4 cans (16 ounces each) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (14 ounces) smoked turkey sausage, sliced
3 celery ribs, chopped
1 large onion, chopped
1 cup chicken broth
1 medium green pepper, chopped
1 small sweet red pepper, chopped
6 garlic cloves, minced
1 bay leaf
1/2 teaspoon crushed red pepper flakes
2 green onions, chopped
Hot cooked rice

Steps:

  • In a 4- or 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low until vegetables are tender, 3-4 hours. , Stir before serving. Remove bay leaf. Serve with green onions and rice. Freeze option: Discard bay leaf and freeze cooled bean mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

Steps:

  • The night before, add the dry beans to a large bowl with double their volume in water. Allow the beans to soak in the refrigerator overnight.
  • When you're ready to start cooking, slice the sausage into rounds. Add the cooking oil and sliced sausage to a large pot and cook over medium until the sausage pieces are browned. Remove the cooked sausage with a slotted spoon to a clean bowl. Place the cooked sausage in the refrigerator while you prepare the rest of the dish.
  • While the sausage is cooking, dice the onion, bell pepper, and celery. Mince the garlic.
  • After removing the cooked sausage, add the onion, bell pepper, celery, and garlic to the pot. Sauté over medium heat, allowing the moisture from the vegetables to help dissolve any browned bits off the bottom of the pot as you stir.
  • Add the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, black pepper, and bay leaves to the pot. Stir and cook for one minute more.
  • Drain and rinse the soaked beans. Add them to the pot along with 6 cups water and give the pot a brief stir to combine the ingredients.
  • Place a lid on the pot, turn the heat up to medium-high, and bring it up to a boil. Once boiling, turn the heat down to medium-low, and let the pot boil for one hour, stirring occasionally. Replace the lid every time you stir.
  • After boiling for one hour, the beans should be tender. Begin to smash the beans with the back of a spoon against the side of the pot. Continue smashing the beans and letting the pot simmer without a lid for 30 minutes to thicken the pot.
  • While the beans are simmering for their final 30 minutes, cook the rice. Add the rice and 3 cups water to a sauce pot. Place a lid on top, turn the heat on to high, and bring it up to a boil. Once boiling, turn the heat down to low and let the rice simmer for 15 minutes. After 15 minutes, turn the heat off and let the rice rest for 5 minutes without removing the lid. Fluff the rice with a fork before serving.
  • Once the red beans have thickened, add the cooked sausage back to the pot along with 1/4 cup chopped fresh parsley. Stir to combine. Taste the red beans and add salt to your liking. Start with 1 tsp and add more as needed. I used 1 Tbsp total (3 tsp).
  • Serve the red beans in a bowl topped with a scoop of rice and a sprinkle of sliced green onions.

4 cups Camellia Red Kidney Beans
4 cups water
4 cups chicken broth
1 tablespoon butter
4 strips bacon (diced)
1 pound seasoning ham (cubed)
2 - 3 cloves garlic (minced)
1 medium onion (diced)
3 - 4 stalks celery (diced)
2 -3 dried bay leaves
2 tablespoon dried parsley
2 - 3 teaspoon kosher salt
1 teaspoon black pepper
½ teaspoon Tony Chachere's Creole Seasoning
6 cups water
4 cups chicken broth
pepperoncini peppers (diced)
2 cups white or long grain rice (use around ½ cup per serving)
1 andouille or hot smoked sausage (sliced and cooked)

Steps:

  • Before you begin cooking, soak your red beans in a mix of water and chicken broth.
  • While the beans are soaking, dice up your celery, onion, garlic, bacon, and ham into bite-size pieces.
  • After two hours, rinse and strain your beans. (You can also soak them overnight to start cooking your red beans in the morning.)
  • After the beans are rinsed, heat a stock pot over medium/low heat and melt a tablespoon of butter.
  • When your butter is melted, add your bacon and cook it until it is a little crispy.
  • Add your diced ham and cook it to get a sear on it. When the bacon is crispy and the ham is seared, use a slotted spoon to remove it from the pot, leaving the bacon grease and butter behind.
  • Next, add your celery, onion, and garlic in the bacon grease until the onions are translucent.
  • Add your bacon and ham back to the pot and then add your bay leaves, parsley, salt, pepper, and Tony Chachere's Creole Seasoning. (If you do not have Tony's, you can use my Bayou Blast recipe.)
  • Then add your chicken broth, then water, and bring it all to a boil.
  • When the water is boiling, add the soaked and drained red beans and return to a boil.
  • Reduce the heat and simmer over low/medium heat (2 - 3 out of 8 on the stove) for 1 ½ to 2 hours, checking on the beans and giving them a stir every 30 minutes. Make sure to stir all the way down to the bottom of the pot, checking to make sure that the bottom is not burning.
  • When you have about 20 - 30 minutes left of cooking time, dice up your smoked sausage and saute it in a frying pan.
  • After 1 ½ to 2 hours, remove your beans from the heat and serve over white rice. Garnish with diced pepperoncini peppers, your cooked sausage, and a splash of the vinegar from the jar of peppers.

6 cups water
2 cups finely chopped onions
3 cloves garlic, crushed
1 cup finely chopped green pepper
3 teaspoons chili powder
2 teaspoons cayenne
1/4 teaspoon oregano
1/4 teaspoon cumin
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 bunch parsley, finely chopped
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
3 cups cooked brown rice

Steps:

  • Combine the drained beans, water, onion and garlic in a large pot.
  • Bring to a boil for 12 minutes.
  • Reduce heat and simmer for 1 hour.
  • Add remaining ingredients except for rice and parsley.
  • Stir to mix pepper, tomato sauce, worcestershire sauce and spices with beans.
  • Simmer and additional 1 to 1-1/2 hours until beans are tender and liquid is thick.
  • Spoon beans over rice and sprinkle with additional chili powder and cumin, if desired.

3 slices of thick cut bacon, chopped
1 large onion, chopped
2 cloves garlic, minced
1 ½ cups dry red beans
¼ teaspoon liquid smoke
½ tablespoon cajun seasoning, mild or hot based on preference
4 cups chicken broth or stock
2 cups white rice, cooked

Steps:

  • Set Instant Pot to sauté and add bacon. Cook until the bacon is crisp, and then remove from pot.
  • Add onion to the pot and cook until the onions begin to soften, scraping the bottom to incorporate the fond.
  • While the onions are cooking, rinse the beans and remove any bad beans or stones.
  • Add the garlic, liquid smoke, and cajun seasoning to the pot. Stir.
  • Add the beans, broth, and bacon to the pot, and then set on high pressure for 1 hour.
  • After the beans have cooked, allow the Instant Pot to naturally release for 15 minutes, and then quick release.
  • Drain off excess water, reserving a ½ cup.
  • Use an immersion blender or potato masher to mash about half the beans. Stir.
  • Add beans to the rice, and garnish with fresh parsley or green onions if desired.

2 large smoked ham hocks
1 large yellow onion, chopped
2 celery stalks, chopped
1 large green bell pepper, chopped
1 teaspoon cayenne
1/4 bunch fresh flat-leaf parsley, chopped
2 sprigs fresh thyme
3 bay leaves
4 garlic cloves, chopped
2 green onions, green part only, chopped, plus more for garnish
Red pepper sauce
2 andouille sausages, cut into 3-inch chunks
4 cups cooked white rice

Steps:

  • Place the dried beans in a large bowl and cover with cold water. Soak the beans overnight in the refrigerator.
  • Drain the beans and put them in a large heavy pot with the ham hocks, adding just enough cold water to cover (about 2 quarts). Add the onion, celery, green pepper, cayenne, parsley, thyme, bay leaves, garlic, green onions, and several shakes of red pepper sauce; give everything a good stir to combine. Simmer, uncovered, until the beans are tender and starting to thicken, about 21/2 hours. You want the beans to be almost overcooked, like they are getting ready to burst. Stir the beans occasionally to prevent scorching on the bottom of the pot. Add about 1 cup of water toward the end of cooking if the mixture appears too thick or dry.
  • Mash about 1 cup of the cooked beans against the side of the pot with a wooden spoon, this makes the broth thick and creamy. Toss in the sausages and cook for another 30 minutes to heat them through. Adjust the seasoning, if needed. Serve the red beans in a wide bowl over some steamed white rice and garnished with chopped green onion.
