"These delights are soft and chewy" a comment from the original recipe post. I adopted this recipe, made it and I agree. I followed the recipe, next time I will reduce the amount of brown sugar to 1/4 cup, the cookies/squares are sweet.

1 1/2 cups rolled oats
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1/2 cup brown sugar
1/4 cup corn syrup
1 egg white
1 teaspoon vanilla
3/4 teaspoon cinnamon

Steps:

  • Combine oats, flour, baking powder, baking soda, salt and cinnamon in a bowl, set aside
  • In another bowl combine the applesauce, brown sugar, corn syrup, egg white and vanilla, stir until sugar dissolves.
  • Add dry ingredients to the liquids, mix well.
  • Grease (I used a non-stick cooking spray)a 9x15 inch cookie sheet, spread batter on the prepared pan.
  • Bake at 350 degrees for 12-15 minutes.
  • Cool and cut into squares yield depends on size of squares.

1 cup old fashioned oats (not instant)
1 cup nonfat milk
1 cup whole wheat flour
2/3 cup Splenda brown sugar blend
2/3 cup unsweetened applesauce
2 egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
4 -6 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
1 cup dark chocolate chips

Steps:

  • Soak the oats in milk for about one hour.
  • Preheat the oven to 400.
  • Spray the muffin pan with cooking spray.
  • Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined. Add the chocolate chips. Do not over-mix of the muffins will be tough. Spoon the mixture into the muffin pan, forming a total of 12 muffins.
  • Bake for 20-25 minutes, or until done. Remove from pan and enjoy.

I HAVE BEEN LOOKING FOR A GOD FAT FREE COOKIE RECIPE AND I FOUND IT!! LOOK NO MORE!these don't necessarily have to be sugar cookies that you are making, these would probably work with molasses, cinnamon, cloves and ginger for a gingersnap or cocoa for a chocolate fudge cookie.

2/3 cup whole wheat flour (I used a mixture of this and whole wheat pastry flour)
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
1/8 teaspoon salt, eyeball it
3 tablespoons Splenda sugar substitute, for baking large ones
8 -9 tablespoons fat-free buttermilk
1 tablespoon plain fat-free yogurt
1 1/4 teaspoons vanilla extract
2 teaspoons Butter Buds or 2 teaspoons any other fat free butter flavoring

Steps:

  • Preheat oven to 450°F.
  • combine the flour, baking soda, cream of tartar, and salt in a large bowl. mix throughly with a fork, slightly fluffing the flour to create mild pockets of air in the mixture.
  • Add Splenda and mix again.
  • Add buttermilk (1 tbs at a time), fat free plain yogurt, vanilla and butter flavoring. SOFTLY AND GENTLY mix with a spoon and incorporating all the ingredients together until everything is mixed.
  • bake for about 15-20 minutes until the bottoms are browned (but not burnt) and they look done. (I have a convection oven so times may vary).
  • Note: DO NOT OVER MIX, however do not undermix. I do not know the outcome that this may have, but I have a feeling that it isn't very good!

So, it was Sunday and my sis and me really wanted to have a nice, comforting cookie to sweeten the day with. We wanted it fast and without having to go to the neighbours for a fancy ingredient. Well, this is the recipe we found. It completely fit the bill. Hope youll enjoy it, too! :)

80 g butter, softened
50 g brown sugar (1/4 cup)
1 egg
1 tablespoon plain yogurt or 1 tablespoon milk
100 g oats, whizzed to a finer consistency (or use oatbran)
1 teaspoon ground vanilla bean
125 g flour (1 cup)
1/2 teaspoon baking powder
120 g chocolate, chopped

Steps:

  • In a big bowl cream butter and sugar. Add egg and yoghurt/milk. Mix inches.
  • In a second bowl combine oats, vanilla, flour and baking powder. Add flour mixture to creamed butter. Stir in well.
  • Fold in chocolate pieces.
  • Form into small balls (size of a walnut) and flatten slightly. Place on a paper-lined baking sheet.
  • Bake in the preheated oven at 180°C/375°F for 10-15 minutes.

1 teaspoon baking powder
1/2 teaspoon baking soda

3 semi-sweet chocolate baking squares, melted
1 egg
2/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/4 cups rolled oats

Steps:

  • Mix first 7 ingredients together. Set aside.
  • Beat egg. Mix in vanilla and melted chocolate. Add to dry ingredients. Mix well.
  • Stir in rolled oats.
  • Spray cookie sheet with Pam. Drop by spoonful onto cookie sheet. I use a small cookie scoop to make perfect cookies and keep my portion size accurate.
  • Bake at 350 for 8 minutes.
