This recipe came from the desire to make a pot roast, but all I had on hand was a London broil. I made this on the fly, and it turned out great. My wife took the leftovers to work and everyone wanted the recipe. I hope you all like it.

2 tablespoons vegetable oil, or as needed
1 (2.5 pound) London broil, cut into thirds
1 teaspoon Creole seasoning, or to taste
2 cups beef broth
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup red wine
1 onion, sliced
1 (16 ounce) package baby carrots
3 potatoes, quartered, or more to taste

Steps:

  • Scatter sliced onion in the bottom of a slow cooker, then alternately layer carrots and potatoes.
  • Heat oil in a large skillet over medium heat and season London broil with Creole seasoning. Sear beef in hot oil until well browned, 3 to 5 minutes per side. Transfer meat the slow cooker.
  • Pour beef broth, cream of mushroom soup, and red wine into the skillet used to cook the beef and bring to a simmer. Scrape any brown bits from the bottom of the skillet with a spatula. Pour broth mixture over beef.
  • Cook on Low for 8 to 10 hours or cook on High for 6 hours.

1/2 cup water
1/4 cup red wine vinegar
2 tablespoons canola oil
1 tablespoon tomato paste
1-1/2 teaspoons garlic salt, divided
1 teaspoon dried thyme, divided
1/2 teaspoon pepper, divided
1 bay leaf
1 beef flank steak (1-1/2 pounds)

Steps:

  • In a small bowl, whisk the water, vinegar, oil, tomato paste, 1 teaspoon garlic salt, 1/2 teaspoon thyme and 1/4 teaspoon pepper; add bay leaf. Pour into a shallow dish. , Score the surface of the steak, making diamond shapes 1/4 in. deep; add to marinade and turn to coat; cover and refrigerate for 3 hours or overnight, turning occasionally., Drain and discard marinade. Pat steak dry with paper towels. Combine the remaining garlic salt, thyme and pepper; rub over both sides of steak., On a lightly oiled grill rack, grill steak, covered, over medium-hot heat or broil 4 in. from the grill for 6-8 minutes on each side or until the meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes. Thinly slice across the grain.

5 lbs beef brisket, trimmed (not corned beef)
1 teaspoon lemon pepper
3 tablespoons lemons, rind of, grated
1 1/2 tablespoons gingerroot, grated

1 quart beef broth (just enough to cover the roast) or 1 quart water (just enough to cover the roast)

2 lb London broil
1 pkg ranch style dressing mix
1 pkg au jus gravy mix
6 medium pepperoncini peppers
1/2 stick butter, cut up
8 medium red potatoes, whole

Steps:

  • 1. Spray bottom and sides of a 6 quart oval Crock Pot with cooking spray to make clean up easier.
  • 2. Place London broil in the bottom of Crock Pot.
  • 3. Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top.
  • 4. Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.
  • 5. Remove stems and place the pepperoncini on top of the powdered mixes.
  • 6. Add the cut up butter to the top of the mixes.
  • 7. Add the potatoes around the outer edge of the meat. They do not have to sit on the bottom. DO NOT ADD ANY LIQUID!!!!
  • 8. Cover and cook for 4 hours on high or 8 hours on low.
  • 9. Remove potatoes. Cut meat into serving pieces and stir into sauce in bottom of Crock Pot. Return potatoes to pot. Serve
