2 quarts water
1 lb pig's foot, salted
1 lb salt beef
1 lb ham, uncooked
1/2 lb conch, pounded
1 lb fish, deboned
1 lb crabmeat
3 lbs spinach or 3 lbs mixed greens
12 okra
1 eggplant
hot pepper (optional)

Steps:

  • Soak meats overnight in cold water to remove excess fat and salt. Cook meat and conchs in 2 qts water till soft.
  • When meat is half cooked, add fish and crab and continue cooking till meat is tender.
  • Peel eggplant. Add to pot with meat mixture. When soft, remove and chop fine. Return to pot.
  • Wash greens, and chop fine or put through grinder.
  • Cut up okras and add with greens to meat and eggplant mixture.
  • Cook till greens become a dark green color. Continue to cook about 5 minutes longer. Taste, add a little salt if needed, and hot pepper if desired. If mixture is too thick, add 1-2 cups water.

From Gourmet magazine, July, 2001 by Melissa Roberts-Matar. "This lobster salad is wonderful on its own-but piled onto a hot dog bun it becomes a perfect lobster roll. The lobsters may be cooked and shelled 1 day ahead and chilled, covered. The salad can also be made a day ahead of serving. Keep covered and chilled.

4 (1 1/2 lb) live lobsters
1 large shallot, finely chopped
3 tablespoons lemon juice
1/3 cup mayonnaise
1/2 teaspoon salt
2 tablespoons fresh tarragon, finely chopped
1/4 teaspoon black pepper
hot dog bun, spit top (optional)

Steps:

  • Plunge 2 live lobsters headfirst into an 8 quart pot of boiling salted water.
  • Loosely cover pot and cook over moderately high heat for 9 minutes from the time they entered the water, then transfer with tongs to sink to cool.
  • Return water to a boil and repeat with the next 2 lobsters.
  • While the lobsters are cooking, combine shallot, lemon juice, and 1/2 teaspoons salt in in a large bowl and let stand at room temperature for 30 minutes.
  • When lobsters are cool, remove meat from lobster, discard tomalley, roe (if any) and shells.
  • Cut meat into 1/2 inch pieces.
  • Whisk mayonnaise, tarragon, and 1/4 teaspoons black pepper into shallot mixture.
  • Add lobster meat to the mayo blend and toss gently to coat.
  • If serving on hot dog buns, butter and grill or toast the buns if desired.
  • Enjoy this simple and delicious rite of summer!

Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. Personal note: I thought this dish was pretty bland, and probably would not make it again.

2 1/4 lbs firm white fish
1/2 teaspoon Accent seasoning
1 cup water
1 teaspoon margarine
1 medium onion, cut into large chunks
1 small tomatoes, chopped
1 1/2 teaspoons vinegar
4 1/2 teaspoons lemons or 4 1/2 teaspoons lime juice
1 lime, sliced
5 ounces frozen cut okra
3/4 cup fine yellow cornmeal
1 1/4 cups boiling water
1 tablespoon butter
1/8 teaspoon salt
pepper

Steps:

  • To make the fish, put all the ingredients into a large saucepan and bring to a boil. Cover and reduce heat, simmering for 20 to 30 minutes or until the fish flakes with a fork. Garnish with sliced lime.
  • To make the fungi, bring the water to a boil and add the frozen okra.
  • In a separate bowl, blend 2 tbsp of the cornmeal with about 6 tbsp water. Pour into the pot with the boiling water and okra and let cook for one minute.
  • Slowly pour the rest of the cornmeal into the pan, stirring constantly. Add the butter and salt and pepper, continuing to cook for 5 minutes. Serve hot.

Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This recipe originally appeared in The Sugar Mill Caribbean Cookbook, but I have altered it to use the crust from a different Sugar Mill pie recipe (coconut cloud tart). The original recipe simply called for a refrigerated pie crust.

1 1/4 cups vanilla wafer crumbs
1/3 cup butter, melted
3 tablespoons sugar
3 eggs, separated
1 (14 ounce) can sweetened condensed milk
1/2 cup freshly squeezed lime juice
lime zest from 1 lime
1/4 teaspoon cream of tartar
1/4 cup sugar

Steps:

  • Preheat oven to 350 degrees. Mix the wafer crumbs with the butter and sugar and press down into the bottom of a pie pan. Bake in the oven for 8 to 10 minutes, or until the crust is just starting to brown. Let cool.
  • Put the eggs into a small mixing bowl and beat until they are thick and pale yellow. Stir the eggs into the condensed milk.
  • Add the lime juice and rind and pour over the crust. Set aside.
  • Beat the egg whites with the cream of tartar until the whites begin to thicken. Slowly add the sugar and continue to beat until you get stiff peaks.
  • Spread the egg whites gently over the lime filling.
  • Bake at 350 for 15 to 25 minutes, or until the meringue begins to brown.
