BIG-BATCH MARINATED LENTILS
Stirring a simple vinaigrette into warm just-cooked lentils helps them drink up flavor so they taste anything but plain. Use French green or black beluga lentils as they will hold their shape best. You can keep a batch of these dressed lentils in the fridge and add to salads, pastas, soups, and more all week long.

Steps:
- Combine lentils and 2 tsp. salt in a large saucepan and pour in cold water to cover by at least 1". Bring to a boil, then reduce heat to low and simmer gently until lentils are tender but still have some bite (like al dente pasta), about 20 minutes. Drain and return to pot.
- Meanwhile, whisk oil, vinegar, honey, paprika, and remaining 1 tsp. salt in a small bowl or measuring glass.
- Pour vinaigrette over hot lentils and toss to coat. Let sit at least 10 minutes before serving to give lentils time to absorb flavors from vinaigrette.
- Do ahead: Lentils can be prepared 5 days ahead. Transfer to an airtight container; cover and chill.
LOVELY LENTILS (BABY FOOD)
I have been making baby food and purees for the last 5 months. I love it and baby does too! I was confident baby would turn this recipe down but this is one of his absolute favorites! Credit goes to Annabel Karmel and her fabulous baby food ideas. After preparing a batch of this, I spoon portions into an ice cube tray, flash freeze, remove from trays and then store in bags in the freezer. Two cubes reheated is the perfect portion for a hungry nine month old

Steps:
- In a medium saucepan saute the onion, carrot, and celery in vegetable oil for 5 minutes or until softened.
- Add lentils and sweet potatoes and slowly add stock.
- Bring to a boil.
- Cover, reduce heat and simmer.
- Puree in a blender and portion out as desired. This recipe will make anywhere from 5-10 servings.
- Can be refrigerated for 1 week or frozen for 6 weeks.

LENTILS AND RICE WITH FRIED ONIONS (MUJADARRAH)
This may sound like a plain recipe, but believe me, it's wonderful! It is an easy-to-make Middle Eastern comfort food that combines lentils, rice and delicious fried onions. The yogurt really gives it a super flavor!

Steps:
- Heat the olive oil in a large skillet over medium heat. Stir in the onions, and cook about 10 minutes, until browned. Remove from heat, and set aside.
- Place lentils in a medium saucepan with enough lightly salted water to cover. Bring to a boil, reduce heat, and simmer about 15 minutes.
- Stir rice and enough water to cover into the saucepan with the lentils. Season with salt and pepper. Cover saucepan, and continue to simmer 15 to 20 minutes, until rice and lentils are tender.
- Mix half the onions into the lentil mixture. Top with yogurt or sour cream and remaining onions to serve.

- Fill a medium-to-large saucepan with water, leaving several inches of room at the top. Bring it to a boil over high heat.
- Meanwhile, sort through your lentils for debris. I do this by slowly pouring the lentils into a fine-mesh sieve, keeping a careful eye out for any tiny rocks or extraneous materials. Sift through the lentils with your fingers to make sure you didn’t miss anything. Then, rinse your lentils under running water until the water runs clear. Set aside.
- Once the water is boiling, add the rinsed lentils. Add the salt, and the bay leaf and/or garlic, if using.
- If you’re cooking red lentils, set the timer for 6 minutes. For regular green lentils, set the timer for 13 minutes. For black lentils, set the timer for 16 minutes. For French green lentils, set the timer for 18 minutes.
