MEXICAN PIZZA RECIPE
A delicious homemade Mexican Pizza recipe which is easy to make and healthy! This loaded vegetarian pizza is topped with refried beans, onion, corn, peppers, jalapeño, and vegan cheese. It can be made with a (gluten-free) pizza crust or with flour tortillas!

- First, prepare the dough using my Homemade Gluten-Free Pizza Crust Recipe (click for the recipe) or use a store-bought pizza crust. Check the recipe notes below for the tortilla version.
- Preheat oven to 400 degrees Fahrenheit (205 degrees Celsius) and line a large baking sheet with greased parchment paper.
- Transfer the Refried Beans to a bowl and add a splash of water to make the mixture spreadable. Add all spices (cumin, paprika, garlic powder, cayenne pepper).
- Chop/dice/slice the onion, pepper, and jalapeño.
- Transfer the pizza crust onto the lined baking sheet and add a thick layer of refried beans.
- Put the veggies, jalapeño, and corn on top.
- Finally, add a generous layer of vegan cheese (I added my Vegan Cheese Sauce).
- Sprinkle with salt and bake the pizza in the oven until crispy, about 20 minutes. Enjoy!

Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

- Heat the refried beans.
- In a large skillet, brown the ground beef. Stir in the seasoning packet.
- Preheat oven to 350 degrees F (175 degrees C).
- Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
- Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
- Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

KETO MEXICAN PIZZA
Why have regular old tacos when you can use most of the same ingredients into a low carb Mexican pizza? Making your own low carb tortillas is way simpler than you think!

- Preheat oven to 375 F.
- Toss dry ingredients in the food processor, and pulse a few times to combine.
- Add 2 teaspoons apple cider vinegar and 1 whole egg to the dry ingredients and pulse together until the dough forms into a ball.
- Lay a sheet of parchment paper on your counter, and spray the top with cooking spray. Now, there are 2 ways you can form the pizza base. Keep in mind that the dough will be very sticky! So you'll want to use damp hands whenever you handle it.
- OPTION 1 (creates "prettier" shapes. You will need a 5" bowl or cookie cutter): Press the ball into a disc and place it on the prepared parchment paper. Spray a second sheet of parchment and lay over the top of the dough. Use a rolling pin to roll dough until it's 1/4" thick. Then remove the top sheet of parchment, and place it in the center of your baking sheet. Use a 5" bowl to stamp the center of each tortilla. Remove the excess dough from the outside of the bowl. Transfer stamped tortillas to the prepared baking sheet.
- OPTION 2 ("messier" looking, but tastes the same): Use damp hands to divide the dough into 6 balls. Flatten them into discs. Place each in the center of your prepared parchment paper and lay a second sheet of parchment sprayed with cooking spray over the top of the dough. Roll each ball using a rolling pin until it's 1/4" thick.
- Bake in preheated oven for 5 minutes. Remove, flip the pizza base, and bake for another 4 minutes.
- Meanwhile, heat the oil in a large pan over medium heat. Once shimmering, add the 1 Pound beef and break into small pieces with the back of your spoon as it cooks. Cook until no longer pink.
- Remove pan from heat and push the beef to one side. Tilt the pan so the grease pools on the other side of the meat. Carefully use paper towels to remove excess grease.
- Return pan back to medium heat, and stir in the taco seasoning. Cook until the seasoning becomes fragrant, as you stir to incorporate and coat the meat -- about 2-3 minutes.
- Once the pizza base is done, divide the meat over the top of each pizza and sprinkle with cheese.
- Bake in the oven for 3-5 minutes, or just until the cheese melts to your liking.
- Cover with toppings, slice using a pizza cutter, and enjoy!

- Preheat the oven to 375°F and prepare baking sheets with tin foil. There are two ways to crisp the tortillas. One is in a skillet with butter, flipping to ensure both sides are brown and crispy. The other is in the oven at 375°F for 3-4 minutes on each side. The skillet method takes more time but the butter makes the tortilla nice and crisp. The oven method is easy but the tortilla can bubble up, and the tortillas burn easily so you have to keep an eye on them.
- Place the beans in a small saucepan. Add the milk warm over low heat, stirring occasionally. The milk is optional but helps smooth out the beans and makes them easier to spread on the tortillas.
- Cook the ground beef in a skillet so that it is fully cooked. Drain the grease and add the taco seasoning according to the packet. If your meat is already cooked, microwave it or reheat it in a pan.
- Take one crispy flour tortilla and spread a layer of beans all over leaving about ½" around the edges. Add ⅓ of the meat on top of the beans.
- Place another crispy flour tortilla on top of the first layer. Spoon out a thin layer of the enchilada sauce on top of the second tortilla. Sprinkle a layer of cheese and olives on top of the enchilada sauce. Repeat the assembly for the remaining 3 pizzas. Once the pizzas are ready to go, place them in the oven for 8-10 minutes until all the cheese has melted.
- Remove the pizzas from the oven and sprinkle the top with green onions and tomatoes. Cut into pieces with a pizza cutter or knife and serve with a side of sour cream. Enjoy!
MEXICAN PIZZA
A crust of flour tortillas and a filling of refried beans, shredded rotisserie chicken and salsa. Top it off with a little enchilada sauce and cheese and you got yourself an incredible Mexican Pizza for dinner!

- Preheat oven to 350ºF.
- Warm up beans in a small bowl in the microwave. Combine chicken and salsa in another bowl and warm it up in the microwave.
- To toast the tortillas, either heat oil in a skillet and fry both sides of the tortilla, or spray both sides of tortilla with cooking spray and heat on skillet (my preferred method).
- Lay four of the toasted tortillas on a large baking sheet. Spread with about 2 tablespoons of refried beans on each tortilla. Top with the salsa/chicken mixture, evenly dividing it among the four tortillas. Top with another toasted tortilla.
- Spread a thin layer of enchilada sauce on the top of each tortilla. Sprinkle with shredded cheese, evenly dividing it among the four pizzas. Bake in preheated oven for 5-7 minutes, or until the cheese is melted.
- Cut into triangles and serve immediately. Enjoy!
TACO BELL MEXICAN PIZZAS (COPYCAT)

- Preheat oven to 400 degrees. Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don't burn. You want them to get nice and crispy. Remove fried tortillas to a plate.
- Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread 1/2 cup of refried beans onto each tortilla. Place remaining tortillas on top of beans.
- Pour half of enchilada sauce on top of each tortilla and spread around.
- Add half of the chopped tomato on top of the sauce. Add 1/3 cup of cheese on top of each tortilla. Add half of the green onions on top of the cheese.
- Place in oven and cook about 8-10 minutes, or until cheese is melted. Serve and enjoy!

STUFFED MEXICAN PIZZA RECIPE

- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, and spray with cooking spray. (Seriously, or else your pizzas might stick.)
- Heat a skillet over medium high heat and spray it with cooking spray. Add ground meat and spices, and brown and crumble until cooked through. Drain meat if needed/desired.
- Spread 1/4 cup refried beans evenly over four tortillas, and place them on the prepared baking sheet. Evenly spread meat over beans (you will probably have some leftover). Sprinkle 1/4 cup cheese over the meat, and drizzle with about two tablespoons of red salsa.
- Place another tortilla on top, and spread 2 tablespoons of green salsa evenly over that one. Sprinkle 1/4 cup cheese over the salsa, and arrange avocado, olives, tomatoes, and green onions over the cheese. Sprinkle 1/4 cup cheese over the top of each pizza.
- Bake in preheated oven for 8-12 minutes, until cheese is melted and bubbly. Carefully remove each pizza with a large spatula and serve.
MEXICAN PIZZA
Steps:
- Gather the ingredients.
- Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
- In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.
- Add the taco sauce, tomato sauce, chili powder, cayenne pepper, and pepper to the onion mixture. Stir well, and simmer on low heat for 5 minutes to blend flavors.
- Stir in drained green chiles.
- Spray 2 cookie sheets with nonstick cooking spray and then spread the pizza crust dough onto the sheets.
- Bake them for 5 to 8 minutes or until they are just set.
- Spread the sauce evenly over both of the pizza crusts and top evenly with the shredded cheese.
- Bake at 400 F for 20 to 25 minutes until cheese is melted, bubbly, and begins to brown. Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.
- Slice, serve, and enjoy.
