CHICKEN TETRAZZINI

9 tablespoons butter
2 tablespoons olive oil
4 boneless skinless chicken breasts
2 1/4 teaspoons salt
1 1/4 teaspoons freshly ground black pepper
1 pound white mushrooms, sliced
1 large onion, finely chopped
5 cloves garlic, minced
1 tablespoon chopped fresh thyme leaves
1/2 cup dry white wine
1/3 cup all-purpose flour
4 cups whole milk, room temperature
1 cup heavy whipping cream, room temperature
1 cup chicken broth
1/8 teaspoon ground nutmeg
12 ounces linguine
3/4 cup frozen peas
1/4 cup chopped fresh Italian parsley leaves
1 cup grated Parmesan
1/4 cup dried Italian-style breadcrumbs

Steps:

  • Preheat the oven to 450 degrees F.
  • Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish. Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper. Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side. Transfer the chicken to a plate to cool slightly. Coarsely shred the chicken into bite-size pieces and into a large bowl.
  • Meanwhile, add 1 tablespoon each of butter and oil to the same pan. Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes. Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes. Add the wine and simmer until it evaporates, about 2 minutes. Transfer the mushroom mixture to the bowl with the chicken.
  • Melt 3 more tablespoons butter in the same pan over medium-low heat. Add the flour and whisk for 2 minutes. Whisk in the milk, cream, broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper. Increase the heat to high. Cover and bring to a boil. Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
  • Bring a large pot of salted water to a boil. Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain. Add the linguine, sauce, peas, and parsley to the chicken mixture. Toss until the sauce coats the pasta and the mixture is well blended.
  • Transfer the pasta mixture to the prepared baking dish. Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter. Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes.

4 lbs lobster meat
to taste lobster coral
2 cups water (reduced from lobster)
1/2 lb mushroom
3 tablespoons butter
2 tablespoons flour
3 tablespoons butter
1 cup heavy cream
3 tablespoons sherry wine
1 pinch nutmeg
1/2 cup truffle, diced
1/2 lb spaghetti, cooked

Steps:

  • Cut the meat from 4 pounds boiled lobster into strips, reserving any coral.
  • Simmer the water the lobster was cooked in until it is reduced to 2 cups and reserve it. Saute 1/2 pounds mushrooms thinly sliced in 3 tablespoons butter until they are soft and lightly browned and reserve them.
  • In a saucepan melt 3 tablespoons butter, stir in 2 tablespoons flour and cook (the roux), stirring for a few minutes.
  • Add the lobster coral and stir in gradually the reserved cooking liquid.
  • Cook the sauce, stirring, until it is smooth and thick.
  • Then stir in 1 cup heavy cream and 3 tablespoons of sherry.
  • Add a pinch of nutmeg and salt and pepper to taste. Simmer the sauce for 10 minutes.
  • Add the lobster meat, the mushrooms and 1/2 cup diced truffles.
  • Arrange 1/2 pound hot cooked spaghetti in coils on platter.
  • Make a well in center of the spaghetti and pour in the lobster sauce.

3 tablespoons extra-virgin olive oil
2 slices bacon, chopped
3 shallots, minced
2 cloves garlic, chopped
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
2 cups tomato puree
1/4 cup cream
1 pound linguine
1/4 cup freshly grated Parmesan, plus more for serving
1 cup baby arugula, roughly chopped
1/2 cup fresh basil leaves, roughly chopped
1/4 cup fresh tarragon leaves, roughly chopped
1 cup frozen peas, thawed
Two 1 1/2-pound lobsters, steamed, meat removed

Steps:

  • Heat a large straight-sided skillet over medium heat. Add the olive oil and bacon and cook until the bacon is beginning to crisp, 8 minutes. Add the shallots, garlic and red pepper flakes and cook for an additional 3 minutes, until fragrant. Add the salt, tomato puree and cream; stir to combine. Reduce the heat to low and simmer for 5 minutes.
  • Bring a large pot of salted water to a boil. Cook the linguine for 1 minute less than the package instructions, about 10 minutes. Using tongs, remove the pasta from the water and add it directly to the pan with the sauce. Sprinkle the cheese directly on the naked pasta and toss to coat in sauce. Add up to 1 cup of the pasta water to loosen the sauce as needed. Stir in the arugula, basil, tarragon, peas and lobster meat; simmer until everything is heated through, 1 minute. Serve with additional Parmesan if desired.

4 slices meat (or more)
4 ounces vermicelli, dry and cooked (you can use spaghetti, I like it thin as possible)
2 tablespoons butter
1/4 cup mushroom, sliced
1 pinch nutmeg
1 tablespoon sherry wine
salt
1/3 cup parmesan cheese, grated (or Romano)

Steps:

  • Preheat oven to 400F.
  • Have your meat, vermicelli and sauce at the ready.
  • Melt butter and add mushrooms. Cook 5 minutes and season with nutmeg, sherry and salt.
  • Put vermicelli in a shallow baking dish. Pour half the sauce over it.
  • Arrange the mushrooms and meat on top. Cover the the rest of the sauce and sprinkle with the cheese.

1/2 cup butter or 1/2 cup margarine
3/4 cup chopped onion
3/4 cup chopped green pepper
1 (6 ounce) can mushrooms, drain and save juice
1/2 cup flour
2 teaspoons salt
1/4 teaspoon pepper
1 (10 1/2 ounce) can cream of shrimp soup
3 cups milk
1 1/2 cups shredded sharp cheddar cheese
1 tablespoon lemon juice
1 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 lb cooked lobster meat
1 lb cooked shrimp
1/2 lb cooked crabmeat, picked over for cartilage
1 lb thin spaghetti, broken in half
1/3 cup grated parmesan cheese

Steps:

  • In a 3-quart saucepan, melt butter or margarine; add onion, green pepper and mushrooms. Cook over medium heat until onion is soft; stir in flour, salt and pepper.
  • Add cream of shrimp soup and then add milk gradually; cook stirring constantly until thickened.
  • Stir in cheese, lemon juice, mustard, Worcestershire sauce and liquid from mushrooms; cook until cheese melts.
  • Break lobster and crab into pieces. Add lobster, crab and shrimp to sauce.
  • Meanwhile, cook spaghetti according to package directions and drain.
  • Pour cooked pasta into a shallow ovenproof casserole dish that has been sprayed with cooking spray.
  • Pour seafood mixture over pasta. Sprinkle with Parmesan cheese.
  • Bake at 350° 15 minutes, then put under the broiler until the cheese browns slightly.
