BUTTER POACHED LOBSTER SHOOTERS

Steps:
- Reserve 1 cup of clarified butter and try to keep warm.
- Place lobster tails in a large pot and cover with the remaining butter. Add 3 cloves of garlic to the pot. Poach on a low heat until the lobster shell changes color and meat is cooked. Allow to cool slightly and harvest meat from tails. Chop meat into bite-size pieces.
- While meat is still warm, assemble the shooters. In shot glass pour a bit of the reserved warm butter into each glass. Top with lobster meat and drizzle with a bit of the lemon juice.

- In a medium saucepan, sauté in sesame oil the garlic, shallots, lemongrass and ginger until slightly browned. Remove from heat and transfer to mixing bowl. Fold in the lobster meat, soy sauce, sambal, scallions, mint and basil.
- Lay out dumpling wrappers evenly on a flat surface, then brush a thin layer of egg on each wrapper. Place a small amount of the mixture in the center of the wrapper. Fold the edges of the wrappers up around the mixture and squeeze the edges to seal the dumpling. Deep fry dumplings in 350°F peanut oil until golden brown.

- In a small saucepan, add sesame oil and lightly saute the garlic, shallots, ginger, and lemongrass until translucent; do not brown. Add in kaffir lime leaves, cover with rice vinegar and mirin, and continue cooking, until liquid is reduced by half.
- Stir in red curry paste and coconut milk and bring to a boil. Thicken to sauce consistency with cornstarch mixture. Steep in cilantro and add lime juice. Strain through a fine seive.

- Keep the lobsters refrigerated until they are ready to be cooked. When it's time to cook, bring 2 to 3 quarts of water to a rolling boil in a large covered stock pot (it should be about 3 inches of water). Rinse the lobsters thoroughly, and remove the rubber bands around the claws.
- Place both lobsters in the pot, with tails curled, belly side down. The lobsters should be sitting upright in the pot when you place them, and they should not be fully submerged in water. The lobsters should be placed quickly in the pot, which should then be covered immediately. After 11 minutes, carefully remove the cover and verify that the lobsters are bright red. There should not be any dark spots on the shells; if there are, that means the lobsters aren’t yet cooked through.
- Remove the lobsters from the pot with a pair for tongs, and place them into your sink. Give them a good rinse with water to help them cool down and to stop the cooking process.
- Prepare a large bowl of water, which you’ll need to rinse the lobster after you extract the meat. Next, transfer the lobsters one at a time to the cutting board. Extract the meat from the lobster tail and claws (see post for more detailed instructions). Chop it up into large chunks.
