COPYCAT NUTTY BUDDY BARS
These copycat Nutty Buddy Bars are free of processed ingredients and pretty close to those Little Debbie ones I used to eat as a kid. They're a perfect little treat for when you're craving something for dessert.

- Spread peanut butter on top of each cracker then double them up (one on top of another) to make 12 double-decker stacks.
- In a small pot over very low heat, melt the chocolate chips and heavy cream together. Continuously stir until smooth, 2 to 3 minutes. You can also use a double boiler, but if you keep a close eye and stir frequently, I don't think it's necessary.
- Line a baking sheet or cutting board with parchment or wax paper. One by one dip each cracker stack in the melted chocolate and spoon over top. Take out of the chocolate, scrape the excess off the bottom (with the spoon), and place on the prepared sheet. Repeat until done.
- Place in the entire thing in the freezer until chocolate sets, 1 to 2 hours, and serve. Keep cold.

HOMEMADE LITTLE DEBBIE STAR CRUNCH
Little Debbie Star Crunch Snacks were a favorite treat growing up. It took me many attempts to recreate them at home, but I finally got it right and they're very similar to the real thing. Caramel and butter are melted and combined with marshmallows to create a gooey sweet sauce for crispy rice cereal, which provides texture and crunch. The treats are very dense, extra chewy, the flavor is caramely and rich, and the milk chocolate coating makes them taste just like a Star Crunch. No-bake, fast, and so authentic.

- Line a baking sheet with a Silpat liner or parchment paper, set aside. In a large microwave-safe bowl, add the caramel bits (already unwrapped and convenient; or use regular caramels, probably 30 to 40+ unwrapped; don't use caramel ice cream sauce because it's too thin) and microwave on high power to soften and melt, about 2 minutes, stopping every 30 seconds to check and stir. The caramels don't melt into a smooth, thin sauce like caramel ice cream sauce; instead they're the consistency of natural peanut butter that's a bit loose and oily. As long as they're softened and somewhat melted, that's fine.
- Add the butter to the caramels, and heat on high power to melt the butter, about 1 minute. Stir the butter and caramel together to combine; the butter will pool and may be difficult to incorporate and it's okay if there's some pooling.
- Add the marshmallows and heat to melt them, about 2 minutes, stopping every 30 seconds to check and stir to combine. Marshmallows will swell and puff and after about 2 minutes of intermittent heating, they should be sufficiently soft enough to stir into the butter-caramel mixture. Quickly and briefly fold to combine. While the mixture is still nice and hot, add the cereal and stir to combine, mixture will cool down and firm up quickly.
- Spray your hands with cooking spray or grease them with butter and form 3-inch diameter discs that are about 1-inch tall (I made 11). The batter will be warm but cool enough to handle easily; if yours is too warm, wait until it cools sufficiently to handle it to shape the discs. Place discs on prepared baking sheet sheet, cover with plastic wrap, and allow them to firm up for at least 2 hours, or overnight, before dipping them in chocolate.
- In a large microwave-safe bowl, add the chocolate and shortening (helps chocolate stay much smoother and for a longer period and highly recommend), and heat on high power to melt, about 1 minute. Heat in 15-second bursts, stopping to check and stir after each, until chocolate can be stirred smooth. Note - I find it easier and more convenient to melt half chocolate and shortening now, and after it's been used, heat the remainder; that way chocolate stays warm, smooth, and easier to work with. Dip discs into chocolate one by one, and let chocolate drain off over the bowl, before retuning coated discs to a parchment-lined tray. I find it easiest to balance the discs with two forks, that way the chocolate can drain off through the tines.
- Allow treats to set up and cool in the refrigerator for at least 30 minutes (the shortening will be resistant to setting up at room temperature). After chocolate has set, treats can be stored in an airtight container at room temperature or in the refrigerator for up to 1 week, or in the freezer for up to 3 months.

OATMEAL CREME PIE COOKIE BARS (LITTLE DEBBIE COPYCAT)
Rather than go to the fussiness of making sandwich cookies to recreate the classic Little Debbie cookies, I made bars that taste better than the original. Bars are so much faster and easier than cookies since there's no dough to chill and nothing individual to roll. The bars are soft, very chewy, not at all cakey, and perfectly dense. Use quick-cook oats rather than old-fashioned for the perfect amount of chewiness. There's molasses and cinnamon for extra depth of flavor and the frosting is truly the icing on this cake and makes the bars taste authentic. You can halve the frosting portion if you're not a huge frosting person. It's buttercream frosting spiked with a jar of marshmallow creme and makes the bars taste truly authentic. It's sweet, decadent, soft, fluffy, sticky, rich, and you'll want to eat it by the spoonful.

- Bars - Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
- In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
- Wait momentarily before adding the egg so you don't scramble it. Add the egg, brown sugar, molasses, vanilla, salt, cinnamon, and whisk until smooth.
- Add the oats and stir to combine.
- Add the flour and stir until just combined, don't overmix.
- Turn batter out into prepared pan, smoothing the top lightly with a spatula. Bake for about 24 to 25 minutes, or until done. A toothpick inserted in the center should come out clean, or with a few moist crumbs, but no batter. Place pan on top of a wire rack to cool completely before frosting. Don't frost warm bars or the frosting will melt.
- Frosting - To the bowl of a stand mixer fitted with the paddle attachment (or large bowl and electric hand mixer), add the butter, confectioners' sugar, and beat on medium-high speed (start on low so you don't spray sugar everywhere) until light and fluffy, about 3 minutes.
- Stop, scrape down the sides of the bowl, and add the marshmallow creme, salt, and beat on medium-high speed until well combined, about 1 minute.
- Turn frosting out over bars and lightly smooth it with a spatula or offset knife. Bars will keep airtight at room temperature for up to 5 days. I'm comfortable storing buttercream-style frosting at room temp but if you're not, refrigerate the bars noting they'll be more prone to drying out in the fridge.

OMG!!!! I found this copycat of Little Debbie's Bars. As a kid growing up we use to get these as a treat after school. If you LOVE Little Debbie anything you will love this and the kids will beg for more so go on and make these for your kids or the big kids in your life. !! Enjoy

- 1. Open 1 box devils food cake mix with pudding in mix.Mix as directed.Grease two jellyroll pans.Divide batter, half in each pan.Bake 12 mins. For filling, blend flour, salt and milk. Heat until thickened, then cool. Cream sugar, shortening and butter at HIGH SPEED, gradually adding cooled mixture.Beat at high speed 7-8 mins. Spread on one pan of cooled cake. Invert other jellyroll pan with cake on top. For frosting, boil 3 mins and then add 1/2 cup choc.chips. Beat until chips melt. Spread on bars. Serves:6-8

- 1. Unwrap 12 Nutty Bar, chop in blender until finely crushed. Pour into bowl.
- 2. Add butter to crushed bars & mix well. Press into bottom of 12" spring form pan. Set aside.
- 3. Unwrap remaining Nutty Bars. Cut in half. Line rim of pan with the Nutty Bars.
- 4. In a separate bowl, whip cream cheese, milk, peanut butter, & sugar together until fluffy.
- 5. Add whipping cream, pudding mix & vanilla to cream cheese filling. Mix two minutes.
- 6. Pour filling into crust. Chill overnight.
