1 ½ cups all-purpose flour
½ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
1 pinch salt
½ cup fat free sour cream
¼ cup skim milk
2 tablespoons applesauce
1 egg
½ teaspoon almond extract
½ cup mulberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
  • Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

2 cups flour
2/3 cup sugar
1/4 cup butter, softened
2 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 tsp. vanilla
2/3 cup milk
1-1/2 cups mulberries

Steps:

  • Heat oven to 375ºF.
  • Combine flour, baking powder and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture alternately with milk, mixing after each addition just until blended. (Do not overmix.) Gently stir in mulberries.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.

1/3 cup shortening
1/2 cup sugar
1 large egg
1-1/2 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup whole milk
TOPPING:
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted

Steps:

  • In a bowl, cream shortening, sugar and egg. Combine dry ingredients; add to creamed mixture alternately with milk. Fill greased muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until golden. Let cool for 3-4 minutes. Meanwhile, combine sugar and cinnamon in a small bowl. Roll warm muffins in melted butter, then in sugar mixture. 1 cup fresh blueberries

⅓ cup all-purpose flour
¼ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

This is a recipe from The Muffin Lady cookbook, that I changed a little bit. It makes a delicious, bakery style muffin. I use a frozen berry mix, and the combination is heavenly.

2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs
1/4 cup oil
4 tablespoons melted butter
3/4 cup milk
1 teaspoon vanilla extract
8 ounces berries, fresh or frozen

Steps:

  • Heat oven to 350 degrees.
  • Sift the dry ingredients together.
  • Mix in the eggs, oil, butter, milk and vanilla.
  • Fold in your choice of berries.
  • (I get a blend of frozen berries at my grocery store--raspberries, blackberries, strawberries and blueberries. These make a great mixed berry muffin,and they're much more economical than fresh. But use what you have) Pour into lightly greased, standard 12 muffin pan, or large 6 muffin pan.
  • (Tip-an ice cream scoop makes easy work of this task, and muffins are the same size.) Bake for 30-40 minutes, start checking at 30 minutes or so.
  • Cool in pan on rack for about 5 minutes, then turn on out on rack to cool.
