MOM'S APPLE FRITTERS
My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

- Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
- Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

APPLE FRITTER LOAF
My friends and family ask me for this all the time. I find apple fritters at a coffee shop are nothing but sugar and give me a toothache just thinking about it, but this recipe is delicious and not too sweet! Try it and let me know how it turns out.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x5-inch loaf pan with cooking spray.
- Combine apples, 2 tablespoons sugar, and 1 teaspoon cinnamon together in a bowl; mix until coated. Mix brown sugar and remaining cinnamon in a second bowl. Whisk flour and baking powder together in a third bowl. Set aside.
- Mix remaining white sugar and butter together in a medium bowl with an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until blended in. Add vanilla extract. Stir in flour mixture until smooth. Add milk and mix until smooth.
- Pour about 1/2 of the batter mixture into the prepared loaf pan. Add 1/2 half of the apple mixture, and lightly press the apples into the batter. Sprinkle 1/2 of the brown sugar mixture onto the apples. Pour the remaining batter into the pan, add the remaining apples, and brown sugar mix. Press the apples lightly into the top batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. Remove from the oven and let cool for 20 minutes.
- While loaf cools, pour confectioners' sugar into a bowl and slowly add in milk. Stir until completely mixed, adding more milk if you want your glaze thinner. Drizzle onto the cooled loaf.

- Heat oil to 350 degrees enough to deep fry the fritters.
- Mix dry ingredients of the batter. Toss the dried apples and raisins if using to batter.
- Mix wet ingredients together add to dry ingredients.
- Carefully drop spoonfuls into oil.
- Pressing to flatten.
- A flattened shape helps the interior cook through.
- Fry till golden brown 3-5 minutes.
- Roll into powdered sugar.
- Serve with a scoop of your favorite ice cream.

Steps:
- Pour enough oil into an electric skillet so that the bottom is well covered, about 1/8" deep. Depending on how fast you are, either turn the skillet on now or wait until you start on the apples. The oil should be at 375 degrees.
- Combine in a bowl the beaten egg, milk, sugar, cinnamon and sour cream. In separate bowl, whisk together flour, baking powder and salt. Add flour mixture to egg mixture and mix well.
- Peel apples, core and slice them into 1/4" slices. Dip slices in batter and carefully place in oil. Cook for 1 to 2 minutes. Turn and cook 1 to 2 minutes more. Remove fritters and drain. Sprinkle with powdered sugar if desired. Serve warm.

A comforting dessert recipe. Try slicing your apples as evenly as possible so that each fritter is cooked to the same level of doneness. Although this may not be a healthy dessert, it sure is yummy!

Steps:
- In a blender or food processor, process the flour, salt, egg yolks, butter and cider. Process until smooth.
- In a large bowl, beat the egg whites.
- Fold the flour mixture into the beaten egg whites, just until combined.
- Peel and core the apples; cut into 1/4 inch thick slices.
- Sprinkle the apple slices with lemon juice and toss with the sugar.
- Heat 4 to 5 inches of oil in a large and heavy-duty saucepan over med.-high heat until the oil is hot enough to sizzle when a tiny bit of batter is dropped inches.
- Dip an apple slice in batter - it should be evenly coated with batter, allowing excess batter to drip off. Repeat with several more apple slices.
- Carefully drop battered apple slices into the hot oil. Cook 8 to 10 minutes or until the apple slices are cooked through and the batter is puffy and golden. *Work in batches so you don't overcrowd the pan*.
- Drain on paper towels.
- Repeat until all apple slices are battered and cooked. Let cool., then sprinkle with powdered sugar before serving.
