- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
- Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

- In a large skillet over medium heat, melt the butter. Add 3 anchovies to the skillet; cook until melted, about 2 minutes. Add the garlic and cook 1 minute. Stir in the bread crumbs and toast until golden, 3 to 4 minutes. Transfer to a bowl.
- Wipe the skillet clean and return it to a medium-high heat. Add the oil, the onion and a pinch of salt. Cook, stirring occasionally, until very soft and caramelized, 15 to 20 minutes. Chop the remaining 2 anchovies and add them to the skillet. Cook until melted. Add the Swiss chard, a handful at a time, and cook until wilted, about 4 minutes. Cover and keep warm.

- Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain.
- Cook onion in oil remaining in skillet over medium heat, stirring occasionally, until softened, 3 to 5 minutes. Add currants and cook, stirring, until plumped, about 1 minute.

SWISS CHARD WITH GARLIC
This is a very simple recipe for Swiss chard. I like to use the whole vegetable but you need to saute the stems and the leaves separately as the stems take longer. This won't make a lot as the chard will wilt, so if you love chard, think about doubling the recipe.

- Remove Swiss chard stems and cut into small pieces. Slice leaves into strips. Set both aside.

- In a large skillet, heat 1 tablespoon oil over medium heat.
- Add bread crumbs and cook, stirring constantly until golden brown, about 2 minutes.
- Scrape into a small bowl and stir in Parmesan cheese.
- Cook linguine in a large pot of boiling salted water until al dente, 10 to 12 minutes.
- While pasta cooks, wipe out skillet.
- Add remaining oil to skillet and heat over medium heat.
- Add garlic and crushed red pepper flakes to taste.

- Wash the chard. Cut off the white stalks and trim their ends and any discolored portions. Heat the oil in a covered pan and add the garlic and anchovies, allow this to cook until the anchovies have melted into the oil, about 5 minutes. Cut the chard stalks into 1-inch pieces, blanch them in boiling water and refresh under a cold tap. Drain well, add them to the oil and season with the pepper. Cover and cook gently for 10 minutes. If you wish you may add the chard greens at this stage and cook for a further 3 to 5 minutes or you may wish to use the greens for something else.

- Rinse and drain separately the Swiss chard stems and leaves. In a large heavy skillet cook the red pepper flakes and the garlic in the oil over moderate heat, stirring, until the garlic is pale golden, add the stems and 1/4 cup of the water, and cook the mixture, covered, for 5 minutes, or until the stems are just tender. Add the leaves with the remaining 1/4 cup water and salt and pepper to taste and cook the mixture, covered, for 5 minutes. - While the chard is cooking, in a kettle of salted boiling water boil the penne until it is al dente and drain it in a colander. In a large bowl toss the penne with the chard mixture and 1/4 cup of the Parmesan and serve it with the additional Parmesan.

- Begin by prepping the tomatoes and swiss chard. For the tomatoes, I boil them for a couple of minutes, until I see the skin start to crack. I then remove from boiling water and let them cool down a bit. Once they are cool enough to touch, I can easily peel off the skin. Cut in half, remove the seeds and then continue to chop. For the swiss chard, I wash them under cold water and then I peel the stems the same way as a celery rib, to remove the stringy outer layer. Once peeled, they can be chopped into the bite size you prefer. Bring a pot of salted water to a boil which will be used for the swiss chard later.
- In a deep frying pan, pour in about two ounces of olive oil and heat over a medium flame. After the oil has heated up, add in the garlic and onion. Saute for about two minutes, making sure to stir so that it cooks evenly and doesn't burn.
- Add in the tomatoes and continue to cook for about five minutes over a medium/low flame. After five minutes, lower the flame and add the swiss chard into the boiling pot of water. Let cook for about three minutes. Fill a big bowl with ice and cold water which will be used for blanching the swiss chard. Scoop the swiss chard out of the boiling pot of water and place into the big bowl of ice water. This is to stop the cooking process of the swiss chard. Remove the swiss chard from the cold water, squeeze the excess water out and then add into the pan with the tomatoes. Add salt and black pepper, to taste, mix and continue to cook over a low flame until the pasta is done cooking.
- Bring a pot of salted water to a boil and cook the pasta as per the package instructions. Scoop the pasta out of the pot and place into the swiss chard pan. You can add some of the pasta water to thicken the sauce a bit and also to help stick the pasta and sauce together.
