LOTUS ROOT PEANUT SOUP [PRESSURE COOKER RECIPE]



Lotus root peanut soup [Pressure cooker recipe] image

Super delicious and nutritious lotus root peanut soup.

Number Of Ingredients 7

600g lotus root, skins removed and cut into chunks
8 red dates
1.5 tbsp goji berries
3-4 tbsp peanuts
Salt and pepper to taste
1.2 litre water
800g-1kg chicken parts with bones (or pork ribs or pork soup bone)

Steps:

  • Clean chicken thoroughly. Peel skin of lotus root and cut into chunks.
  • Place chicken, lotus root, peanuts, goji berries and red dates into pressure cooker pot. Add 2-3 tsp of salt and dash of pepper. Add 1.2-litre of water or until it just covers the ingredients.
  • Seal and pressure cook for 20 minutes. Allow for the pressure cooker to naturally release the pressure if possible.
  • Taste and add salt if needed. Serve!
