Steps:
- Slice onions crosswise and separate into rings.
- Combine milk, eggs and salt to taste in mixing bowl. Soak onion rings in mixture 30 minutes.
- Place pancake mix in shallow bowl. Heat oil for frying in skillet to 375 degrees F. Remove onion rings from milk mixture, dip in pancake mix and place in hot oil. Fry rings until golden brown. Drain fried onion rings on paper towels. Pack fried onion rings solidly, but loosely, without pressing, into 8 x 4-inch loaf pan. Bake at 400 degrees F for 10 to 15 minutes. Turn onto serving plate. Garnish with parsley.

- For the meatloaf:
- Preheat the oven to 370 degrees F.
- Combine the ground chuck, Italian sausage, mozzarella cheese, bread crumbs, sundried tomatoes, yellow onion, minced garlic, oregano, basil, 1 teaspoon salt, 1/2 teaspoon black pepper, eggs, tomato sauce, and red wine in a large bowl and mix well.
- Grease individual cupcake foil containers or cupcake pan (or can be made in one large loaf pan). Divide the raw mixture evenly among the containers.
- Bake for 30 minutes, cool and remove from mold.
- When ready to eat or serve, reheat until the internal temperature of the meatloaf reaches 165 degrees F.
- To make topping:
- Mix the cooked, drained, and cooled pasta with the marinara sauce of your choice. Portion the pasta into 1/2 cup servings for the meatloaf cupcakes. Place on tops of cooled meatloaf and sprinkle with Parmesan cheese and dried Italian spices, to taste.

- In a large bowl combine beaten eggs, 1/4 cup creamy Italian dressing, bread crumbs, onion, herb seasoning, salt and pepper. Add ground beef, mix well.
- In a 12 x 7 x 2-inch baking dish, pat half the meat mixture to a 9 x 4-inch rectangle. Sprinkle 1/2 cheese and all parsley on top to within 1-inch of all edges.
- Peel and place hard-cooked eggs end to end down the center of the rectangle.
- On wax paper pat remaining meat mixture to a 9 x 4-inch rectangle. Sprinkle remaining cheese on top to within one-inch on all edges, press cheese into meat.
- Invert on top of egg rectangle. Remove wax paper.
- Now shaping meat into a loaf about 10-inches long, seal ends and sides well.
- Make shallow diagonal cuts on top of loaf forming diamond shapes. Bake uncovered in 350 degrees oven for 1 hour.
- For Sauce Topping: Combine remaining 3 tablespoons salad dressing, mustard and sugar, drizzle over the loaf. Bake 15 minutes more or until done. Transfer to serving platter, let stand 10 minutes before slicing.
