Steps:
- Bring the water and salt to boiling in a 4-quart Dutch oven. Add pasta; boil for 5 minutes. Add green beans. Continue boiling, uncovered, about 5 minutes more or until pasta is tender but still firm. Drain in a colander and set aside.
- Cook leeks and walnuts in hot olive oil and butter in the same Dutch oven for 3 to 4 minutes or until leeks are tender and walnuts are lightly toasted. Stir in drained pasta mixture and thyme; heat through.
- Transfer mixture to a serving platter. Sprinkle with cheese and pepper. Serve immediately.

- In a large skillet, cook the bacon over medium-high heat for about five minutes or until it starts to render it’s fat. Add the garlic, green beans, tomatoes, salt and pepper and stir. Cover the pan and cook it all together for three to four minutes.
- Uncover the pan and add the butter. Stir until it’s melted, add the balsamic and stir. Adjust the heat to medium and stir occasionally until the pasta is done cooking.
- Add the cooked pasta and stir to coat it in the light sauce. Add the parsley and Parmesan, stir again and serve. Garnish with additional grated Parmesan and chopped parsley, if desired.

- Bring a large pot of salted water to a boil. Cook the ravioli al dente, according to package directions. Drain and divide among plates.
- Meanwhile, heat the oil in a large skillet over medium heat until shimmering. Melt the butter, then add the garlic, and cook until golden and fragrant, 1-2 minutes.
- Add the asparagus, and cook, stirring often, for a minute or two, until just beginning to soften. Add the peas, and continue cooking for another 1-2 minutes, until the vegetables are tender but still vibrantly green. Season with salt and pepper, to taste.
- Top the ravioli with the asparagus, peas, butter sauce, crumbled goat cheese, pea shoots and herbs. Season to taste, as desired. Serve immediately.
