EASY CAKE MIX BARS
I take this dessert to work for Friday pick-me-ups. It's one of my favorite yellow cake bar recipes. I love to share them because they're so easy to eat, easy to make and easy on the wallet. -Amy Rose, Ballwin, Missouri

Steps:
- Preheat oven to 350°. In a large bowl, combine cake mix, egg, milk and oil (mixture will be thick). Stir in baking chips and jimmies. Spread into a greased 15x10x1-in. baking pan., Bake 18-20 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack. Cut into bars. Freeze option: Freeze bars in freezer containers. To use, thaw in covered containers before serving.

Steps:
- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In small bowl, mix crushed cookies and melted butter. Press mixture in bottom of pan.
- In medium bowl, beat brown sugar and 2/3 cup butter with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until blended. On low speed, beat in flour and salt. Stir in toffee candy, pecans and chocolate chips. Spread over crust.
- Bake 50 to 55 minutes or until set. Cool completely in pan on cooling rack. Cut into 6 rows by 6 rows.

- In large bowl, stir cake mix, melted butter, eggs, water and vanilla with spoon until well blended. Stir in remaining ingredients. Spread in pan.

EASY LOADED COOKIE BARS
These cookie bars are delicious! They are simplified by using a cake mix for the base and adding all your favorite chips, nuts etc. You could even add holiday M&M's or your favorite candy bars chopped up! Easy to take to a potluck or office!

- 1. Preheat oven to 350 degrees. Spray a 9X13 glass pan with PAM or grease lightly with shortening.
- 2. In a large bowl combine cake mix, eggs and melted butter. Stir just to combine.
- 3. Add chips, nuts and coconut, mix just to combine- don't over mix.
- 4. Place batter in pan and push into place, I find it easier using my hands. Even the dough out in the pan.
- 5. Bake 20-23 minutes until golden brown, do not undercook! Cool completely, cut into squares to serve.

- Preheat the oven to 350 degrees F.
- In a large bowl, mix the cake mix, butter, milk, salt and eggs until the consistency of a batter.
- In a second bowl, mix the sprinkles, chocolate candies and vanilla morsels. Fold two-thirds of the candy mix into the batter.
- Coat a 9-by-13-inch pan with baking spray. Add the batter to the pan and smooth the top. Sprinkle over the remaining candy mix and bake until golden and set in the middle, 25 to 27 minutes. Allow to cool completely, about 1 hour.
- Cut into 16 bars. Store extras in an airtight container at room temperature.
CHEWY ROLO COOKIE BARS

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 13 inch baking pan.
- Combine the cake mix and nuts. Stir in the evaporated milk and melted butter. Spread half of the cake mix mixture into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Remove from oven and immediately place Rolo pieces, cut side down, over hot crust. Drop remaining cake mix mixture by teaspoonfuls over Rolo pieces. Return to oven and bake for 25 to 30 minutes or until lightly browned. Cut into squares to serve.

- Cream brown sugar and butter in the bowl of an electric mixer fitted with a paddle attachment. Add eggs and vanilla and beat until combined. Add baking powder, salt, and flour and mix.
- Mix in 2-3 cups of mix-ins. You can use whatever you have on hand, or whatever you like. For this pantry-clean-out recipe, I used a mixed 1 cup of white and semi-sweet chocolate chips, 1/2 cup toffee bits, and 3/4 cup Reese’s Pieces. Stir all those into the batter.
- Press into prepared pan (dough is sticky, spray your hands with cooking spray to avoid it sticking to your hands). Sprinkle 1/4 cup Reese’s Pieces over the top. You can use about 1/4 cup of anything you have for this step: M&Ms, chocolate chips, etc. It just makes them look prettier.
