Phillips seafood restaurant, in Baltimore's Inner Harbor, serves some of the best crab cakes I have ever had. Here is a copycat recipe for this traditional Maryland delicacy

Number Of Ingredients 13

8 ounces crabmeat, shell pieces removed (backfin recommended)
1 large egg
1 teaspoon Worcestershire sauce (or 2 tsp. Worcestershire for Chicken)
1/8 teaspoon freshly ground mustard seeds or 1/8 teaspoon dry mustard
1/2 tablespoon mayonnaise
1/2 tablespoon sour cream
1/2 teaspoon freshly squeezed lemon juice
1 1/2 teaspoons prepared mustard
1 1/2 teaspoons unsalted butter, melted
3/4 teaspoon parsley flakes
1/2 teaspoon Old Bay Seasoning (or other crab or seafood seasoning)
1/4 cup breadcrumbs
lemon wedges or lemon slice, to garnish

Steps:

  • Whisk together all ingredients except crab meat.
  • Fold in crab meat.
  • Divide mixture into 4 parts and shape into cakes approximately 3/4” thick.
  • Pan fry the cakes in a little peanut oil or canola oil.
  • Serve hot, garnished with lemon.

These take a while to make, but are worth it. I got these from the newspaper years ago. Faidley's is in Lexington Market on Eutaw St. in Baltimore, MD.

1 lb large lump crabmeat, picked over
1 cup crushed saltine
1/2 cup mayonnaise
1 egg
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 dash Tabasco sauce
vegetable oil (for frying) (optional)
clarified butter (optional) or olive oil, for sauteing (optional)
1 cup mayonnaise
1/2 cup finely chopped dill pickle
1/4 cup minced onion
2 tablespoons chopped parsley
1 tablespoon pickle juice

Steps:

  • Crab cakes: Spread the crab meat out in a flat pan and sprinkle the crushed saltines over the top.
  • In a small bowl, mix mayonnaise, egg, mustard, Worcestershire and tobasco.
  • Pour the mayonnaise over the crab meat and gently toss or fold the ingredients together, taking care not to break up the lumps of crab meat.
  • Let the mixture sit for 2-3 minute.
  • before forming the cakes.
  • Form the cakes by hand or with an ice cream scoop into 8 mounds about 3" in diameter and 3/4" thick.
  • Do NOT pack the mixture too firmly.
  • The cakes should be as loose as possible, yet still hold their shape.
  • Place the cakes on a tray or platter lined with wax paper, cover and refrigerate for at least 1 hour before cooking.
  • Tartar sauce: In a bowl, mix mayonnaise, dill pickles, onion, parsley and dill pickle juice.
  • Chill for at least 1 hour.
  • To fry: Pour oil into a heavy skillet to a depth of about 1 ½".
  • Heat oil and fry crab cakes, a few at a time, until golden brown, about 4 minute.
  • on each side.
  • Remove with a slotted utensil to a paper towel to drain.
  • To broil: Slip them under a preheated broiler until nicely browned, turning to cook evenly, about 4-5 minute.
  • on each side To sauté: Heat a small amount of clarified butter or olive oil, or a combination, in a skillet and sauté the cakes, turning several times, until golden brown, about 8 minute.

  • Serve at once with tartar sauce on the side.

4 tablespoons Dijon mustard
2 tablespoon crab boil seasoning (recommended: Old Bay)
1 tablespoon fresh lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon freshly chopped parsley leaves
2 eggs, beaten
1 pound lump or backfin crabmeat
1 pound jumbo lump crabmeat
2 slices white bread, crusts removed and torn into small pieces
1/4 cup unsalted butter, as needed
Serving Suggestion: Tartar sauce

Steps:

  • Whisk together the first 7 ingredients in a bowl and set aside.
  • Spread the crabmeat on a cookie sheet and carefully remove any bits of shell. Transfer to a large bowl and toss gently with the bread. Spoon the wet mix over the crabmeat and gently fold until just combined. Allow the
  • mixture to rest in refrigerator for 10 minutes.
  • Shape the mixture into 12 even-sized cakes (approximately 4 ounces each). Chill the crab cakes for at least 30 minutes or up to overnight to firm up.
  • Heat the butter in a large skillet over medium-high heat. Working in batches, fry the crab cakes, turning once, until golden brown and heated through. (Alternatively, bake in a preheated 400 degree F. oven for 15 to 20 minutes.)

This was also printed many years ago, but has made a new a recent appearance again paralleling the closure of "Angelina' and subsequent auction of the restaurant. With the sale of the restaurant this crab cake recipe goes along with it. History as follows from Angelina's website. "In 1952, Angelina Tadduni and her family began a neighborhood Italian restaurant in a row home in northeast Baltimore. Building upon its local popularity, Bob and Carole Reilly purchased the restaurant in 1968 and added several essential features to the Angelina's legacy. Among these were a renowned Irish pub (the first to serve draught Guinness in Baltimore) and the finishing touches on the celebrated crab cake recipe. The success of this signature dish made Angelina's name famous far beyond the old neighborhood, and the crab cakes began accumulating a list of awards too lengthy to include here. Visitors from across the country came to Angelina's seeking the best known crab cakes in a city best known for crab cakes." "This recipe is straightforward and unadulterated and what you will get are authentic Maryland-style crab cakes. The real key to making good crab cakes is the use of top quality crab meat, and very little filler as possible. 1 lb lump crabmeat (picked over)
1 cup fresh breadcrumb
1/3 cup milk, approximately (whole or 1/2 & 1/2)
1 egg, beaten slightly
1/4 cup mayonnaise
1/2 teaspoon baking powder
2 teaspoons parsley, fresh chopped
2 teaspoons onions, minced (optional)
1/2 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon flour, sifted for dusting
2 tablespoons vegetable oil (or butter for frying)
cooking spray

Steps:

  • Put crab meat in a large bowl and cover with bread crumbs and moisten with milk.
  • Combine beaten egg with the mayonnaise in a separate bowl. Add baking powder, parsley, onion, salt, and pepper.
  • Pour this mixture over crab/crumb/milk mixture. Refrigerate for at least 1 hour. Dust cakes lightly with flour.
  • After one hour, form crab into cakes, not over mixing or over forming. Put each crab cake on wax-paper - (putting wax paper on top too) and let sit until ready to fry up. Let sit again, at least one hour, this makes the cake easier to hold together during the cooking process.
  • Spray cooking spray on bottom of pan, (either stainless steel, or non-stick),.
  • Heat butter or oil until hot. (Shimmering) Fry crab cakes approximately 4 minutes per side, carefully, flipping over and frying for another 4-5 minutes until browned.
  • Drain on paper towel and serve.

1 1/4 cups sugar
8 egg yolks
2 1/2 cups cake flour, sifted
1/4 teaspoon salt
1 tablespoon baking powder
3/4 cup milk
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 1/2 cups sugar
1/4 teaspoon cream of tartar
1/2 cup water
1 teaspoon salt
3 egg whites
1 teaspoon vanilla
1/2 cup shredded coconut (or 3 crumbled soft macaroon cookies)
1/2 cup chopped pecans
1/2 cup maraschino cherry, drained and chopped

Steps:

  • Cream butter; gradually add sugar; beat until fluffy.
  • Beat egg yolks until thick and slowly add to the mixture.
  • Mix together the cake flour, salt, and baking powder and add alternately with the milk.
  • Add extracts.
  • Pour mixture into 3 greased and floured 9-inch layer pans.
  • Bake at 350 degrees for 25-30 minutes.
  • Invert pans and continue cooling.
  • Lord Baltimore Frosting.
  • Mix sugar, cream of tartar, water and salt.
  • Bring to boiling, stir until sugar is dissolved.
  • Slowly add sugar to egg whites, beat with electric mixer until stiff peaks form, about 7 minutes.
  • Beat in vanilla.
  • To 2 cups of frosting add remaining ingredients.
  • Spread first layer of cake with half of the fruit frosting, cover with second layer.
  • Spread with remaining fruit mixture.
  • Top with third layer.
  • Frost entire cake with remaining plain frosting.

20 saltine crackers
1 pound jumbo lump crabmeat
1/2 cup mayonnaise
1 large egg, beaten
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon hot sauce
Freshly ground black pepper
1/4 cup canola oil
Lemon wedges, for serving

Steps:

  • Finely crush the saltine crackers in your hands and place in a large bowl. Add the crabmeat, reserving any crab juice in a separate small bowl.
  • To the bowl with the crab juice, add the mayonnaise egg, mustard, Worcestershire sauce and hot sauce; whisk until smooth. Season with black pepper.
  • Gently fold the mayonnaise mixture into the crab and saltines. Refrigerate for at least 1 hour.
  • Scoop the crab mixture into six patties, about 1 1/2-inches thick. Be careful not to handle the mixture too much.
  • In a large skillet, heat the oil over moderately high heat until shimmering. Add the crab cakes and cook until deeply golden and heated through, about 3 minutes per side. Transfer the crab cakes to plates and serve with lemon wedges.
