Steps:
- Preheat the oven to 300 degrees F.
- In the bowl of an electric mixer, combine the sweet potatoes and 1/2 cup of the sugar, as well as the eggs, butter, milk, vanilla, cinnamon, nutmeg and salt. Beat until thoroughly blended and smooth. Pour the mixture into the pie shell and sprinkle with the remaining 1/4 cup sugar. Allow the pie to stand for 15 minutes before baking to allow the sugar to melt.
- Bake until a toothpick inserted in the center comes out clean, about 1 hour. Cool before serving.

This recipe was shared with me by a special friend in Atlanta, GA. It has long been a favorite, and everyone who tastes it says it is the best they have ever had.

Steps:
- Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
- Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
- Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

- Preheat oven to 400°F. Mix sweet potatoes, sugar, milk, butter, flour, spices, eggs and vanilla in large bowl until blended.
- Pour into pastry shell. (Shell will be quite full; filling will not rise over sides.)
- Bake 30 to 35 minutes or until top is puffed and browned. (Filling will be soft, but will set while cooling.) Cool on wire rack at least 2 hours. Serve each slice with 2 tablespoons whipped topping.

- Preheat oven to 350 degrees F.
- To make the crust, place the dates in a food processor fitted with an S blade and process until they're chopped into medium-fine pieces.
- Add the oats, pecans, and salt and pulse a couple times to distribute.
- Add 3 tablespoons of the water and process until it all begins to stick together a little, adding more water as necessary.
- Press into the bottom and up the sides of an 8-inch pie plate.
- Bake the empty crust at 350 degrees F for about 9 minutes. The set aside to cool.
- Place all filling ingredients in a high powered blender and process until very smooth. It will also be quite thick. Continue to process for about a minute. The mixture may heat up, but that's OK.
- Pour the filling into the baked and cooled crust and spread evenly.
- Spread the toasted pecans on top.

- 1. Preheat oven to 350 degrees F. Cream butter and sugar with an electric mixer. Beat until blended then add egg yolks and beat. Stir in sweet potatoes, vanilla, milk, nutmeg, cinnamon, and ginger. In a separate bowl, beat the egg whites. When foamy, slowly add 1/4 cup sugar and beat until stiff. Fold into the sweet potato mixture. Place in pie crust, bake about 40 minutes until firm. Serve with whipped cream.

- 1. PEEL AND SHREDDED 2 MEDIUM SIZE SWEET POTATOES AND PLACE IN BOTTOM OF AN UNBAKED PIE CRUST. IN A BOWL MIX SUGAR (BOTH KINDS),FLOUR, AND SALT. SPRINKLE THIS MIXURE ON TOP OF POTATOES. - Whisk together the potato and melted butter. Then stir in all the remaining ingredients except the marshmallows. Pour it into the pie crust and bake for 40 to 45 minutes, until the edges are set but the middle has a little jiggle still too it.
- Take the pie out and dot it with the marshmallows. Turn on your broiler and put the pie back in, watching very closely. Broil until the marshmallows turn brown on top, about five minutes. When you take the pie out, the marshmallows will be standing up still all weird, but as the pie cools they will fall and make a nice toasted marshmallow layer.
