Steps:
- Bring in a pan 3 l of lightly salted water to boil over high heat. Drop string beans and bring back to a boil. Lower the heat and cook for 10 minutes, until the beans are tender. Drain the beans, wash them under cold water. Melt the butter in a heavy skillet set over high heat. Add the onions and green pepper, lower the heat and cook for 10 minutes, or until the vegetables are tender. Stir in the tomatoes and basil, raise the heat to high, and boil rapidly for 1-2 minutes, until most of the juices in the pan have evaporated.
- Stir in the green beans and simmer until heated through.
- In a mixing bowl, beat together the egg, sour cream, salt and a few grindings of black pepper. Stir in the vegetables. Serve at once.

LIBBY'S GREEN BEANS
My mother-in-law's recipe. It has sour cream and Velveeta cheese in it. It's pretty good. You can use canned or fresh beans for this. Of course if you make it using canned beans, it will not take NEAR as long, lol.

Steps:
- Cut green beans into small pieces. Cook beans until tender. If using canned green beans, bring them to a boil with their liquid.
- Mix the flour into the sour cream until smooth.
- Add the Velveeta cheese.
- Add to the beans, stirring constantly, until thickened.

ANYTIME SOUR CREAM GREEN BEANS
This has been a holiday staple since I was small. It is unbelievably wonderful! Never tried the regular green bean casserole because we had this. We look forward to this MORE than the main dish. Please don't let the sour cream keep you from trying this. You will not be disappointed!

Steps:
- 1. Put undrained cut or french cut green beans in a pot. Heat slowly.
- 2. Chop bacon and put in frying pan. Saute to crisp or soft..they both work for this. Add chopped onions and saute until just clear.
- 3. Drain green beans and put back in pan. Add bacon and onions. Stir over low heat to keep green beans warm. Add sour cream, salt and pepper. Stir over low heat until sour cream is just heated through. Very low temp works because high heat will cause the sour cream to separate. Enjoy!!

- Drain beans and save liquid.
- Brown onion in butter. Blend in flour. Add liquid from beans and cook until thick, stirring constantly.
- Add salt, pepper, vinegar, sugar and sour cream.
- Add beans and heat thoroughly. Serve immediately, garnished with chopped parsley.

STRING/GREEN BEANS IN CHUNKY TOMATO SAUCE
This is a recipe from Lidia's Italian American Kithchen. The traditional beans used in this recipe are the Italian string beans - the flat wide ones. Due to the acidity of the tomato sauce they will turn olive green in the cooking process. This recipe is posted by request. I haven't tried it yet.

Steps:
- Heat olive oil in large, heavy skillet over medium heat.
- Smash the cloves of garlic and toss them into the pan.
- Cook, shaking the pan, until lightly browned, about 2 minutes.
- Scatter the beans over the oil, season them lightly with salt and red pepper, and turn with tongs until they begin to wilt, about 3 minutes.
- Meanwhile, crush the tomatoes coarsely with your hands and add them to the beans.
- Cover the pan, cook until the beans are tender- about 10 minutes.
- Taste and adjust seasoning to your liking, and serve hot.

- Bring about 2 cm of lightly salted water to the boil in a medium-size saucepan. Add the trimmed beans and cook, covered, for 8 minutes or until crisp-tender. Drain in a colander.
- In the same saucepan, melt the butter and cook the onion over low heat for one minute.
- Return the beans to the saucepan, add the sour cream and paprika, and stir together. Heat the mixture gently. but do not let it boil or the sauce will curdle.
- Serve!

HELEN'S CREAMY GARLIC STRING / GREEN BEANS
This is so easy! The kids will thank you for it. I haven't met one yet that has turned this dish away. This is a family favorite amongst everyone. Enjoy!

Steps:
- In a pan put your string beans and potatoes.
- Pour enough water to go up about 1/2 way.
- Add salt.
- Cover.
- And bring to a boil.
- Cook until potatoes and beans are tender.
- Drain water into a large measuring cup.
- Take a small iron skillet, melt butter, add enough flour to make a roux to thicken the beans with.
- When the roux is a good golden color add the garlic and saute but do not brown the garlic.
- Add some of the bean/potato liquid to the roux and stir constently until you get the consistency of sauce you would like for your beans.
- Before you add the sauce, use your wooden spoon.
- With the back of the spoon mash a few of the potatoes so they will blend with the sauce, but leave others whole.
- Mix everything together and cook just a few moments until the beans and potatoes have taken on a little of the flavor of the sauce.
- Taste to make sure there is enough salt.
- If not this is the time to add it.
- Last but not least just before serving stir in 1 Tblsp. sour cream.
