup diced pineapple chunks
1 tablespoon lemon juice
1/2 cup whipping cream
3-1 gram packages Stevia sweetener or 1 tablespoon powdered sugar
1 tablespoon lemon juice
3 ounces softened cream cheese

Steps:

  • Combine all of the fruit together into a large bowl with the apples and bananas on top.
  • Pour lemon juice over the apples and bananas then mix the fruit altogether.
  • Pour the whipping cream into a small bowl and beat with a wire beater until the cream is thick and peaks form.
  • Blend in the stevia a little at a time.
  • In a larger bowl, cream the cream cheese and lemon juice until smooth.
  • Add the whipped cream into the bowl of cream cheese and fold together.
  • Pour dressing over the mixed fruit and stir together.
  • Frefrigerate and serve cold.

2 (15 1/2 ounce) cans pineapple chunks
2 (11 ounce) cans mandarin oranges
1 pint strawberry
4 bananas

Steps:

  • Drain pineapple and oranges, Slice bananas & berries. Mix all together w/ pie filling. Chill several hours. May swap fruits around for your fave- we mix it up sometimes. Cook time is chill time.

2 ounces raspberry vinegar
1/8 teaspoon Tabasco sauce (or less)
1 teaspoon ground cinnamon
1 teaspoon granulated sugar
1 (24 ounce) package mesclun (baby lettuces)
1/4 teaspoon salt, to taste
1/8 teaspoon ground pepper, to taste
2 ounces Stilton cheese, crumbled (or blue cheese)
2 ounces almonds, sliced & toasted

Steps:

  • Soak cranberries overnight in the port wine.
  • The next morning, in a large mixing bowl, add oil, water, vinegar, Tabasco, cinnamon & sugar, & whisk until emulsified.
  • Add the lettuces & toss, then season with salt & pepper.
  • Divide the greens among 4 plates & garnish each with crumbled cheese, cranberries & almonds.
