2 cups long grain rice
3 1/2 cups low-sodium chicken broth
1 pound ground beef (80/20 blend)
1/4 cup diced Maui onion
Kosher salt and freshly cracked black pepper
Canola oil
1 tablespoon unsalted butter
1/4 cup roughly chopped cremini mushrooms
1/4 cup diced Maui onion
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch
Canola oil
4 large eggs
2 to 3 tablespoons chopped fresh flat-leaf parsley, for garnish, optional
1/4 cup seeded and diced Roma tomato, for garnish, optional

Steps:

  • For the rice: Wash the rice under cold running water until the water runs clear. In a medium saucepot over high heat, bring the chicken broth to boil. Add the rice, cover and reduce the heat to low for about 15 minutes. Remove from the heat and let stand for 5 minutes. (Alternatively, add both the rinsed rice and the chicken broth to a rice cooker and turn the machine on - it will keep the rice warm until ready to serve.) Fluff with a fork and cover. Keep warm until ready for use.
  • For the burgers: Mix the ground beef, onions and some salt and pepper in a large mixing bowl. Form 4 medium patties and set aside.
  • Set a large cast-iron pan over high heat. Add a drizzle of canola oil and set the patties in the pan. Cover pan with a lid (or a second pan) to seal in the moisture and ensure juicy patties. Cook until well browned on first side, 3 to 4 minutes. Then remove the lid, flip over, replace the lid and continue cooking to desired doneness, about 3 minutes for medium-rare. Remove the burgers and keep warm.
  • For the gravy: Add the butter to the pan with the drippings. Saute the mushrooms and onions until golden brown, about 5 minutes. Add the beef broth and Worcestershire sauce, bring to a boil and reduce down for 2 to 3 minutes.
  • In a separate bowl, mix the cornstarch with 1 tablespoons water to make a smooth paste. Slowly add into the gravy, stirring constantly until thickened. Season with salt and pepper. Cover and keep warm until ready for use.
  • For the eggs: Add some canola oil to a nonstick saute pan over medium heat. Crack in the eggs and cook sunny-side up, 3 to 4 minutes. Remove and keep warm. (You can flip the eggs over-easy if you want them cooked a little more.)
  • To serve: Place the cooked rice on a plate, place the burgers on top, then the eggs and finally the gravy. Garnish with parsley and tomato if desired.

1/2 cup panko bread crumbs
1/2 cup sweet onion (, minced)
1 egg (, beaten)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
vegetable oil (, for frying)
1 1/2 cup beef broth
2 tablespoons all-purpose flour
2 tablespoons butter
2 dashes Worcestershire sauce
salt and pepper (, to taste)
2 cups cooked white rice (, hot or warm)
4 eggs (, cooked sunny side up)

Steps:

  • The patties. Combine all the ingredients together and make 4 patties. Heat the oil in a skillet an fry the patties until desired doneness. I did like 4 minutes per side. Transfer to a plate.
  • The gravy. Use the same skillet you used for cooking the patties. Scrape up the browned bits of the meat. Melt the butter. Whisk in the flour and continue whisking until you get a light-brown paste. Slowly pour in the broth, whisking continually until the flour is combined with the broth. Bring to a boil, reduce to simmer, add the Worcestershire sauce and cook for 5 minutes more. Season to taste.
  • The assembly. Serve the patties over the cooked rice and top each patty with the fried egg. Pour the gravy over the top and enjoy!

1 pinch cayenne pepper
1 ½ cups beef stock

Steps:

  • Season patties with salt, pepper, and cayenne.

  • Melt butter in a skillet over medium-high heat. Cook patty in the hot skillet until a browned crust forms on the bottom, about 5 minutes. I ate this at a sports bar/cafe on the big island of Hawaii. This is a local dish served many ways, but this version is my favorite. They usually make it with SPAM®. Also you can make this using leftover rice, pre-cooked burgers, and jarred sauce.

1 pound ground beef chuck
1 cup sliced onion
½ cup water
1 cup sliced mushrooms
1 (12 ounce) jar brown gravy (such as Heinz®)
4 eggs
4 cups cooked rice

Steps:

  • Prepare a large skillet with cooking spray and heat over medium heat.
  • Divide ground chuck into 4 equal portions; form into patties.
  • Fry patties in skillet until beginning to firm and are hot and slightly pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove patties to a plate, retaining drippings in the skillet.
  • Stir onion and water into the reserved drippings. Reduce heat to low and cook until the onions are slightly softened, about 5 minutes. Stir mushrooms into the onion mixture; cook until mushrooms are cooked through, about 5 minutes more.
  • Pour gravy over the onion and mushroom mixture; stir. Cook until the gravy is hot, about 5 minutes. Gently lie patties into the gravy; simmer until reheated through.
  • While the patties simmer in gravy, prepare a separate skillet with cooking spray and heat over medium heat. Fry eggs in the hot skillet until the white is opaque but the yolk remains runny, 2 to 3 minutes.
  • Divide rice between 4 plates. Top each rice portion with a beef patty and top the patties each with an egg. Pour gravy equally over each portion.

Loco Moco is a traditional meal found in many fast food restaurants in Hawai'i, especially local places such as Zippy's and L&L Hawaiian BBQ. This recipe is really pretty simple, consisting of only 4 essential items: rice, a hamburger patty, an egg, and brown gravy. I was stationed in Hawai'i for 4 years during my time in the Navy, and I had more than my share of Loco Moco. This is definitely my favorite Hawaiian plate lunch. Although it's much better to get this to go and enjoy it on a beautiful Hawaiian beach, it's nice to have a little bit of Hawaiiana here in Ohio.

3 tbsp butter
3 tbsp flour
1 tsp Worcestershire Sauce
2 cups beef broth
salt and pepper (to taste)
1 lb ground beef
1/2 cup grated onions (optional)

  • Melt butter in saucepan over medium heat.
  • Add flour; stir until mixture becomes a dark brown color, 6 to 8 minutes.
  • Pour in Worcestershire sauce; stir.

1/2 peeled small diced sweet onion
2 finely minced cloves of garlic
2 pounds 80/20 ground beef
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
2 tablespoons oil
8 ounces sliced cremini mushrooms
3 tablespoons all-purpose flour
2 cups beef stock
5 eggs
5 cups cooked jasmine rice
¼ cups sliced green onions
sea salt and fresh cracked pepper to taste

Steps:

  • Add the onion, garlic, beef, 1 tablespoon of soy sauce, and Worcestershire sauce to a large bowl and mix until completely combined. Form into 5 patties and season on both sides with salt and pepper and set on a plate.
  • Add the oil to a very large frying pan over medium heat and once it begins to lightly smoke add the hamburger patties in and cook for 3-4 minutes per side or until well browned on each side. See doneness note.
  • Set the hamburger aside and drain off ½ of the oil used to cook the ground beef into a small frying pan and set the small pan aside.
  • In the large frying pan over medium heat add in the mushrooms and cook for 3 to 4 minutes or until lightly browned.
  • Add in the flour and stir it in until it is completely combined,
  • Pour in the beef stock, remaining 1 tablespoon of soy sauce, and cook for 3-4 more minutes over medium heat until it becomes thick like gravy.
  • Add back in the cooked meat patties and simmer over low heat.
  • Fry the eggs 1 at a time in the small frying pan in the rendered meat fat over medium heat for 30 seconds for a sunny-side-up egg.
  • Serve the beef patties and mushroom sauce over top of the cooked jasmine rice and top off with the fried egg and garnish with sliced green onions.

6 pieces Beef Patties 6 oz. each ( Salt, Pepper and Garlic Powder to taste)
3 cups Water
3 tbsp Mushroom Seasoning
2 tbsp Sugar
2 tbsp Ketchup
2 tsp Fish Sauce
4 tbsp Light Soy Sauce
2 tbsp Corn Starch
2 pieces Shallots-medium size (diced into small cubes)
6-8 pieces Mushrooms (more or less to your liking)
6 pieces Fried Eggs ( Salt and Pepper to taste)

Steps:

  • Season ground beef patties with salt, pepper and garlic powder to your liking.
  • Slice mushrooms and dice shallots.
  • Mix water with mushroom seasoning, sugar, ketchup, fish sauce and light soy sauce. Whisk and then add corn starch and whisk thoroughly and set aside.
  • Fry up the beef patties. I like to fry mine on medium to medium-high heat to give the outside a nice crust and the inside stays medium to medium rare. This should take about 3-4 minutes each side.
  • Set fried patties aside. Drain off some of the oil from the pan.
  • Use the same pan to Sauté the shallots. Sauté for 2-3 minutes.
  • Add the mushrooms and Sauté for another 2-3 minutes.
  • Whisk your sauce thoroughly to make sure the corn starch is not stuck to the bottom of the bowl. Add the sauce to the shallots and the mushrooms. Cook gravy for 3-4 minutes until it has a nice thick consistency. Once done, set aside.
  • Fry the eggs sunny side up.
  • Start the plating with Jasmine rice. Then put a beef patty on top followed by a fried egg. Then pour a generous amount of the mushroom gravy over the entire plate. The gravy is what makes this dish absolutely delicious in my opinion.

4 cups steamed rice (2 cups rice + 1 3/4 - 2 cups water)
2 Tablespoons olive oil (divided)
1 cup sliced yellow onion (Maui onion if you can find one )
2 cloves garlic (pressed or minced)
1 pound 80/20 ground Angus beef (formed into patties)
sea salt and ground black pepper
1 1/2 cups bone broth or beef stock
2 Tablespoons soy sauce (shoyu/tamari or coconut aminos)
1 Tablespoon fish sauce (substitute Worcestershire sauce)
2 Tablespoons cornstarch (see substitutions below)
4 large eggs
2 teaspoons olive oil

Steps:

  • Steam your rice on the stove, in a rice cooker, or in your Instant Pot. Substitute Cauliflower Rice for Whole30, Paleo or Keto.
  • Heat one Tablespoon of oil in a large skillet over medium heat. Add the onion slices and cook for 5 to 7 minutes, until almost translucent. Reduce heat to low, and continue cooking for an additional 10 minutes, stirring occasionally until golden brown and caramelized.
  • Add the garlic and cook for one minute, just until fragrant. Remove from skillet and place in a bowl.
  • Pour one more Tablespoon of oil into the skillet. Season the ground beef patties with salt and pepper, then place in the hot skillet. Cook until browned and cooked through, about 5 minutes per side depending on thickness. Remove the patties to a plate to rest and cover with foil.
  • Place the onions back into the skillet and add the soy sauce (coconut aminos), fish sauce, beef stock to the skillet and bring almost to a boil. Reduce heat to medium-low. Scoop out two Tablespoons of the hot liquid from the skillet and mix it with the cornstarch (arrowroot/glucomannan/xanthan gum) in a small bowl.
  • Whisk the cornstarch mixture into the skillet. Continue to simmer until gravy thickens, about 5 or 6 minutes.
  • Heat two teaspoons of oil in a non-stick skillet over medium-high heat. Add eggs and cook undisturbed for 3 to 4 minutes, until the white is cooked through the the yolk is still loose.
  • Place one cup of rice on each plate and top with a burger patty. Ladle the gravy over the patty, top with an egg and garnish with green onions.

1/2 medium sized sweet onion (optional
3/4 cup sliced mushroom (optional)
green onions (for garnishing)
cooked rice
1 1/2 lb ground beef
1 tbsp Worcestershire sauce
1 1/2 tsp seasoning salt
1 tsp garlic powder
1/2 tsp black pepper
1 1/2 cup beef stock
4 tsp shoyu (soy sauce)
1 tsp Worcestershire sauce
2 tsp ketchup
5 tsp cornstarch

Steps:

  • Mix together the ground beef, Worcestershire sauce, seasoning salt, garlic powder, and black pepper in a large bowl.
  • Start forming it into patties by grabbing a handful of meat and rolling it into a ball. Then press down to flatten it out. Smooth the edges so there isn't any cracks or jagged edges. Patties should come out to at least one inch thick. Try to keep the patties large since it will shrink when fried.
  • Heat a pan over medium heat. Fry each side of the patties for about 3-5 minutes or until well done.
  • Set each finished patty on a plate lined with paper towel to catch any extra grease.
  • Mix together the beef stock, shoyu, Worcestershire sauce, ketchup, and cornstarch. Whisk it until the cornstarch has come off of the bottom.
  • Using the same pan, melt one tablespoon of the butter to caramelize the onions for about a minute then fry the mushrooms for another minute or two. (It is optional to add the mushrooms and onions. If not, just skip to the next step.)
  • Melt the rest of the butter and add in the gravy mix to the pan. Keep stirring the gravy until it begins to thicken and simmer.
  • Melt a slice of butter and crack an egg on a frying pan.
  • Cook a sunny side up egg. (You can switch it up to your preference) Set aside
  • Scoop a generous serving of hot white rice on a plate. Layer it with one hamburger patty then drizzle on the gravy. Top it with the egg and garnish with green onions.
  • Serve it hot and enjoy!

  • While the burgers are cooking prepare the gravy. Melt the butter in a large pan over medium heat. Add the flour and cook for 30 seconds, stirring. Add the broth and soy sauce and cook, stirring occasionally until the gravy thickens. Remove from heat and set aside.
  • Brush the top of a pan with some butter and fry the eggs for around 2 minutes or until done but still runny.
  • Assemble the Loco Moco: Make a bed of rice. Top with the hamburger patty and drizzle the gravy on top. Finish with the sunny side up fried egg.
