CHUNKY LOBSTER STEW

- 1. Blanch the lobsters for 4 minutes in a large pot of boiling fresh sea water or salted water. Remove from water, punch a little hole in the top of each head and allow to drain. Break off the claws and the tail. Remove the tomalley from the body and set aside in the refrigerator. Shuck the meat, chop into large bite-size pieces and set aside in the refrigerator. Be sure to remove intestinal tracts from the tails.
- 2. Place all the shell and bodies in a large saucepan and barely cover with water (about 2 1/2 quarts). Add the onion and bay leaves. Bring to a boil, skim, and reduce to simmer.
- 3. Peel and seed the tomatoes. Put the seeds and juice into the lobster stock and cut the tomato into medium dice; set aside. Pick the chervil off the stems. Add the stems to the stock and coarsely chop the chervil leaves; set aside.
- 4. After the stock has simmered for about 1 hour, add the heavy cream; simmer about 20 minutes more.
- 5. Simmer the leeks and carrots in butter in a soup pot until they begin to get tender (about 5 minutes). Now add the tomatoes and lobster meat and simmer 2 or 3 minutes more. Strain the creamy lobster stock into the soup pot (you should have about 6 cups of liquid). Season to taste with salt, pepper and cayenne pepper and sprinkle with chervil. Serve with tomalley croutons.
RHODE ISLAND LOBSTER STEW

- In a deep pot over medium-high flame, heat the olive oil for 1 minute. Add hot pepper and garlic. Cook until the pepper and garlic turn black, about 2 to 3 minutes.
- Add the leeks and onions and cook for 3 minutes, stirring occasionally. Add the tomatoes, sweet potatoes and 2 cups of the wine. Cook, stirring occasionally, for 4 minutes.
- Add the lobsters, cover pot, and cook until the lobsters turn pinkish, about 5 minutes. Add the remaining cup of wine to the pot and cook, covered, for 5 more minutes.
- Remove the lobsters and set aside until cool enough to handle. When cooled, crack the claw shells and the body shell. Return to the pot for 5 more minutes.
- Transfer the lobsters to a baking sheet with sides. Break off the claws of the lobsters; remove the meat from the body and cut it into bite-size pieces. Return any lobster juices on the sheet to the pot. In large plates or shallow soup bowls, spoon some vegetable mixture over the bottom and place a lobster claw and some body meat on top.
LOBSTER STEW

- Fill a large pot with water to come finger deep. Bring to a boil, put the lobsters in head first, and steam 4 minutes. Drain and rinse under cold water until cool enough to work with. Shell the lobsters, wrapping the meat and refrigerating until ready to use (you should have 4 intact claws and 2 tails which you can halve lengthwise). Reserve 12 lobster legs. Reserve the shells, but discard the body. Chop the shells to pieces with a mallet or in the food processor.
- Heat 1 1/2 tablespoons butter in a large saute pan and cook the onion until soft. Stir in the tomato paste and add the lobster shells. Pour over the Cognac and flame. When the flames have died down, pour over 3 cups/750 ml water, and cook until the liquid is reduced to 1 1/2 cups/375 ml. Strain, pressing down on the shells to extract all the juices. Return the juices to the saute pan.
- While the sauce is reducing, cook the vegetables, separately, in a pot of boiling salted water until al dente, 30 seconds to 2 minutes, depending on the vegetable. When each is done, lift to a strainer with a slotted spoon and immediately plunge into an ice bath to preserve the color.
- Bring the lobster stock in the saute pan to a simmer, uncovered. Add the lobster and poach gently 3 minutes. Add the vegetables and continue to cook 2 minutes. Arrange half a tail and a whole claw in each of 4 soup plates. Divide the vegetables evenly around the meat. You should have about 1/4 cup/60 ml sauce per dish, so if you have too much boil it down, whisking in the remaining butter at the end. Taste and season with salt, pepper, and lemon juice. Ladle over the lobster and vegetables, scatter over chervil, and serve.
LOBSTER LOVAGE STEW

- In a 10- to 12-quart kettle bring 8 quarts water and 1 1/2 cups wine to a boil. Plunge lobsters into liquid headfirst and return liquid to a boil. Simmer lobsters, covered, 12 minutes. Have ready a bowl of ice and cold water. With tongs plunge lobsters immediately into bowl of ice water to stop cooking and reserve cooking liquid.
- Working over a bowl to catch juices, twist off tails and claws and reserve juices. Discard head sacs. Reserve tomalley and any roe if desired and remove meat from tails and claws, reserving shells. Cut meat into bite-size pieces and chill, covered, in a bowl.
- Chop 2 carrots and add to reserved cooking liquid with reserved lobster juices, reserved tomalley and roe if using, reserved shells, onions, 1/2 cup lovage or celery leaves, bay leaves, thyme, parsley, and peppercorns. Simmer stock gently, uncovered, skimming froth occasionally, 1 1/4 hours.
- Pour stock through a large sieve into a large bowl and transfer to cleaned kettle. Boil stock until reduced to about 7 cups and return to bowl.
- Finely chop remaining 2 carrots and in a 5- to 6-quart kettle cook with shallot in butter over moderately low heat, stirring occasionally, until crisp-tender. Sprinkle flour over mixture and cook, stirring, 3 minutes, but do not brown vegetables. Add remaining 1/2 cup wine and boil, stirring, until most of wine is evaporated. Add tomatoes and stock and simmer, covered, 10 minutes. Stir in cream and salt and pepper to taste and cook stew, stirring occasionally, until heated through. Stew and lobster meat may be prepared 2 days ahead and chilled, covered. Reheat stew before proceeding.
- Finely chop remaining 1/2 cup lovage or celery leaves and stir into stew with lobster meat. Cook stew, stirring, until just heated through.
LOBSTER STEW WITH ROASTED RED PEPPER POTATO CAKES

- Place the potatoes in very salty water and bring to a boil. Cook until soft and tender, 25 to 30 minutes.
- While the potatoes are cooking, start the stew. In a pot over medium-high heat, add the olive oil, carrots, corn and onions and saute until the vegetables begin to sweat, 5 to 7 minutes. Add the crushed tomatoes, stock, tomato paste and garlic. Turn down the heat and simmer until the vegetables are cooked, about 15 minutes. Season with salt and pepper and fold in the lobster and cilantro. Remove from the heat, cover and set aside. Strain the potatoes and mash. Mix in the sour cream, roasted red pepper, dill, parsley and tarragon. Season with salt and pepper. Chill in the refrigerator at least 30 minutes.
- To form the cakes, grab a ball of the cooled potato mixture and pat into a 1-inch thick disc, about 3 inches in diameter. In a nonstick saute pan, heat the olive oil over medium-high heat. Fry the cakes until crispy and golden brown, about 3 minutes per side. Heat up the stew and serve with a potato cake on the side.
