LOADED POTATO CASSEROLE RECIPE

Turn your favorite loaded baked potato into a family size casserole. It's quick and easy, and yes, it has bacon.

Number Of Ingredients 10

8 small russet potatoes
1/2 cup whole milk
1/4 cup butter
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder, optional
1 block Cheddar Cheese, (8oz) grated
1/2 cup bacon, cooked and crumbled
1 cup sour cream
Fresh chives for garnish

Steps:

  • Wash potatoes well under cold running water.
  • Cut potatoes into cubes, leaving the skin on.
  • Place potatoes in large stock pot, cover potatoes with water.
  • Place pot over Medium-High heat on stove top. Bring potatoes to a boil.
  • Reduce heat to Medium. Cook potatoes about 15 minutes until fork tender.
  • Drain the potatoes in a colander.
  • Grate the block of cheese. Set aside for now.
  • Place potatoes back in pot. Mash with a potato masher or fork, leaving some lumps.
  • Add the milk.
  • Add the butter.
  • Add the black pepper.
  • Add the salt.
  • Add the garlic powder, if desired. It's optional.
  • Mix well. Taste the mixture to see if you need to add more of the seasonings.
  • Mixture will be a bit thick.
  • Spread the mixture into a 3qt casserole dish.
  • Place a good layer of grated cheese on top of the potatoes.
  • Add the crumbled bacon.
  • Add dollops of sour cream around the top of the bacon.
  • Add the remainder of the grated cheese.
  • Bake at 325F degrees for about 25-30 minutes until heated through and cheese is melted.
  • Remove from oven when done. Place on folded towel or wire rack to cool for about 10 minutes.
  • Serve warm.
  • Enjoy!

4 large baking potatoes (about 3-1/4 pounds)
1 tablespoon olive oil
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
1/4 cup butter, cubed
2/3 cup heavy whipping cream
1/4 cup sour cream
2 cups shredded cheddar cheese, divided
6 bacon strips, cooked and crumbled, divided
2 green onions, sliced, divided
Additional sour cream, optional

Steps:

  • Preheat oven to 375°. Scrub potatoes; pierce several times with a fork. Brush with oil; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place in a foil-lined 15x10x1-in. baking pan; bake 1 to 1-1/4 hours or until tender. Cool slightly., In a small saucepan, melt butter over medium heat. Whisk in whipping cream and 1/4 cup sour cream. Add 1-1/2 cups cheese; stir until melted. Remove from heat; cover to keep warm., When potatoes are cool enough to handle, cut each potato lengthwise in half. Scoop out pulp and place in a large bowl. Cut 2 potato skin shells into 1-in. pieces; save remaining skins for another use., Mash pulp with the remaining salt and pepper. Stir in cheese mixture, half the bacon and 2 tablespoons green onion. Transfer to a greased 1-1/2-qt. baking dish. Top with the cut-up potato skins. Sprinkle with remaining cheese and bacon., Bake until heated through and lightly browned, 30-35 minutes. Sprinkle with remaining green onion. If desired, serve with additional sour cream.

6 slices bacon
1 ½ cups shredded Cheddar cheese, divided
1 cup evaporated milk
½ cup sour cream
1 teaspoon salt
½ teaspoon ground black pepper
1 cup sliced green onions, divided
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return potatoes to pot.
  • Meanwhile, arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.

2 pounds potatoes, peeled and thinly sliced (about 6 cups)
1 large onion, halved and thinly sliced
1/4 cup water
1/4 cup butter, cubed
1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon pepper
2 cups 2% milk
4 cups shredded cheddar cheese, divided
4 cups fresh small broccoli florets
3 cups cubed fully cooked ham
2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350°. Place potatoes, onion and water in a microwave-safe bowl. Microwave, covered, on high until potatoes are almost tender, 8-10 minutes; drain., Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour and seasonings until smooth; cook and stir until lightly browned, 2-3 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. 6 slices bacon, or to taste
cooking spray
1 cup sour cream
½ cup butter
1 pinch salt-free seasoning blend, or to taste
8 frozen hash browns, thawed, or more to taste
¾ cup shredded Cheddar cheese, or to taste
1 tablespoon dried chives, or more to taste
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and break into small pieces.
  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x4-inch loaf pan with cooking spray.
  • Mix sour cream, butter, and seasoning blend together in a bowl. Layer 2 1/2 hash browns in the prepared dish. Spread 1/3 of the sour cream mixture over hash browns. Nonstick cooking spray
6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the potatoes into the prepared casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the potatoes are soft and begin to brown, about 45 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup Cheddar in a bowl until well combined. Dollop over the potatoes, then sprinkle with the remaining cup Cheddar and bake until the cheese is melted and bubbly and the potatoes are completely cooked through when poked with a knife, 13 to 15 minutes.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and bacon pieces.

5 pounds potatoes, peeled and cubed
8 strips bacon
⅔ cup chopped green or red bell pepper
½ cup chopped onion, or more to taste
¾ cup hot milk
6 tablespoons butter, plus more for greasing
1 teaspoon salt
½ teaspoon ground black pepper, or to taste
1 (10 ounce) package sharp Cheddar cheese, cut into chunks
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter 2 large casserole dishes.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and transfer to a large bowl.

Fill each of the prepared casserole dishes 2/3 full of potatoes.
  • Bake in the preheated oven until heated through and potatoes have puffed up, 30 to 35 minutes.
