BEAN RECIPES: PINTO BEAN CHILI



Bean Recipes: Pinto Bean Chili image

This easy chili recipe is one of our favorite bean recipes! It's quick to make and it freezes well.

2 tablespoons extra-virgin olive oil
1 small yellow onion (chopped)
2 garlic cloves (minced)
1 red bell pepper (diced)
1 (14-ounce) can diced fire-roasted tomatoes
1 1/2 cups cooked pinto beans (drained and rinsed)
1 1/2 cups cooked kidney beans (drained and rinsed)
1 cup water or broth
3 chipotle peppers from canned chipotles in adobo (diced, plus 3 tablespoons sauce*)
1 cup corn kernels (fresh or frozen)
½ teaspoon sea salt
Freshly ground black pepper
1 tablespoon lime juice (plus wedges for serving)
Avocado or Guacamole, Greek yogurt, jalapeños, cilantro, or Pickled Onions

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion, a few pinches of salt and pepper, and stir. Cook until the onion is translucent, 5 minutes, then add the garlic and red pepper. Stir and cook until soft, 5 to 8 minutes, turning the heat down as needed.
  • Add the tomatoes, beans, water, chipotles, adobo sauce, corn, salt, and a few grinds of pepper. Cover, reduce the heat to low, and simmer for 25 minutes, stirring occasionally, until the chili has thickened.
  • Stir in the lime juice and season to taste. Serve with desired toppings.

GARLIC DILLY BEANS



Garlic Dilly Beans image

Garlic dill beans are one of the simplest recipes to get you started on the path to fermentation.

Number Of Ingredients 8

2 to 2½ lbs. (1kg) fresh pole beans (green or wax)
1 quarts/liters filtered water
6-8 fresh dill sprigs
6-10 garlic cloves
3-5 Tablespoons/45-75 ml sea salt
1 Tablespoon/15 ml peppercorns
¼ cup /60 ml pickle brine (from previous batch)
2 fresh fruit leaves (grape, cherry, apple, oak, etc.)

Steps:

  • Make Brine: Mix 3 Tbsp./45 ml sea salt into 1 quart/liter of water. Stir until dissolved.
  • Peel garlic cloves.
  • Add beans, garlic, peppercorns, fruit leaves (which keep veggies crisp by adding tannins to the brine), and dill sprigs in layers into a large (e.g. half-gallon or larger) jar or crock. If using a jar with shoulders (a non-wide mouth variety), pack as many beans as you can snugly fit into the jar. Your "Tetris" skills will be tested.
  • If you are not tightly packing a jar with shoulders, you'll need a way to keep the beans submerged under the brine. Add a flexible lid and a weight on top of the veggies so they will stay submerged.
  • Pour brine into the container. Add the lid and weight first, then top off with brine. Leave at least 1 inch of space from the top of the container.
  • Cover with a dish or tea towel, and secure with twine or a rubber band.
  • Put in coolest part of house or kitchen.
  • Check every few days. Scrape, spoon or wipe out any mold that forms on top.
  • Taste a bean starting after 7 days (5 in the heat of summer). When it has texture and taste you like, clean the top once more, then move to the refrigerator, where they will keep for up to 3 months.

Cover; cook for 35 minutes or until pork is tender. 3. Remove tips from pole beans; cut into 1-inch pieces. 4. Add beans and salt to pork mixture. Cover; cook for 20 minutes or until beans are just tender. SERVING 5. Garnish with onion rings and serve hot

2 lbs of fresh pole beans
3 slices bacon
1 cup water
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon pepper

Steps:

  • Wash the beans,trim stems and ends and snap beans in half and set aside.
  • Cook the bacon in large saucepan until crisp remove the bacon reserve the drippings in pan crumble the bacon and set aside.
  • Add water and remaining 3 ingredients to the pan bring to boil over high heat add beans and cover.
  • Reduce heat to medium cover and cook for 15 minutes.
  • Sprinkle with bacon and serve with a slotted spoon.

4 cups dry beans
1/2 cup olive oil
3-4 TBL salt kosher start with half this then check for taste then keep going until its the right amount
20 cups water

Steps:

  • Pick through and clean your beans taking out any rocks, pieces of dirt or half beans. Rinse with warm water and a colander. Place beans in a large pot, raw beans should only fill the pot a 1/4 full. Then fill the pot halfway with water. Bring to a boil place lid part way on to let some steam escape or it will boil over. Bring to a boil over high heat then reduce to med high, you will probably need to add a little water. Bean should be simmering rapidly lid askew. Check every half hour or so water level should be very watery for at least first 2 hours. You will need to add less and less as time goes on. Beans should take between 3-6 hours depending on how dry or old they are. Make sure you skim off dirty foam on top of beans. When beans are cooked mash them with a potato masher add olive oil and salt.

1/4 lb country side meat
1 1/2 qt water
1/2 tsp sugar
1 1/8 tsp salt

Steps:

  • 1. Cut three slits in the side meat and rinse it with warm water. Place it in a pot with the water, sugar, and salt. Bring to a boil. Reduce the heat to low and cook for 45 minutes. Wash the beans, break them into 1- to 2-inch pieces, removing the ends and add them to the pot. Bring the water to a boil again, then reduce the heat to low and cook the beans slowly, stirring often, for about two hours. Add a little hot water if needed. There should be very little water left in the pot when the beans are done.
