BROWN RICE MUSHROOM CASSEROLE
Steps:
- Preheat oven to 350 F.
- Mix cooked rice, raw mushrooms and basil together and spread out evenly in a shallow casserole dish.
- In a medium sized mixing bowl, whisk together the egg whites (or eggs), parmesan cheese and milk.
- Pour over the rice and bake for about 30 minutes.
- Note: Keep an eye on this in the last 10 minutes of baking. If the rice appears to be getting too browned, place a piece of foil loosely over the top of the dish.

LISA'S SAUSAGE-RICE CASSEROLE
I found this version in a local farmers market cookbook. I made a few changes but the basic recipe is still the same. Most other versions call for dried chicken noodle soup mix which is hard to find here. Recipe calls for hot sausage but you can use the mild.

Steps:
- Preheat oven to 350 degrees. Cook sausage until brown .Drain grease well.
- Lightly grease a 3-qt. casserole dish. Spread rice evenly in pan. Sprinkle onions, celery, green peppers and water chestnuts over rice. Sprinkle salt and pepper over vegetables. Pour chicken broth and water over vegetables. Spoon sausage on top. Cover and bake at 350 degrees for 30 minutes. Remove from oven and stir well. Cover and bake an additional 30 minutes.

BROWN RICE CASSEROLE

- Bring the water to a boil with a teaspoon of salt in a large saucepan. Add rice, cover and lower heat. Simmer until rice is tender and water has been absorbed, about 40 minutes.
- Meanwhile, heat two tablespoons of the oil in a heavy skillet. Add the onions and cook until lightly browned. When the rice has finished cooking, add it and mix with the onions. Season with salt and pepper.
- Mix about one-fourth of the rice mixture with the ground beef and set aside. Spread the remaining rice mixture in a baking dish at least two inches deep.
- Heat the remaining oil in a skillet. Saute the peppers until lightly browned, then spread them over the rice mixture in the casserole. Mix one teaspoon cumin and salt and pepper to taste with the meat and rice mixture, lightly brown in the pan and spread it over the peppers in the casserole.
- Add the tomatoes and bouillon to the pan. Bring to a simmer and season with remaining cumin and salt and pepper. Spoon over the meat. Cover with shaved Parmesan cheese and bread crumbs.
- Shortly before serving, preheat oven to 350 degrees. Place the casserole in the oven and bake about 20 minutes, until heated through.

- In a greased 3-qt. baking dish, combine the broth, rice, 1 cup onion, soy sauce, butter and thyme. Cover and bake at 350° for 65-70 minutes or until rice is tender., Meanwhile, in a large skillet, saute the cauliflower, broccoli, peppers, garlic and remaining onion in oil until crisp-tender; spoon over rice mixture. , Cover and bake for 10 minutes. This recipe is really versatile. It's easy to leave out the chicken or change up the vegetables. I usually leave out the chicken and serve it with salsa chicken or something similar. For the diced green chili peppers, use fire roasted if you can find them.

- Cook rice using the water or broth according to package directions.
- Preheat oven to 350º and grease a casserole dish.
- Heat olive oil in a large skillet over medium heat and saute onion until tender and translucent.
- Mix in the zucchini, chicken (if using), and mushrooms. Season with the cumin, salt and cayenne.
- Saute until chicken in heated through and zucchini is browned.
- In a large mixing bowl, mix the cooked rice, mixture in skillet, beans, chilis, carrots, and 1/2 of the cheese.
- Transfer to casserole dish and sprinkle with the remaining cheese.
- Cover with foil and bake 30 minutes.
- Uncover, and continue baking for 10 more minutes or until lightly browned and bubbly around the edges.

- 1. Put the butter in a casserole dish and put in microwave for 20 seconds.
- 2. Add onion soup mix to butter and mix well. Put two cans of beef consomme soup in onion soup mixture and stir well.
- 3. Add rice in beef consomme mixture and stir well.
- 4. Bake at 350 F. for 45 minutes to 1 hour.

SKILLET SPRING VEGETABLE BROWN RICE CASSEROLE

- Set a large skillet over medium heat. Add in the olive oil. When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften. Add in the garlic and cook for 30 seconds, until fragrant.
- Add in the mushrooms, asparagus, salt and pepper. Cook for 5 minutes. Add in the rice. Cook for 1 to 2 minutes, stirring almost constantly.
