Fried Squash image

The best Fried Squash Recipe featuring a crispy, golden batter of cornmeal and flour. Works beautifully for fried yellow squash AND fried zucchini!

Provided by Kelly Anthony

Categories     Appetizer     Side Dish

Time 20m

Number Of Ingredients 9

1 cup whole milk
2 large eggs (slightly beaten)
4 dashes hot sauce
4 yellow squash (or zucchini), sliced just over a 1/4" thick
1 1/2 cup canola oil
2 cups all-purpose flour
1 cup fine cornmeal
2 1/2 teaspoon Kosher salt
1 teaspoon black pepper

Steps:

  • Add the milk, eggs, and hot sauce to a medium-sized mixing bowl. Stir to combine. Add the squash slices, and set aside until ready to use.
  • In a breading tray or shallow container, whisk together the flour, cornmeal, salt, and pepper. Set aside until ready to use.
  • Add the oil to a skillet over medium-high heat and allow to come to temperature, between 350°-375°.
  • Shake off any dripping milk from the squash, and dredge completely in the dry batter. Carefully add to the oil, taking care not to overcrowd the pan and frying in batches as needed.
  • Have ready a plate lined with paper towels or a cooling rack atop a rimmed baking sheet lined with paper towels.
  • Cook the squash for 2 1/2 -3 minutes each, or just until the crust is perfectly golden brown. Remove from the oil and allow to cool slightly. For best results, serve right away.

  • Prepare two bowls - one with eggs, and the other with a mixture of almond flour, grated Parmesan cheese, Italian seasoning, paprika, garlic powder, sea salt, and black pepper. Get a third bowl and place just enough of the flour mixture in it to cover the bottom in a thick layer.
  • Dip each zucchini/squash circle in the eggs, shaking off the excess. Place the circle into the third bowl (the one with just a little flour mixture). Use a spoon to dust more flour mixture (from the second bowl) over the top of the zucchini/squash circle (in the third bowl) to cover completely. Press lightly, then flip and cover the other side. (Use one hand for the egg and the other for the dry mixture, to avoid getting too much egg in the breading which will make it clumpy. You may want to add more dry mixture to the bowl in batches to avoid getting it too wet. It won't stick if it gets too wet.) Set the breaded slice aside. Repeat with all zucchini/squash slices, adding more flour mixture from the third bowl to the second as you go along. Doing this in batches this way prevents the breading from getting too wet/clumpy.
  • Heat 2 tablespoons (30 mL) of oil in a pan over medium-high heat (adjust more/less oil as needed to prevent sticking). Fry the breaded zucchini/squash slices in a single layer, with a lid and without touching, about 2 minutes per side. When done, transfer to a paper towel lined plate. Repeat with the remaining slices, adding more oil if the pan gets dry.

  • Using a vegetable peeler, peel the skin off the chayote. If your chayote has ridges on the sides, you may need to use a paring knife to cut off the skin from the ridges.
  • Slice off the top of the chayote. Place the cut side down and slice the chayote in half. Slice off any skin that’s still stuck to the bottom ridges of the chayote. Dig out the seed with a knife or spoon.
  • Slice each half of the chayote lengthwise, so that you now have 4 sections. Slice each section into 1/4 to 1/2-inch slices. Give the chayote slices a quick rinse and drain them.

  • Pour enough oil in a high-side skillet (not nonstick) or large saucepan to reach a depth of about 1/4 to 1/2 inch. Bring temperature up to 375 degrees over medium high heat. I use a digital thermal thermometer you can buy online and at hardware stores for a quick and easy way to measure the heat.
  • Meanwhile, combine the cornmeal and salt on a paper plate. Cut the squash into 1/4-inch-thick slices and immediately press the cut sides into the cornmeal. If you choose to add the flour, simply stir the two together on a paper plate for easy clean up. I find that the flour prevents some of the cornmeal from sticking to the squash.
  • When the oil is at 375 degrees and all the squash is coated, gently drop them into the oil one by one. Be sure they are not touching each other. If there are too many slices in the pan, the temperature may drop too quickly and take too long to come back up to 375 degrees.
  • Cook the squash about 1 minute on each side or until lightly browned. Turn the slices over with tongs and cook a little less than 1 minute on the second side. Drain on paper towels.
