SAUSAGE-STUFFED PORTOBELLO MUSHROOMS
Steps:
- Preheat the oven to 400 degrees F.
- Using your hands, lightly rub each portobello mushroom with 2 teaspoons of olive oil.
- Cook the sausage in a medium skillet until browned, about 4 minutes. Add the onion, bell pepper, celery, and mushroom stems and cook until softened, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds. Remove from heat.
- Transfer sausage-vegetable mixture to the bowl of a food processor. Add, 1/4 cup of the bread crumbs, 1/4 cup of Parmesan, 1/4 cup of parsley, the Essence, and the remaining 2 teaspoons of olive oil. Pulse until mixture is finely chopped and comes together slightly, about 30 seconds. Transfer the mixture to a bowl, add the egg, and stir until well combined.
- Divide the filling among the mushroom caps, about 1/2 cup for each mushroom. Place the filled mushrooms on a baking sheet. Combine remaining 1/4 cup of bread crumbs and 1/4 cup of Parmesan in a small mixing bowl. Divide the bread crumb mixture evenly among the tops of the mushrooms. Bake until golden brown on top and the mushrooms are tender, about 15 to 18 minutes. Remove from oven and let cool slightly. Garnish with remaining tablespoon of parsley, drizzle with olive oil and vinegar and serve warm or at room temperature.

- Preheat the oven to 375 degrees F (190 degrees C). Brush a large baking sheet with about 1/4 cup of melted butter. Arrange mushroom caps in a single layer over the baking sheet.

- Preheat the broiler, setting the temperature on high. Set an oven rack in the middle of the oven (this will prevent the mushrooms from scorching under the broiler). Line a broiler-safe rimmed baking sheet with foil.
- Use damp paper towels to gently wipe the mushrooms clean. Gently twist the stems off. Spray the mushrooms with olive oil on both sides. Broil in the middle of the oven until just tender, 2-3 minutes per side. Drain on paper towels.
- Transfer the crabmeat to a medium bowl, feeling through the meat to make sure no shell pieces remain. If using jumbo lump crabmeat (which comes in larger pieces than lump crabmeat), use a fork to break the lumps into smaller pieces.
- Add the remaining ingredients except for the paprika and mix well with a rubber spatula until fully combined.
- Spoon the crab mixture into the mushrooms, dividing it evenly. Each mushroom should hold about 2 tablespoons of filling. Pack the filling into the mushrooms and pile it high if needed. Sprinkle the stuffed mushrooms with paprika.
- Arrange the mushrooms, filling side up, back on the baking sheet (you might need to use a clean new sheet of foil). Lightly spray them with olive oil.
- Broil the mushrooms briefly, just until the filling is warm and golden, for about 3 minutes. Serve immediately.

- Filling ... Add the butter to a saute pan on medium high heat. Add the celery, garlic, scallions and pimento and cook 2 minutes; then add in the Old Bay seasoning, parsley, salt and pepper; stir and immediately remove from the heat and transfer to a bowl.
- Bread Crumbs ... In a small bowl add the milk and buttermilk and dip the bread slices, soak just a couple of seconds and then squeeze dry. Crumble up the bread slices as you add them to the vegetable mix. Add in the egg, parmesan and monterey jack cheese and mix well. And finish the filling by adding the lobster and gently toss so you don't break up the lobster too much. Note: I can get my lobster steamed right from my local grocery store or butcher.
- Mushrooms ... Brush the outside of each mushroom with a little olive oil, you can also use a spray which is easier if you have it. This just allows them to really brown up during baking. Stuff the mushroom as much as you can and pile them high. Mix the parmesan and monterey jack cheese together and top each of the mushrooms.
- Bake ... Butter a casserole dish and add the mushrooms. Bake at 400 degrees on the middle shelf for 15-20 minutes until the mushrooms are tender and the cheese is golden brown and bubbly. Transfer to the broiler if you want the tops a bit more brown - this is what I like to do. It only takes a few minutes to brown the tops.
