2 tablespoons unsalted butter
1/2 medium Spanish onion, coarsely chopped
2 cloves garlic, coarsely chopped
2 medium sweet potatoes, roasted, peeled and pureed (with a ricer or food processor)*see Cook's Note
Salt and freshly ground black pepper
1/2 cup dry white wine
2 to 3 cups bottled or canned clam juice
1 tablespoon unsalted butter
1 medium sweet potato, peeled and cut into small dice
1 teaspoon sugar
Salt and freshly ground black pepper
4 slices slab apple wood smoked bacon, cut into small dice
1 cup dry white wine
12 fresh littleneck clams, scrubbed
Sweet potato chowder base
2 teaspoons honey
1/3 cup coarsely chopped fresh clams (steamers or cherrystone)
1/4 cup heavy cream
1 tablespoon finely chopped fresh tarragon leaves

Steps:

  • Heat the butter in a medium saucepan or Dutch oven over medium heat. Add the onions and garlic and cook until soft. Stir in the sweet potato puree and salt and pepper and cook until the puree is slightly thickened (you are making a sort of sweet potato roux). Increase the heat to high, add the wine and cook until completely reduced. Add the clam juice and cook for 15 to 20 minutes, stirring occasionally. If the mixture appears to be too thick, thin with a little extra clam juice or water, season with salt and pepper. Strain the mixture into a bowl and return to the pan.
  • Heat the butter in a small saute pan over medium high heat. Add the potatoes and cook until golden brown and caramelized. When the potatoes are almost cooked through, sprinkle with the sugar and toss until the sugar is dissolved and the potatoes are cooked through. Remove with a slotted spoon to a plate lined with paper towels.
  • Heat a pan over medium heat, add the bacon and cook until golden brown and crisp. Remove with a slotted spoon to a plate lined with paper towels.
  • Bring wine to a boil in a medium saucepan, add the clams, cover and cook until all clams open, discarding any that do not, about 4 to 5 minutes. Remove the clams with a slotted spoon and place in a bowl.
  • Bring sweet potato chowder base to a simmer. Add the cooked bacon, sweet potatoes and honey and cook for 1 minute. Add the chopped clams and cook for 2 minutes. Add the heavy cream and cook an additional minute or until just heated through. Ladle into bowls and garnish each bowl with 3 clams in the shell and a sprinkling of fresh tarragon. Serve immediately.

I love chowders. I have combined these two chowders with a few extra ingredients to make a wonderful tasting chowder. I like to serve it the same as French Onion Soup with the garlic toast in the bottom of the bowl or garlic croutons and pepper jack cheese melted on top. UMMMMMMM Good! This is really a comfort food on a cold winter day.

2 tablespoons olive oil
1 small onion
3 garlic cloves, minced
6 potatoes (large baking potatoes)
1 (10 ounce) can baby clams
1 (16 ounce) heavy cream
1 (6 1/2 ounce) chopped clams with juice
4 cups fat-free low-sodium chicken broth
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon cayenne pepper or 1/4 teaspoon red pepper
1 teaspoon black pepper
2 teaspoons salt
2 bay leaves
2 teaspoons Old Bay Seasoning

Steps:

  • In a large pot saute (sweat) chopped onions in olive oil.
  • Peel and dice potatoes into small bites and add to onions and olive oil.
  • Add cayenne pepper, black pepper and salt.
  • Cook potatoes with 1/4 cup of water covered until fork tender.
  • In a small pan on medium heat mix butter and flour as if your were making a gravy or white sauce.
  • Add flour and butter mixture to large pot and mix with potatoes.
  • Pour 4 cups chicken broth and stir until it starts to thicken.
  • Add can of whole baby clams and chopped clams with juice.
  • Pour in heavy cream.
  • (Thickness varies. Mashing some of the potatoes or adding instant potatoes for thickening.).
  • Cook for 30 minutes.
  • Top with Old Bay Seasoning.

2 sticks (16 tablespoons) unsalted butter, 1 stick melted, 1 stick cubed
1 tablespoon seafood seasoning
2 teaspoons chili flakes
4 medium sweet potatoes, quartered or sliced in half depending on how big they are (they should be around the same size as the corn halves)
4 ears of corn, shucked and cut in half
Kosher salt and freshly ground black pepper
4 cups chicken stock
2 bottles (24 ounces) IPA beer
12 cloves garlic, skin on
2 red onions, skin on, quartered
2 pounds chorizo sausage
4 dozen littleneck clams, cleaned
Lemon wedges, for serving
Few dashes of hot sauce

Steps:

  • Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
  • To a large mixing bowl, add the melted butter, seafood seasoning and chili flakes. Mix to combine. Add the potatoes and corn and toss to coat. Season with salt and pepper. Transfer to a steamer basket.
  • To the bottom of a steam pot, add the chicken stock, beer, garlic, onions and a pinch of salt and black pepper and cover with a lid. Place the steamer basket onto the steam pot and place on the grill. Steam until the corn and potatoes are cooked three-quarters of the way through, 15 to 20 minutes.
  • Meanwhile, sear the chorizo on all sides until the skin is charred, 2 to 3 minutes per side, then add to the steamer basket. Cover with the lid and cook for 5 more minutes. Add the clams, cover and cook until the clams have steamed open, 5 to 8 minutes.
  • Pour the clams, chorizo, potatoes and corn onto a paper-lined table. Garnish with lemon wedges. Strain the broth into a smaller pot. Whisk in the cubed butter and hot sauce. Pour into mugs and serve alongside the clam bake.

2 bacon strips, chopped
1 medium onion, chopped

1/4 to 1/2 teaspoon dried thyme
1/4 teaspoon dried savory

2 tablespoons minced fresh parsley

Steps:

  • Drain clams, reserving clam juice. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove bacon with a slotted spoon; drain on paper towels., Add onion to drippings; cook and stir 4-6 minutes or until tender. Stir in flour until blended. Gradually stir in water and reserved clam juice; cook and stir until bubbly., Add potatoes and seasonings; bring to a boil, stirring frequently. Reduce heat; simmer, covered, 20-25 minutes or until potatoes are tender, stirring occasionally., Stir in milk, parsley and clams; heat through. Top with bacon.

2 (6 1/2 ounce) cans bumble bee chopped clams
6 slices turkey bacon
3 cups fresh yams, peeled and diced
1 1/2 cups onions, diced
1 1/2 cups water
1 cup 2% low-fat milk
1 cup heavy whipping cream
2 tablespoons Worcestershire sauce
2 tablespoons organic golden flax seeds
salt (to taste)
pepper (to taste)

Steps:

  • Peel and chop Sweet Potatoes.

New potatoes are freshly dug and have tender skins; wash them gently so that they don't tear. If they're hard to find, any small potato or fingerling variety will work.

3 tablespoons olive oil
4 ounces smoked Spanish chorizo, cut into 1/4" pieces
1 1/2 pounds small new potatoes, sliced 1/4" thick
1 bunch spring onions or scallions, whites halved and sliced; greens sliced on a diagonal, divided
4 garlic cloves, thinly sliced
1 cup dry white wine (such as Sauvignon Blanc or Pinot Gris)
5 pounds littleneck clams, scrubbed
Toasted bread (for serving)
Ingredient info: Spanish chorizo is available at Spanish markets, specialty foods stores, and online.

Steps:

  • Heat oil in a large heavy pot over medium heat. Add chorizo and cook, stirring often, until some fat has rendered and chorizo begins to crisp, about 4 minutes.
  • Add potatoes, spring onion whites, and garlic. Cook, tossing often, until potatoes are crisp-tender, 10-12 minutes. Add wine and cook until reduced by half, about 5 minutes. Add 2 1/2 cups water and continue to cook until potatoes are just tender, 5-8 minutes longer.
  • Add clams and half of onion greens, cover pot, and cook, stirring occasionally, until clams have opened, 8-10 minutes (discard any clams that do not open).
  • Divide clam mixture among bowls. Top with remaining onion greens and serve with toast.

1/2 cup dry white wine
2 to 3 cups bottled clam juice, as needed
Chowder Garnish
1 tablespoon unsalted butter
2 teaspoons canola oil
1 small sweet potato, peeled and cut into small dice
Kosher salt and freshly ground black pepper
1/4 pound slab applewood-smoked bacon, cut into small dice
1 cup dry white wine
16 fresh littleneck or cherrystone clams, scrubbed
2 teaspoons honey
1/2 cup coarsely chopped shelled fresh clams (steamers or cherrystones)
1/2 cup heavy cream
1 tablespoon finely chopped fresh tarragon

Steps:

  • To make the chowder broth, preheat the oven to 375°F.
  • Prick the sweet potatoes several times with a fork, place on a baking sheet, and roast in the oven until soft, about 45 minutes. Remove from the oven and let cool slightly. When cool enough to handle, halve each potato lengthwise and, using a small spoon, scrape the flesh into a medium bowl; discard the skins. While the potatoes are still hot, mash with a potato masher or fork until smooth.
  • Heat the butter in a medium saucepan or Dutch oven over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Stir in the flour and cook for 30 seconds. Stir in the sweet potato puree, season with salt and pepper, and cook until the puree is slightly thickened (you are making a sort of sweet potato roux).
  • Increase the heat to high, add the wine, and cook until completely evaporated, a couple of minutes. Add 2 cups of the clam juice and cook, stirring occasionally, until slightly thickened, 10 to 15 minutes. If the mixture appears to be too thick, thin with a little extra clam juice or water. Season with salt and pepper. Strain the mixture into a bowl and then return the liquid to the saucepan.
  • Meanwhile, prepare the chowder garnish. Melt the butter with the oil in a medium sauté pan over medium heat. Add the diced sweet potato, season with salt and pepper, and cook until golden brown and caramelized, about 10 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Wipe the pan out with paper towels and return it to medium heat. Add the bacon to the hot pan and cook until golden brown and crisp, about 7 minutes. Transfer with a slotted spoon to a plate lined with paper towels.
  • Pour the wine into a medium saucepan and bring to a boil over high heat. Add the clams, cover, and cook until all the clams open, about 4 minutes. Discard any that do not open. Remove the clams with a slotted spoon and place in a bowl.
  • Bring the chowder broth to a simmer over medium heat. Add the sweet potato dice, bacon, and honey and cook for 1 minute. Add the chopped clams and cook for 1 minute. Add the heavy cream and cook until just heated through, about 1 minute.
  • Ladle into bowls and garnish each bowl with a few clams in the shell and a sprinkling of fresh tarragon. Serve immediately.
