2 x 400g tinned chopped tomatoes
2 tbsp Worcestershire Sauce
1/2 a lemon
1 tsp chilli flakes, alter depending on heat preference
1/2 chilli powder
250g cheddar cheese, grated
olive oil
salt

  • Heat a few lugs of the olive oil in a large pan on a med-high heat then add the onions, garlic, peppers and chilli powder. Fry for about 5 minutes, or until onions are softened and pale (not golden).

  • Keep on the heat and add the tomatoes, worcestershire sauce, juice of 1/2 a lemon, the chilli flakes and a good pinch of salt and pepper. Give a good stir and turn the heat up high. Let the sauce reach a boil and then reduce the heat to a med-low setting. Cover the pot and allow to simmer for 45 minutes, stirring occasionally.
  • With about 15 minutes left to cook, put on some pasta . I recommend a tagliatelle, fusilli, conchiglie or penne.

Then drain off the pasta and add the the pot with the sauce, give a good stir to mix the pasta. Serve in a bowl, or high-edged plate, with some garlic bread on the side.

  • In a large plastic bag, add the chicken thighs, Italian seasoning, garlic powder, onion powder, salt, oil, and lemon juice. Seal it up and rub the chicken with the marinade so that everything is coated. Place the bag on a plate (to avoid any spills) in the fridge for at least an hour.
  • Melt a Tbs. of butter and a Tbs. of extra virgin olive oil in a deep pot over medium-high heat. Add the chicken and sear on both sides, until nice and browned all over, about 10 minutes total. Remove the chicken from the pot and set aside.
  • To the pot, add the chopped shallots. Sauté for about five minutes, until they begin to soften and brown. Add the minced garlic and a pinch of salt. Sauté the veggies for another 30 seconds or so until the garlic is fragrant. (If you need to add more oil, go right ahead.)
  • In the meantime, bring a large pot of salted water to a boil. Cook the linguine until al dente. Transfer the cooked pasta to the other pot (with the veggies), and stir in the tomatoes and spinach. Add about a cup of pasta water to the pot and toss, wilting the spinach. Season it liberally with a pinch of coarse salt. Add a Tbs. or 2 of butter and the parmesan cheese. Toss again, melting the butter. Nestle the chicken back in the pot.

  • Cover the chicken with plastic wrap and pound each piece to an even thickness, about one inch or so in the thickest parts (this just helps it cook faster and more evenly). Remove the plastic and sprinkle each piece of chicken generously with sea salt and freshly ground pepper.
  • Prep the tomatoes, garlic, and basil and set aside. Make the pasta according to package directions.
  • Heat the olive oil in a large heavy skillet until a drop of water sizzles across the top. Add the chicken and pan-fry for several minutes on each side – the goal here is to get the chicken cooked AND get a nice browning on the outside. When the chicken is done, set aside.
  • Give the oil a few minutes to cool, add the tomatoes, and return to heat (if you add the tomatoes to the hot oil it will be a splatter-fest). Simmer to cook the tomatoes down into a chunky-sauce-like-mixture. Add the garlic and butter and stir to combine until the butter is melted. Add the chicken back in to soak in the sauce for a few minutes.
