LEMON PANCAKES
These lemon pancakes have a deliciously bright & sunny flavor thanks to fresh lemon juice and lemon zest. They're extra fluffy with golden edges, and taste delicious with summer berries or syrup

Steps:
- In a large bowl whisk together the flour, baking powder, baking soda and salt.
- Whisk together the milk and lemon juice.
- In a liquid measuring cup or bowl whisk together the eggs, vanilla extract, melted butter, sugar and lemon zest.
- Then whisk the milk mixture into the bowl with the eggs.
- Gently fold the wet ingredients into the dry ingredients.
- Heat a griddle to 350F degrees or a frying pan to medium-low heat. Lightly grease with oil or non-stick cooking spray.
- Pour about 1/4 cup of batter onto the griddle/pan and fry until you see a few air bubbles form. Flip and continue to fry on the second side until both sides are golden.
- Repeat with the rest of the batter.

- Combine flour, baking powder, sugar, and salt in large bowl.
- Add milk, club soda, egg yolk, lemon zest, vanilla and oil.
- Beat well.
- In a separate bowl, beat egg whites with electric mixer until stiff peaks form.
- Gently fold egg whites into batter.
- Spray a large nonstick frying pan with cooking spray.
- Over medium-high heat, drop batter by tablespoonfuls to make 2-inch pancakes.
- Cook until golden brown on both sides, turning once.
- (Be careful not to let them burn-- doesn't take long to cook!).

- In a large bowl, mix lemon zest and sugar until well combined. Add flour, baking powder, baking soda, and salt. Mix to combine, then set aside.
- In a separate medium bowl, whisk together egg, buttermilk, melted butter, vanilla extract and lemon juice.
- Make a well in the dry ingredients and pour in the wet ingredients. Stir until combined and moistened. Be careful not to over mix.
- Heat a griddle or skillet over medium heat. Coat with cooking spray or oil. For each pancake, drop 1/4 cup of batter onto skillet. Cook 1-2 minutes, until surface of pancakes have some bubbles. Flip carefully and cook another 1-2 minutes. Transfer to a plate and cover loosely with aluminum foil to keep warm. Make sure to coat the skillet before every pancake or batch of pancakes to prevent sticking.
